Steps:
- Place the bread flour, sugar, salt, milk powder, water, butter, and yeast in the pan of the bread machine in the order recommended by the manufacturer. Set on Dough cycle; press Start.
- Remove risen dough from the machine, deflate, and turn out onto a lightly floured surface. Divide the dough into twelve equal pieces, and form into rounds. Place the rounds on lightly greased baking sheets. Cover the rolls with a damp cloth, and let rise until doubled in volume, about 40 minutes. Meanwhile, preheat oven to 350 degrees F (175 degrees C).
- In a small bowl, mix together the egg white and 2 tablespoons water; brush lightly onto the rolls. Bake in the preheated oven for 15 minutes, or until the rolls are golden brown.

- In bread machine pan, place the first eight ingredients in order suggested by manufacturer. Select dough setting. - Place water, butter, egg, 3 cups flour blend, sugar, salt and yeast in bread machine pan in order recommended by the manufacturer. Select Dough/Manual cycle. During initial mixing cycle, open lid and scrape down sides of bread pan as necessary. As dough mixes, add just enough additional flour blend to create a soft dough. - Add all ingredients to bread machine in the above order, and press "dough" setting.
- When done, transfer dough to a lightly-floured counter top and shape into a ball.
- Cut ball in half, and then cut those two pieces in half and so on, until you have 16 pieces. (sprinkle more flour on your counter if dough starts to stick)
- Shape your pieces into round buns, and place in a sprayed 9 x 13 baking dish or 2 smaller dishes. Leave about an inch between buns.
- Brush buns with melted butter, and cover the baking dish with Plastic Wrap. Set in warm spot (about 80 degrees Farenheit) until buns have doubled in size - about 40 mins. (I usually heat my oven to about 200, and then turn my oven right OFF, and place the dish in there with the door open a crack.
- Once doubled, remove plastic wrap, and bake 12-15 minutes at 375 degrees.

- Heat 1 cup tap water in the microwave on HIGH for 1 minute. Pour into bread machine pan with the blade in place.
- Add olive oil, salt, sugar, flour, and yeast to the pan. Select the DOUGH cycle and press START.
- Check the dough at least twice during the mixing and kneading phase by lifting the lid to take a peek. The first time, look immediately after the machine starts mixing to ensure the paddles are engaged correctly. Look again 15 minutes into the DOUGH cycle to assess the consistency of the dough. For most recipes, the dough should stick to the side, then pull away cleanly.If your dough is too wet, add flour one tablespoon at a time.Conversely, if the dough is too dry, add one tablespoon of liquid at a time until the dough looks just right. - When the DOUGH cycle is finished, if the dough has doubled in size, remove it from the pan to a floured surface. If the dough has not risen enough, leave it in the machine until it does before proceeding.

- 1. This recipe is for 1.5 lbs and will make 18 rolls. Be sure to set your machine up for 1.5 lbs and set on the dough cycle. I have a Breadman Bread Machine. Check instructions on your machine as different machines may vary.
- 2. Add ingredients to your bread machine in order listed. Start machine and let it complete the cycle.
- 3. Once cycle is complete; place dough on a lightly floured service and divide into 18 pieces; shape. NOTE: you may want to put some oil in your hands to keep dough from sticking to hands.
- 4. Place on a greased baking sheet; cover with plastic and let rise for 30 minutes in a warm place. I spread a little melted butter to tops of rolls. This was not part of the recipe but I like the butter. NOTE: I turn light on in oven and place rolls there to rise. I take out of oven a few minutes before ready to bake so the I can heat oven.
- 5. Heat oven to 350 degrees; bake 15 to 25 minutes or until golden brown. Spred more butter if desired. NOTE: It took about 23 minutes in my oven.

- Soften butter in a microwave.
- Place the milk, butter and then the rest of the ingredients into the bread pan. You can make a little indent on top of the flour in order to avoid the yeast falling into the water (until the machine starts). Do not combine the salt with the yeast (as the salt can kill the yeast). Place the yeast & salt in separate parts of the bread pan.
- Put your machine on the "Dough" setting and press the start button. In our bread machine, the kneading & rising on the dough setting takes about approximately 1:30 hours.
- When your bread machine has finished, unplug the machine & pour the dough onto a cutting board. Wear oven mitts. Sprinkle some flour on the cutting board (before you pour the dough) in order to avoid the dough sticking to the cutting board.
- Divide the dough into 12 equal parts.
- Roll the dough pieces into balls and then press them down slightly into semi-"patties" on a baking sheet.
- Use a pastry brush & coat each dough ball/patty with olive oil.
- Cover the dough ball/patties with a slightly wet cloth to protect from the dough for dust, etc.
- Let the dough sit for at least 40 minutes. During this time, the yeast will rise and the dough will slowly expand into a round roll shape.
- Preheat oven to 350 degrees before you begin to bake your rolls.
- Remove the cover. Do not move the dough on the baking sheet.
- Optional - Sprinkle a little salt on top of dough before baking. It should stick to the olive oil.
- Place the baking sheet in the oven.
- Bake for 20-25 minutes or until golden brown. Baking time may vary depending on the size & shape of your bread rolls. To ensure even coloring, turn the baking sheet around in the oven at the 10 minute mark. Remember to wear oven mitts as the oven will be very hot.
- Remove the baking sheet and place rolls on a cooling racks. Wear oven mitts. Let the rolls cool down for 5-10 minutes.

