1 1/2 cups milk
1 1/2 cups soft breadcrumbs
1/2 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 egg, well beaten
2 tablespoons light corn syrup or 2 tablespoons honey
1 tablespoon butter, melted

Steps:

  • Heat milk and pour over crumbs, and let stand for 15 minutes.
  • Sift flour, baking powder and salt, and add to crumb mixture, along with egg, syrup (or honey) and melted butter.
  • Beat until well blended and free lumps, and drop by tablespoons onto a well-greased griddle, allowing one side to brown before turning.
  • Re-grease griddle before every batch.
  • Serve hot.

2 cups whole wheat pastry flour
¼ cup wheat germ
3 tablespoons soy flour
2 tablespoons white sugar
4 teaspoons baking powder
½ teaspoon salt
3 eggs
¼ cup canola oil
¼ teaspoon almond extract
2 cups soy milk

Steps:

  • Preheat griddle to 350 degrees F (175 degrees C). In a large mixing bowl combine dry ingredients. In another large mixing bowl combine eggs, oil and almond extract; whisk until combined. Stir in soy milk. Add wet ingredients to dry ingredients and whisk until combined. Batter should be slightly thick, adjust liquid if necessary.
  • Pour batter by the 1/4 cup full onto hot griddle. Cook until edges look dry and bubbles burst. Flip and cook another minute or so until golden brown. Serve warm.

1 tablespoon Dijon mustard
1 cup breadcrumbs (or Progresso Italian style Panko)
1 teaspoon italian seasoning
1/4 cup reduced-fat parmesan cheese (grated)
1/2 cup flour
4 boneless skinless chicken breasts

Steps:

  • Heat oven to 450 degrees. Place a rack on a baking sheet sprayed with nonstick spray.
  • Whisk together egg whites and mustard.
  • Blend bread crumbs, Italian seasoning and cheese in another bowl.
  • In a third dish, place flour.
  • Coat chicken with flour, shaking off excess, dip in egg mixture and then in bread crumb mixture.
  • Bake at 450°F for 15 minutes, turn over and bake another 10 minutes.
  • Turn oven to broiler and cook for 1 minute.
  • Serve with heated marinara sauce if desired.
