French fries coated in truffle oil and Parmesan cheese is simply heavenly! They were served at one of my favorite brewpubs and I knew I had to recreate them at home.

Ingredients

4 large russet potatoes
peanut oil for frying
4 teaspoons truffle oil
¼ cup finely shredded Parmesan cheese
4 teaspoons minced fresh parsley
1 teaspoon sea salt

Steps:

Cut potatoes into French fry shapes, about 3/8-inch wide and thick, using a mandoline or a knife. Soak potatoes in a large bowl of cold water for about 30 minutes. Drain and pat potatoes dry with a clean towel.
Heat oil in a deep-fryer or deep saucepan to 275 degrees F (135 degrees C).
Gently lower 1/4 of the potatoes into the hot oil and cook, stirring occasionally, for 2 minutes. Transfer cooked potatoes to a clean towel using a slotted spoon. Repeat frying with remaining potatoes.
Heat the same oil to 350 degrees F (175 degrees C). Fry potatoes again, working in batches, until golden brown, about 5 minutes. Transfer fries to a clean kitchen towel using a slotted spoon.
Place fries in a bowl and drizzle truffle oil over warm fries; season with Parmesan cheese, parsley, and sea salt.

Ingredients

250ml double cream
250ml single cream
small bunch of mint
500g dark chocolate (about 70% cocoa solids)
130g butter, diced
130g clear honey

Steps:

Pour both creams into a medium saucepan. Lightly bash the mint sprigs with a wooden spoon to release their fragrance and add to the pan. Heat very gently for 5-6 minutes to infuse the cream with the mint.
Meanwhile, break up the chocolate and place in a heatproof bowl with the diced butter and honey.
Strain the hot cream through a sieve onto the chocolate, butter and honey, stirring as you do so; discard the mint sprigs. Continue to stir until the chocolate has melted and the mixture is smooth.
Pour the mixture into a wide, shallow dish, cover and chill in the fridge for an hour or until firm.
Scatter your chosen coating(s) on separate plates. Take the truffle mix from the fridge and, using a teaspoon, scoop out a portion and shape into a sphere by quickly rolling it in your hands. (Do this speedily to avoid the truffle melting with the warmth of your hands.) Toss the truffle in your preferred coating and arrange on a plate. Repeat with the rest.
Place the truffles in a shallow plastic container, seal and refrigerate until firm and ready to serve. Eat within 3-4 days.

Fill a large bowl with cold water. Place potatoes into the bowl and refrigerate for at least an hour, or up to overnight.
After potatoes have soaked for at least an hour, remove from water and rinse well to remove the starch. Lay out on a towel and pat dry.

At my special outing yesterday to Gordon Ramsay's Burger, I opted for the Euro burger with truffle aioli, goat cheese, arugula, and an oven-roasted tomato. The pillowy and crisply-toasted bun was a match in heaven with the peppery wisps of arugula and gamey cheese, but the truffle parmesan fries with truffle aioli were a greasy and over-fried disappointment.
