Raspberry Pie with Oat Crust image

A diabetic for 30 years, I adapted this recipe to fit my needs. When I serve this pie, no one can believe it's sugarless. The oatmeal crust is so tender...and the filly is berry delicious! -Ginny Arandas of Greensburg, Pennsylvania

Number Of Ingredients 10

3/4 cup all-purpose flour
1/2 cup quick-cooking oats
1/2 teaspoon salt
1/4 cup canola oil
3 to 4 tablespoons cold water
FILLING:
2 cups water
1 package (.8 ounces) sugar-free cook-and-serve vanilla pudding mix
1 package (.3 ounce) sugar-free raspberry gelatin
4 cups fresh raspberries

Steps:

  • In a food processor, combine the flour, oats and salt. While processing, slowly drizzle in oil. Gradually add water until a ball forms. Roll out dough between two sheets of waxed paper. Remove top sheet of waxed paper; invert dough into a 9-in. pie plate. Remove remaining waxed paper. , Trim and flute edges. Line unpricked pastry with a double thickness of heavy-duty foil. Bake at 450° for 8 minutes. Remove foil; bake 5-7 minutes longer or until golden brown. Cool on a wire rack. , In a large saucepan, heat water over medium heat. Whisk in pudding mix. Cook and stir for 5 minutes or until thickened and bubbly. Whisk in gelatin until completely dissolved. Remove from the heat; cool slightly. Fold in raspberries. Spoon into crust. Chill for at least 3 hours or overnight.

Tip for juicy berry pies--if you see a lot of juice in the filling before you have added the crumb topping, sprinkle several tablespoons of quick-cooking rolled oats over the pie and return it to the oven for about 5 minutes; the oats absorb the juice and form sort of a barrier; then add the topping and proceed as usual.

1 (9 inch) basic flaky pastry shells (single crust)
4 cups fresh raspberries
1/2 cup sugar, plus
3 tablespoons sugar
2 teaspoons fresh lemon juice
1 1/2 tablespoons cornstarch
1/4 teaspoon ground nutmeg
2 -3 tablespoons seedless raspberry jam
1/2 cup all-purpose flour
1/2 cup sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 cup cold unsalted butter, cut into 1/4-inch pieces
peach ice cream or strawberry ice cream

Steps:

  • Place unbaked prepared pie shell in the freezer for 15 minutes; preheat oven to 400°.
  • In a mixing bowl, combine the raspberries, 1/2 cup sugar, and lemon juice; toss gently to mix; set aside for 10 minutes to juice.
  • Combine the 3 tablespoons sugar, cornstarch, and nutmeg in a small bowl; stir cornstarch mixture into the fruit mixture.
  • Spread the raspberry jam inside the chilled pie shell.
  • Scrape the filling into the shell, smoothing the fruit with a spoon.
  • Place the pie on the center oven rack and bake for 25 minutes.
  • Meanwhile, to make the topping: combine the flour, sugar, cinnamon, and salt in a food processor.
  • Scatter butter over the dry mixture; pulse until the mixture resembles fine crumbs.
  • Dump the crumbs into a large bowl and gently rub between your fingers to make large buttery crumbs; refrigerate until ready to use.
  • Take pie from oven and lower temp to 375°.
  • Carefully dump the crumbs in the center of the pie and spread them evenly over the top with your hands.
  • Return pie to oven, placing it so that the part that faced the back of the oven now faces forward.
  • Slide a large foil-lined baking sheet onto the rack below to catch spills.
  • Bake for about 25 minutes or until juices bubble thickly around the edge of the pie.
  • Transfer pie to a wire rack; let cool.
  • Serve barely warm or at room temperature with ice cream.

I just found this recipe in an old band bosters cookbook and placing it here for sharing and later use. The recipe mentions that it is a good substitute for graham cracker crust. It sounds good to me and might be a good alternative for cream pies or maybe even dutch apple or cherry.

1 cup rolled oats
4 tablespoons brown sugar
1/4 teaspoon salt
1/2 teaspoon vanilla
1/3 cup melted butter
2/3 cup finely minced walnuts

Steps:

  • Preheat oven to 350F.
  • Toast oatmeal in a shallow pan for 10 minutes to brown, watch carefully.
  • Remove from oven and in small mixing bowl combine oatmeal with remaining ingredients.
  • Press into 9-inch pie plate.
  • Fill with desired filling and bake or bake crust empty for later use.

2 1/2 cups Gold Medal™ all-purpose flour
2 1/2 cups quick-cooking oats
1 1/2 cups packed brown sugar
1/2 cup finely chopped hazelnuts (filberts) or pecans
1/4 teaspoon baking soda
1 1/2 cups butter or margarine, melted
1 can (21 oz) raspberry pie filling
1 teaspoon ground cinnamon

Steps:

  • Heat oven to 350°F (if using dark or nonstick pan, heat oven to 325°F). In large bowl, mix flour, oats, brown sugar, hazelnuts and baking soda, using pastry blender (or pulling 2 table knives through ingredients in opposite directions). Stir in butter until well mixed.
  • In small bowl, reserve 2 cups oat mixture for topping. On bottom of ungreased 15x10x1-inch pan, firmly press remaining oat mixture. Bake 15 to 18 minutes or until crust just begins to brown.
  • Carefully spread pie filling over warm crust. Stir cinnamon into reserved oat mixture. Sprinkle oat mixture over filling; press lightly into filling.
  • Bake 20 to 25 minutes or until top is deep golden brown. Cool completely in pan on wire rack, about 30 minutes. For bars, cut into 8 rows by 6 rows.
