HOMEMADE MAPLE BREAKFAST SAUSAGE
This recipe for homemade breakfast sausage is low in calories, made with a combo of pork and turkey, they're the only kind of breakfast sausage you'll need!

Steps:
- Line a rimmed baking sheet with wax paper sprayed lightly with cooking spray, set aside.
- Add all ingredients to a large mixing bowl and use hands to mix until just combined.
- Spread mixture in an even layer in the prepared baking sheet, about 1/2" - 3/4" thick (this can be adjusted if you prefer a thicker patty). Spray the rim of a 3 1/2" biscuit cutter (or large-mouthed drinking glass) and cut out patties.
- If patties are having a hard time staying together, place on wax paper in the freezer for 5-10 minutes before cooking.
- Heat vegetable oil (about 1-2 Tbsp) in a large skillet over MED to MED-HIGH heat. Add patties to pan, making sure they aren't touching (you may have to cook in batches), and cook 2-3 minutes per side, until golden brown and cooked through to a temperature of 165 degrees F.
- Repeat with remaining patties.

MAPLE SAUSAGE BREAKFAST BURRITOS

- Preheat the oven to 375 degrees F.
- Place the frozen tater tots on a sheet pan and bake for 20 minutes. Place the sausages on a sheet pan and bake for 5 minutes.
- Melt 2 tablespoons of the butter in a large skillet over medium heat. Add the onions and cook, stirring occasionally, until golden and caramelized, about 15 minutes.
- Meanwhile, in a large bowl, whisk together the eggs, half-and-half, seasoned salt, and black pepper. Melt the remaining 2 tablespoons butter in a second large skillet. Add the whisked eggs and cook, stirring gently, until the eggs are set.
- To assemble the burritos, stack the tortillas on a paper towel and microwave for about 30 seconds. Place a heaping spoonful of egg mixture onto the middle of a warm tortilla, top with a little caramelized onions, 1 sausage link, 3 tater tots, a little salsa, and about 2 tablespoons cheese per burrito. (You can also leave some without cheese if preferred.) Tuck in the sides and roll the tortilla closed. Wrap in a foil sheet. Repeat with the rest of the ingredients. Keep warm in the oven in foil pans until ready to serve. Serve with salsa and the hot sauces.
SPICY MAPLE BREAKFAST SAUSAGE
A little spicy and a little sweet, these sausage patties are simple to make and easily customizable with your favorite seasonings. The sausage has a mild heat level; double the red pepper flakes for a medium to hot heat level. Make a batch each Sunday for easy breakfasts throughout the week.

- Hand-trim fat from the outside of meat to your desired fat preference.
- Grind the meat with a fine grinding plate.
- After grinding, add the sausage seasonings to the meat and blend by hand or use a meat mixer. Be sure to mix thoroughly to ensure the ingredients are spread evenly throughout the meat.

- Mix together all ingredients except for canola oil in a large bowl. With damp hands, form mixture into twelve generous 1/2 centimeter thick patties. Place on a plate and set aside.
- Heat one tablespoon (15 milliliters) of canola oil in a large non-stick skillet over medium heat. Working in batches of six, cook patties until browned and meat is cooked through (165°F, 74°C), about six to eight minutes total, flipping halfway. Turn heat down to medium-low if patties are browning too quickly. Wipe pan down with a paper towel in between batches and add more canola oil before adding remaining patties.
