CARAMEL BUTTER CAKE

- In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour and baking powder; add to creamed mixture alternately with milk, beating well after each addition. Pour into three greased and floured 9-in. round baking pans., Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from the pans to wire racks to cool completely. Cut each cake horizontally into two layers. , For caramel sauce, melt brown sugar in a heavy skillet over low heat for about 25 minutes. Remove from the heat; set aside., In a heavy saucepan, combine the sugar, milk and egg yolks. Bring to a boil over medium heat, stirring constantly. Add melted brown sugar. Cook and stir until a thermometer reads 238° (soft-ball stage). Remove from the heat; stir in the butter and vanilla until the mixture is smooth and spreadable., Place bottom layer on a serving plate, quickly top with 1/3 cup caramel sauce. Repeat layers 4 times. Top with the sixth cake layer. Dust cake with confectioners' sugar if desired. , ,

EASY CARAMEL CAKE

- Heat the oven to 180C/160C fan/gas 4. Butter two 20cm springform tins and line the bases with baking parchment.
- Beat the butter and both sugars in a bowl with an electric whisk for a few mins until lighter in colour and fluffy. Add the vanilla and the eggs, one at a time, adding a spoonful of flour and beating in between each egg. Add the remaining flour and milk. Divide between the cake tins and bake for 25-30 mins until they're golden, spring back when pressed, and a skewer comes out clean when inserted into the middle. Cool in the tins for a few mins, then tip out and leave to cool completely on a wire rack.
- Meanwhile, for the icing, put the butter and icing sugar in a bowl and whisk for a few mins until light and airy. Whisk in the caramel briefly, adding 1 tbsp of boiling water to loosen, if needed. Set aside until the sponges are completely cool before assembling, or the icing will melt.
- Use half the icing to sandwich the cakes together, then spread the remainder over the top, smoothing it out with a knife or the back of a spoon. Leave in a cool place until ready to serve. Drizzle with the 3 tbsp extra sauce (warm briefly in the microwave if it's a little stiff), allowing some to drip down the sides if you like, and scatter over the toffee, chocolate or caramel pieces to serve. Edible glitter, birthday candles or sparklers, optional.

BREAD AND BUTTER CAKE WITH CARAMEL SAUCE

Steps:
- Preheat the broiler Butter one side of each slice of bread and toast them, buttered side up, under broiler, watching carefully, so they don't burn. Stand bread slices upright so they can cool so they do not become soggy. Do not stack together.
- When the toast is cool and dry -- trim off the crusts and cut into triangles.
- Arrange the pieces spiral fashion, points outward, in a deep 10" cake pan, there will be an empty space in the center of the pan.
- Sprinkle the toast with 2 tablespoons of the granulated sugar and the cinnamon -- set aside.
- Preheat the oven to 400° -- split the vanilla bean and scrape the seeds into a large saucepan.
- Add the rest of the bean and the milk and scald over medium-high heat. If using vanilla extract, instead of bean, scald the milk alone.
- In a large mixing bowl, beat the eggs, yolks, remaining sugar, salt and vanilla extract if used -- until smooth and lemon colored, about 1 minute.
- With the mixer on low, add the scalded milk in a steady stream -- with a ladle, skim off the froth created from the beating.
- Remove the vanilla bean and pour as much custard as you can into the center of the toast pan, being careful not to limit the flow to this one spot. Do not saturate all toast points with custard. You may need to let the toast stand for a few minutes before adding the rest of the milk, mixture. The toast does eventually absorb all the the liquid.
- Bake in a hot water bath (I use a 14" round casserole) for about 40 minutes or until the pudding is firm, slightly puffed and lightly browned.
- Remove from the oven and cool on rack.
- While the pudding cools, prepare the sauce. Place the butter in a heavy saucepan, and pour the sugar on top -- do not stir.
- Over medium heat, allow the sugar and butter to caramelize slowly, about 10 minutes.
- Begin stirring when the mixture is brown and bubbling. Continue cooking until the caramel appears to be begin scorching.
- Whisk in small amounts of half and half until the caramel is thick like a syrup.
- Strain through a fine sieve and keep warm in a hot water bath until ready to use.
- When the cake is at room temperature, carefully cut it into 10 pie shaped portions, using a bread knife and rubber scraper to avoid losing the custard.
- Dust 10 dessert plates with confectioners' sugar, place a slice on each and spoon caramel sauce around each slice.

- In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in molasses and egg until well blended. In another bowl, whisk together the flour, baking soda, ginger, cinnamon and salt; add to creamed mixture alternately with water., Transfer to a greased 9-in. square baking pan. Bake at 325° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Place on a wire rack., For caramel sauce, in a small saucepan, combine brown sugar and cornstarch. Stir in water until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in butter and vanilla until smooth. Serve with warm cake. Top with whipped cream if desired.

Steps:
- Preheat the broiler.
- Butter one side of each slice of bread and toast them with the buttered side up. Watch carefully as not to burn.
- Stand bread slices upright to cool-- do not stack as they will stick together-- When toast is cool and dry, trim off crusts and cut into triangles.
- Arrange in a deep 10 inch cake pan, in a spiral overlapping, with the points up. There will be an empty space in the centre.
- Sprinkle with the 2 tbsp sugar and the cinnamon. Set aside.
- Split the vanilla bean and scrape the seeds into the milk in a saucepot, over medium heat.
- Note: If using extract, do not put it in the milk here, scald the milk alone.
- In a large bowl, beat the eggs, remaining sugar, salt and vanilla extract if been used, until smooth and lemon coloured-- about one minute.
- With mixer on low, and in a stream add the scalded milk-- now remove the vanilla bean.
- With a ladle pour as much of this custard into the centre of the cake pan, careful not too overflow-- let stand and keep adding more, as its been soaked inches.
- Bake in a hot 400°F oven in a hot water bath-- for about 40 minutes until pudding is firm and puffed and golden brown-- Remove and place on a rack to cool.
- Sauce-- Put butter in a pot, and pour in the sugar.
- DO NOT STIR Over medium heat allow sugar to caramelize slowly--should take 10 minutes or so.
- Stir when mixture is a nice brown colour and bubbling.
- Continue until its a dark golden brown-- Stir in small amounts of the cream, it will harden up-- but then will go back to a liquid, or a thick syrup-- Strain through a sieve, and keep hot in a warm water bath, until needed.
- To serve-- cut the cake into ten portions, as you would a pie-- using a knife and a pie lifter to remove, as not to loose any custard-- Pour some sauce over each.
