PEPPERONI PIZZA LOAF
This savory stromboli starts with frozen bread dough, so it comes together in practically no time. The golden loaf is stuffed with cheese, pepperoni, mushrooms, peppers and olives. I often add a few slices of ham, too. It's tasty served with warm pizza sauce for dipping. -Jenny Brown, West Lafayette, Indiana

BREAD PIZZA STUFFED WITH MEAT AND MUSHROOMS
Steps:
- Heat the oven to 350°F. Split the bread lengthwise, then cut it in half again and hollow out some of the soft insides of the bread. Lightly crisp the bread in the oven, 10 minutes. Remove the bread and switch the broiler on.
- Heat a medium nonstick skillet over medium-high heat. Add 2 tablespoons of the EVOO, twice around the pan, and the mushrooms. Cook the mushrooms until dark and tender, 7 to 8 minutes, stirring frequently.
- Heat a second medium nonstick skillet over medium-high heat with the remaining tablespoon of EVOO. When the EVOO smokes, add the pancetta or bacon and render the fat for a minute or so, then add the ground beef and break it up into an even layer. Deeply brown and caramelize the meat, 5 minutes. Add the onions and carrots and season with lots of coarse pepper, some salt, the Worcestershire, and the ground allspice, then cook for 10 minutes more, stirring frequently. Add the wine and scrape up all the brown bits. Add the stock to loosen up the mixture a little, then add the tomatoes and parsley and heat through, 1 to 2 minutes. Remove from the heat.
- Season the cooked mushrooms with salt and pepper. Fill the toasted breads with equal amounts of mushrooms, then top them with equal amounts of the meat sauce. Cover the meat sauce with a layer of mozzarella and a sprinkle of Parmigiano or Romano cheese. Broil the pizzas to melt the cheese. Shred or tear the basil and top each pizza liberally with it, then serve (with a fork and knife).

- Preheat the oven to 425F. Spray the inside of the springform pan with nonstick spray or rub with a stick of butter. Sprinkle cornmeal all over the inside of the springform pan, tilting the pan from side to side to evenly distribute the cornmeal.
- In a large skillet, cook the sausage over high heat, breaking it up with a spatula as you cook. As the sausage releases juices, drain the juices so you can brown the sausage. When it is fully cooked (about 5 minutes), drain the sausage through a large colander over a bowl or a plate. Set the sausage aside.
- In the same pan that you cooked the sausage, cook the mushrooms until they start to sweat. At that point, add the bell pepper and saute for another 2-3 minutes. Drain the mushroom/bell pepper mixture into the same colander as the sausage. You want all the extra liquid to drain from the pizza stuffing, so your pizza won't be soggy.
- Take about 2/3 of the pizza dough and roll it out and/or use your hands to stretch the dough into a ~16 inch circle. This dough will be the bottom and sides of the pizza.Carefully place the dough into the pan. Wrap the dough around the top edges of the pan, and then press the dough into the pan. This takes a bit of effort, but keep pressing the dough into the pan while fixing the edges of the dough.Bake the bottom of the pizza for 4 minutes. This will help make sure the pizza is not soggy. If the sides of the pizza cave in during baking, just straighten them out (careful! it's hot!) after baking - the dough should still be pliable after 4 minutes of baking.