- Combine all ingredients in a large bowl or in the bucket of your bread machine. Knead by hand, with a stand mixer, or with a bread machine set on the "dough" cycle. (If using bread machine, skip step 2 and allow machine to complete the full cycle.)
- Shape dough into a ball and place in a clean, lightly oiled bowl to rise. Cover with plastic wrap or a damp tea towel and allow to rise in a warm place for 1 hour, or until doubled in size.
- Turn dough out onto clean surface and divide into 16 pieces with a sharp knife. Shape the pieces into balls by pinching the bottoms until the tops are round and smooth.
- Prepare a baking sheet with parchment paper or cooking spray, and place the rolls an equal distance apart. They will all fit on one sheet. Cover with greased plastic wrap and set in a warm place to rise until very puffy, about 45 minutes. Towards the end of the rising time, preheat oven to 400 degrees.
- Remove the plastic wrap and brush the rolls with 2 tablespoons of the melted butter. Bake for 13-16 minutes, until golden brown. Allow to cool on rack and brush with the remaining tablespoon of butter while still warm.
- Serve immediately, or allow to cool completely and freeze for up to 1 month. Warm in 200 degree oven for 10 minutes before serving.

- Place 1 c milk (227 gr), 1 egg (50 gr), 3 T sugar (40 gr), 1 t salt (6 gr), ¼ c butter (57 gr, finely chopped), 3 c (360 gr) unbleached all-purpose flour, and 2 t (6 gr) instant yeast into your bread machine pan in the order listed. Select the DOUGH cycle and press START.

- Arrange balls into 2 well-greased 8 or 9-inch round or square pans (non-stick is better) and cover with a tea towel or a cheap shower cap. Place in a warm spot until almost doubled. (I put mine in the microwave where I have already boiled a cup of water for 5 minutes to make it warm and steamy.)
- Heat your conventional oven to 350˚F.
- Bake in the oven until golden brown, usually about 12-15 minutes. Rotate to get even browning. The internal temperature should reach 190˚F.
- Within 5-10 minutes, dump baked rolls out of the pan and let cool on a rack or paper plate so they won't get soggy from the steam they produce. Brush with melted butter if desired.

- Put the ingredients into the pan of your bread machine in the order recommended by your bread machine's manufacturer. Select the dough setting and turn on the machine.
- Upon completion of the dough cycle, remove the dough from the pan onto a floured surface. Cut into the number of rolls that you prefer depending on the size of the rolls that you would like (8 - 10 rolls). You can make these into small rolls or large buns for hamburgers. Shape into individual rolls and place on a parchment lined baking sheet. Cover with a clean towel and let rise until doubled in size.
- Bake in oven at 350 degrees for approximately 20 minutes until brown and hollow when you tap on them. Bake time will depend on the size of your rolls and the temperature of your oven. 5 minutes before they are done, brush with melted butter.

- Add ingredients in bread machine as directed and set on dough cycle (on my machine, that includes the first rise, and takes 1 1/2 hours). When it's finished, remove from pan and set on lightly floured surface. Do not kneed. Gently shape into rectangle and use knife to cut into 12 equal pieces. (My pieces are never even, no matter how hard I try, so don't worry about that as much. The key is not to over-handle the dough.) Set each piece of dough in your hand and pinch it through your fist to shape it into a ball, just so you can get a relatively smooth surface on top. Again, don't over-shape it to get it to look perfect or the rolls won't be as light and fluffy. Place rolls in a 9x13 pan sprayed with Pam, cover with a tea towel, then place in warm place to rise for 45-50 minutes. I always use the oven for this. To do this, set your oven to "warm" or around 200 degrees, for just two minutes, then turn off. Now place dough inside to rise. After dough has risen, remove from oven and pre-heat to 425 degrees. Meanwhile gently brush tops of rolls with melted margarine. Once oven is pre-heated, bake for 12 minutes or until rolls are a light golden brown. Do not overbake. Ovens may vary, but I've made this in two ovens and for both I found that 12 minutes exactly was perfect. Even a minute longer was too done for my taste. After baking, immediately brush with melted butter. (For the calorie calculator, I figured 3 Tbsp of Imperial margarine for melting - that's the total amount for before and after baking - but I've never measured this.)
- These rolls are good even several hours after baking, but my poor family has never had them fresh from the oven, when they're downright heavenly. Still, they constantly ask for these and go nuts when they see them.

- Place all dough ingredients in bread machine pan in exact order listed above.
- Set machine on DOUGH cycle and press start.
- Grease muffin tin and set aside.
- Remove the dough from bread-machine when DOUGH cycle has finished.

- On lightly floured surface, divide into 36 equal pieces and shape them all into balls.
