- In a shallow bowl, mix 1/4 cup flour, mustard, garlic pepper and seasoned salt. Add pork chops, 1 at a time, and toss to coat; shake off excess. , Select saute or browning setting on a 6-qt. electric pressure cooker. Adjust for medium heat; add oil. When oil is hot, brown pork in batches. Add 1-1/2 cups broth to pressure cooker. Cook 30 seconds, stirring to loosen browned bits. Press cancel. Return all pork to pressure cooker., Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 3 minutes. Quick-release pressure. A thermometer inserted in pork should read at least 145°. Remove pork to a serving plate and keep warm., In a small bowl, mix remaining 1/4 cup flour and 1/4 cup broth until smooth; stir into pressure cooker. Select saute setting and adjust for low heat. Simmer, stirring constantly, until thickened, 1-2 minutes. Serve with pork.

BREADED PORK CHOPS
This recipe is a little different from others in that it uses worcestershire sauce in the egg mix. We love how it gives the chops a little extra "zing." We usually have this with a green vegetable and potatoes. I've also listed a variation of this recipe to make a cheese-topped pork chop. Note: If you're making the chops without cheese, you might want to try learninscratch's directions for a delicious orange sauce -- they can be found in her review.

- In small bowl, combine flour, salt, paprika and pepper; mix well. In another small bowl, combine egg and worcestershire sauce. Coat pork chops with seasoned flour; dip in egg mixture and coat with crumbs.
- In large skillet, heat oil over medium-high heat until hot. Add chops; cook until browned on both sides. Reduce heat to medium; cook 5-7 minutes or until pork is no longer pink in center.
- For oven-baked pork chops: Prepare as directed above. Place in a shallow baking pan that has been sprayed with a cooking oil such as Pam. Bake at 425 degrees F. for 30-35 minutes or until no longer pink in center.
- To make a cheese-topped pork chop: Decrease bread crumbs to 1/4 cup. Mix crumbs with 1/4 cup grated Parmesan cheese. When chops are thoroughly cooked, top each with a slice of mozzarella cheese and tomato slice. Cover; heat until tomato is hot and cheese begins to melt.

PORK CHOPS IN THE PRESSURE COOKER

- Brown pork chops in a bit of olive oil in the pressure cooker, remove excess oil,and put pork chops back in. Add green pepper and onion, carrots, potatoes, and mushrooms. Mix tomato sauce/soup with water to equal 12 oz. Add to pressure cooking pot. Secure lid of pressure cooker and bring up to pressure. Cook for 10-15 minutes. Remove from heat and let the cooker come down from pressure on its own.

BREADED PORK CHOPS IN 30 MINUTES
Breaded pork chops cooked the old-fashioned way-quickly brown on the stovetop then moved to the oven to bake to your ideal temperature. In only 30 minutes with pantry ingredients, these chops are juicy with a flavorful crispy crust.

- Preheat oven to 400° convection or 425° conventional.
- Trim pork chop of the fat rim. Pat dry with a paper towel.
- Prepare two trays. First, with one egg whipped with a teaspoon of water. Second, with 1/4 cup of Panko Bread Crumbs, 1/4 cup flour, 1 1/2 teaspoon seasoning salt (Lawry's is my choice), and 1/4 teaspoon black pepper.
- Dredge a chop in the egg mixture. Be sure to cover all surfaces. Remove with a fork and allow to drain for a moment.
- Dip the egg-coated pork chop into the flour mixture. Coat all sides, remove with a fork and shake to remove extra flour.
- Set the chop on a plate or chopping board. Repeat for the next chop. We want to coat to set up for a few minutes.
- Over medium-high heat, add 2 tablespoons of vegetable oil to an oven-safe, non-stick skillet-cast iron preferred. When hot and the oil is shimmering, move the chops to the pan with a fork.
- Brown each side of the chop for 2-3 minutes until almost the final color you want. Use a fork to flip by poking the meat edge and not anything to grab the meat and pull off the coating.
- Check the internal temperature, do one last flip of the pork, and place in the preheated oven until the internal temperature you want. About 10 minutes for 145° but this will vary a lot in time, so you must use a meat thermometer and get the final temperature you want. Remember, you can always cook more but can not uncook meat.
- Allow to rest on a plate for 5 minutes before cutting.

- Combine flour, cracker crumbs and spices. Start by mixing together the ingredients for the breading. In a medium-sized container, combine the flour, bread or cracker crumbs, salt, pepper and other spices. Stir the dry mixture until the bread or cracker crumbs and spices are distributed evenly throughout. Add your own special touch to the breading seasoning by incorporating other spices like paprika, onion powder, garlic or cayenne pepper. For extra crispy breading, use Japanese Panko-style bread crumbs.
- Mix eggs and milk together in a large bowl. Crack two large eggs into a mixing bowl. Add 1/8 cup of milk and beat in the egg. Together, the two will create a thick liquid known as a "wash" used to prepare the pork chops to be breaded. Use 2% milk fat or higher so that the egg wash is thick enough to cling to the chops.
- Dip the pork chops into the egg wash. Submerge each pork chop into the egg wash, making sure to wet both sides. If time allows, leave the chops to sit in the liquid for several minutes on each side to ensure that they are thoroughly covered. The thickness and moisture of the wash will allow the breading to stick to the pork chops better. The egg will also enhance the texture of the pork chops and help cook the outside.
- Coat the chops evenly in breading. Once the chops have been soaked in the egg wash, place them in the container with the breading mixture. - Generously season the pork chops with salt and pepper. Select Saute to preheat the pressure cooking pot. When hot, add the oil and brown the pork chops on both sides-do not crowd the pan.
- When pork chops are browned, add 2 cups of water to the pressure cooking pot, and stir to scrape up any browned bits on the bottom of the pan.
- Add the onion soup mix and tomato paste, and stir to combine. Lock the lid in place, select High Pressure and 15 minutes cook time.
