LENTIL TOMATO SOUP
I'm a firm believer in eating foods that symbolize good luck and expanding fortune at the beginning of the year. Usually I stick with my black-eyed peas salad. But I've always been curious about how people in other countries usher in the New Year. Lentils and raisins are present on Italian tables because they resemble coins and swell when cooked. They're usually accompanied by pork, a symbol of prosperity and abundance. This is an easy, robust vegetarian soup that tastes almost meaty. The rosemary in the bouquet garni contributes a savory, earthy flavor.

- Heat the olive oil over medium heat in a heavy soup pot or Dutch oven, and add the onion. Cook, stirring, until tender, about 5 minutes. Add the garlic, carrot and celery, and a generous pinch of salt, and continue to cook for another 5 minutes until tender. Add the tomatoes and bouquet garni, and cook, stirring often, until the tomatoes have cooked down somewhat and smell fragrant, about 10 minutes. Add the lentils, water and salt to taste. Bring to a boil. Reduce the heat, cover and simmer gently one hour. Taste and adjust seasonings. Remove the bouquet garni, and stir in the parsley. Serve, garnishing each bowl with Parmesan or Gruyère.

This is my kinda 'comfort food' with a slight Mediterranean flair. It freezes well and is one of those dishes that tastes just as good, if not better, the next day! We have this with fresh French bread, and it was heaven!

- Melt the butter in a large pot over medium high heat. Place the onions in the pot and saute for 10 minutes, or until onions are tender.
- Place the tomatoes in a food processor or blender and puree until smooth. Pour this into the pot with the onion along with the chicken broth and the lentils
- Bring to a boil, reduce heat to low and let simmer for 20 minutes. Then, stir in the wine, garlic, nutmeg and cloves. Simmer for at least 25 more minutes.

- Heat the olive oil in a dutch oven or large stock pot over medium heat. Add the onion and cook for 6 minutes or until soft and translucent, stirring occasionally. Add the garlic, dried rosemary, sea salt, and red pepper flakes, and cook for another 1 to 2 minutes or until the garlic softens, stirring frequently.

- Put the olive oil in your pot over a medium flame. Add the onions and sauté them for a couple minutes before adding the carrots and celery. Continue to sauté the vegetables another couple minutes before adding the garlic.
- Add the lentils and stir until they are covered in the oil. Stir while leaving the pot on the flame 1-2 minutes. Then add tomatoes, the bay leaves, bouillon cubes and the water. Cover the pot and bring to a boil, at which time reduce the heat to low flame and let it simmer for more or less 30 minutes (until the lentils are cooked yet still a little firm).
- I recommend cooking the rice separately according to the instructions for your rice (generally 2 times the volume of water for 1 volume of uncooked brown rice). You can cook the rice in the soup by adding it at the same time as the lentils but the rice will remain more firm if you prepare it separately.

- Once the oil is melted, add the chopped onion and carrot and cook for about 5 minutes, stirring often, until the onion has softened and is turning translucent. Add the garlic, cumin, curry powder, turmeric powder, ginger, rosemary, onion powder and oregano. Cook until fragrant while stirring constantly, about 30 seconds. Pour in the sliced tomatoes, celery and tomato puree. Cook for a few more minutes, stirring often, in order to enhance their flavor.
- Pour in the lentils, bouillon cube and the water. Add salt to taste if you wish. I skipped this since there was some salt in my bouillon powder. Add a pinch of red pepper flakes and season generously with freshly ground black pepper. Raise heat and bring the mixture to a boil, then partially cover the pot and reduce heat to maintain a gentle simmer. Cook for 30 minutes, or until the lentils are tender but still hold their shape.
- Remove the pot from heat and stir in the juice of a lemon. Taste and season with more salt, pepper and/or lemon juice until the flavors really come out. Serve immediately. Leftovers will keep well for about 4 days in the refrigerator, or can be frozen for several months. I served it with chopped fresh celery leaves but any herb or greens would go very well with this recipe.
