OVERNIGHT BAKED OATMEAL

Steps:
- In a large bowl, whisk together first 6 ingredients. Stir in oats, blueberries and cherries. Transfer to a greased 8-in. square baking dish. Refrigerate, covered, 8 hours or overnight., Preheat oven to 350°. Remove oatmeal from refrigerator while oven heats. Stir oatmeal; sprinkle with almonds. Bake, uncovered, until golden brown and a thermometer reads 160°, 40-50 minutes. Serve warm.

OVERNIGHT OATMEAL BAKE
I found this recipe off a diabetic website and changed it a bit. Feel free to use all sugar or sugar substitutes. You can add just about any fruit you want to this. Cook time does not include the chilling overnight. :)

Steps:
- Combine applesauce, Sugar, brown sugar, egg substitute, milk, baking powder, salt, cinnamon, and vanilla extract in a bowl; whisk well.
- Stir in oats, cranberries or raisins, and fruit. Add nuts if using.
- Coat an 8" x 8" baking pan with cooking spray.
- Spoon in oatmeal mixture and spread evenly in pan.
- Cover with plastic wrap and refrigerate for 7-8 hours.
- Preheat oven to 350°F
- Uncover and bake oatmeal for approximately 20-25 minutes, or until set. (Oatmeal is set if it stays in place when the pan is tilted.)
- Cut into bars.
- Serve warm, alone, or sprinkled with walnuts and drizzled with sugar-free maple-flavored syrup or milk.
- Refrigerate leftovers. Reheats well in the microwave.
ABSOLUTE BEST OVENIGHT BAKED OATMEAL
Soaking overnight makes this the best oatmeal you've ever had! Created for the Ready Set Cook! Contest #10, the ingredients have been updated based on the reviewers' suggestions that it was too sweet, but feel free to increase the sugar and syrup to 1/2 cup each if you prefer a cake-like sweetness. This saves wonderfully in the refrigerator and can be cut in "oatmeal-to-go" pieces after chilling.

- In a bowl, mix together the oats, milk, half-and-half, raisins, brown sugar, vanilla, salt and apple. Cover and refrigerate overnight.
- Preheat the broiler.
- Give the mixture a stir and add a bit more milk or half-and-half if it has become too thick. Put a healthy portion in an ovenproof bowl and smooth out the top. Sprinkle with an even layer of granulated sugar. Place under the broiler until the sugar melts and just starts to brown (or you can brown it lightly with a kitchen blowtorch). Serve with blueberries, raspberries, strawberries and a little more half-and-half, if desired.

- To make a jar, just combine 1/2 cup rolled oats, 1 tablespoon ground flaxseed, 2/3 cup milk, 1/3 cup plain yogurt, 2 teaspoons brown sugar or maple syrup and a pinch each of salt and cinnamon in a small jar. AMISH BAKED OATMEAL
This recipe came from an old Amish cookbook of mine. It tastes like an oatmeal cookie. It stores well in the refrigerator and can be reheated in the microwave and served with milk. This has to sit overnight, so plan accordingly. It is well worth the wait, however!

- Melt butter.
- Grease 1 1/2 quart baking dish and drop in eggs and beat well.
- Add brown sugar, baking powder, vanilla, nutmeg or cinnamon, and salt. Mix well, no lumps.
- Whisk in butter and both measures of milk, then add oats.
- Stir well, and refrigerate overnight.
- Bake, uncovered, at 350 for 35-45 min, or until set in the middle.
- Serve hot with warm milk poured over.
BAKED OATMEAL CASSEROLE
This recipe would be great for a brunch, or for house guest. If available you can use fresh berries. For an extra tasty top, sprinkle a tablespoon or so of extra brown sugar.

- Preheat oven to 375.
- Spray the inside of a 10-1/2 by 7 inch baking dish with cooking spray and place on a baking sheet.
- In a large bowl, mix together the oats, sugar, baking powder, cinnamon, salt, half the walnuts/pecans, half the berries and half the chocolate chips. (Save the other half of berries, walnuts/pecans and chocolate chips for the top of the oatmeal).
- In another bowl, whisk together the milk, egg, butter and vanilla extract. Add the oat mixture to prepared baking dish.
- Arrange the remaining berries, walnuts/pecans and chocolate on top.
- Add the banana slices to the top then pour the milk mixture over everything.
- Gently shake the baking dish to help the milk mixture go throughout the oats.
- Bake 35 to 40 minutes or until the top is nicely golden brown and the milk mixture has set.
DELICIOUS EASY OVERNIGHT NO BAKE OATMEAL WITH FRUIT
This is a surprisingly delicious overnight no cook oatmeal. I was very hesitant at first because I am picky about my oatmeal but when we tried this in the morning we ate it all!! SOoo good! I never wanted to forget how to make it again so decided to post.
