PINTO BEAN PIE
Gammy (as my mom, Barbara Galloway, is known around here) loves to cook and be creative. It's a trait that was passed down from her father. Pinto Bean Pie is one of her favorite recipes to make, especially when she's planning special holiday meals. Steps:
- In a large bowl, combine the beans, butter and vanilla. Stir in the sugar and coconut. Add eggs; stir well. Pour into crust. Bake at 350° for 30 minutes. , Sprinkle with pecans; bake 15-20 minutes longer or until a knife inserted in the center comes out clean but moist. Cool on a wire rack. Serve with whipped topping if desired. Refrigerate leftovers.

Steps:
- Beat eggs with sugar, then blend in the milk, vanilla and butter.
- Combine the flour, salt and baking powder and stir into the egg mixture till well blended.
- Blend in the beans and turn into pieshell.
- Bake at 350 degrees till firm.
PINTO BEAN PIE II
Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Cream together butter, sugars and eggs (slightly beaten). Add beans and nuts, mix well and pour into unbaked pie shell.
- Bake at 350 degrees F (175 degrees C) for 35 to 40 minutes.

- Combine sugar and spices in a medium mixing bowl; mix well.
- Add beans, egg, egg yolks and vanilla; mix until smooth.
- Pour into pie crust.
- Bake at 350 degrees for 15 minutes.
- Reduce heat to 300 degrees and bake 45 minutes or until set.
- Let cool before serving.

TEXAS BEAN PIE
Steps:
- Preheat oven to 350 degrees F (175 degrees C). Place pie shell in a 9 inch pie pan.
- In a food processor, puree beans until smooth. In a medium bowl, combine beans, eggs, sugar, vanilla and salt; beat well. Pour mixture into the unbaked pie shell.
- Bake for 45 minutes or until knife inserted into center of pie comes out clean. Cool before serving.
