ANOTHER HEALTHY PEANUT BUTTER COOKIE
I have adapted my original healthy peanut butter cookie on this site, Healthy Peanut Butter & Honey Cookies Recipe #251315, to make a softer cookie and thought I would post what has become my more commonly made peanut butter cookie. It is not a really sweet cookie, but my children still really enjoy this healthy treat. I hope you enjoy it!

Steps:
- Blend dry ingredients up in a food processor.
- Mix together peanut butter, applesauce, and honey or agave nectar in a bowl. Once the wet ingredients are mixed well, add the dry ingredients and mix together. I usually finish by mixing with my hands.
- Form small balls and set them on a cookie sheet after spraying it with a nonstick spray. Use a fork to press down on the ball to flatten the cookies. Bake in an oven for 10 minutes only at 350 degrees. Remember that peanut butter cookie's burn easily so you need to take them out right away even if they don't look done, because by the time they are brown on top they are usually burnt on the bottom.
HEALTHIER PEANUT BUTTER CUP COOKIES
These cookies have a sweet peanut butter cup center. The healthier way to make them is with white whole wheat flour, reduced sugar, and natural peanut butter.

- Preheat oven to 375 degrees F (190 degrees C). Sift all-purpose flour, whole-wheat flour, baking soda, and salt.
- Beat butter, white sugar, brown sugar, and peanut butter with an electric mixer in a large bowl until smooth. Add egg allowing to blend into butter mixture. Beat in vanilla extract. Mix in flour mixture and milk until just incorporated.
- Shape into 40 balls and place each into an ungreased mini muffin pan. Bake in preheated oven until cookies are golden brown, about 8 minutes. Remove from oven and immediately press a mini peanut butter cup into the center of each cookie. Cool and carefully remove from pan.

- Beat butter, peanut butter, applesauce, white sugar, and brown sugar with an electric mixer in a large bowl until smooth. Add eggs and beat until smooth.

HEALTHY PEANUT BUTTER & HONEY COOKIES

- Place peanuts and flour in a food processor and whiz for about 1 minute until nuts and flour are about the same texture.
- Microwave honey. This is a critical step. The honey is the liquid in the recipe. It needs to pour like water or the mix will seem dry and if too much water is added, the cookies will be tough.
- Place flour-and-nut mixture in a mixing bowl and add the salt if the peanuts are not already salted. Mix in the honey and vanilla. Stir together and then mix with your hands. (If your food processor is large enough, you can mix the honey and vanilla in the processor. Turn on briefly to mix.).
- Note: The dough should hold together without being dry and crumbly. If needed, add a tablespoon of water, but be careful not to get it so wet that it sticks to your hands. It should be like piecrust. If it is too dry, the cookies will crumble and not hold together, but if too wet, they will be hard to handle and the baked cookies will be hard. A little extra flour can be worked in if the dough is too sticky!
- Pinch off pieces of dough and roll into balls the size of walnuts. Place on a cookie sheet and press flat with hands. Then press flatter with fork, dipping the fork in water as needed to keep it from sticking to the dough (or use a plastic fork - it won't stick even if dry, but will break unless you press on the tines).
- Bake at 350 degrees F for about 10 minutes. Watch them carefully. They are done when just beginning to brown on the edges. I can think of nothing that burns so easily as peanut butter cookies, so take them out before it looks like they're done!
- Let them cool on the cookie sheet before removing.

VEGAN PEANUT BUTTER OATMEAL COOKIES (HEALTHIER)
This is my healthified version of Recipe #461702. Of course its still a cookie and contains chocolate (if you so choose to use the chocolate chips), but you can eat a few more of these without feeling guilty. I hope youll enjoy them, too. :)

- In a big bowl combine flours, baking powder, baking soda, cinnamon, salt and oats. Add in peanuts or chocolate chips and pb chips and stir to combine.
- In a second bowl beat together applesauce, peanut butter, sugars, ground flax seeds and vanilla.
- Add the liquid to the dry ingredients and stir to combine. If your dough seems too wet to handle, add in more flour, if its too dry, add a tad more milk.
- Drop generous tbs full of dough per cookie onto a paper-lined or greased baking sheet leaving some space between the cookies (these wont spread much). Flatten cookies slightly using moistened fingers or a spoon.
- Bake in the preheated oven at 350°F/175°C for about 15 minutes or until toothpick inserted in the center comes out clean. These cookies are more cake-like, so they wont crisp up.
- Allow to cool on the baking sheet for 5 minutes and then remove to wire racks to cool completely.
- Enjoy! :).
