Steps:
- Simmer brats in water to cook.
- Be careful not to boil or the casings may crack.
- Brown the brats on a grill and put them into the sauce to add flavor and keep warm without overcooking until ready to serve.
- To make the sauce put all of the sauce ingredients together in a small loaf type pan and warm on the grill and after the brats are grilled, place the brats in the sauce on the grill.
- To serve: Use a good brat bun, spoon in a bit of sauce into the bun with some of the onion.
- Add the brat and top with your favorite condiments; mustard, ketsup, chopped onion and/or relish.
- The smell will attract hundreds of people.

- Bring a large pot of salted water to a boil. Cook pasta for 8 to 10 minutes, or until al dente, drain and rinse with cold water. Set aside.
- In a large skillet, heat oil over medium heat add sliced sausage to the skillet and cook.
- Add red pepper flakes and continue sauteing until sausage is no longer pink.
- Add onion and garlic to skillet and continue until onion softens.
- Stir in tomatoes and salt, (if using fresh tomatoes, sauté them for 3 minutes until softened) then add light cream and Parmesan cheese; simmer gently until mixture thickens (about 5 minutes).
- Stir in the cooked pasta and basil, and heat through, about 3 minutes.
- If desired, garnish with a sprinkle of fresh basil or shaved Parmesan cheese.

- Removed casing from sausage links and cut into 1/2 inch slices. In a large skillet, brown sausage over medium heat for about 10 minutes; remove and set aside.
- In a large skillet, heat ground beef, olive oil, garlic and onion over medium heat until meat is nicely browned; drain.
- Pour in tomatoes and tomato sauce; mix in salt, ground black pepper, basil, oregano, bay leaf and cooked sausage. Simmer uncovered for 1 hour, stirring occasionally.
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- Mix cooked sauce with hot pasta and remove bay leaf from sauce before serving.

- Preheat oven to 425.
- Add oil, garlic, sweet peppers and onions in a 9X13 baking dish and roast in oven for 25 minutes, stirring occasionally.
- While roasting vegetables, remove casing from brats, crumble and brown in a skillet over medium heat.
- Drain brats and blot with towel to remove excess grease.
- Return brats to skillet and add beer, simmer.
- Cook pasta as directed, drain, but keep 1/2 cup of pasta water.
- Remove vegetables from oven.
- Add, brats, basil, 1/2 cup of cheese to vegetables and mix throughly, add some pasta water if it seems to dry.
- Top with remaining cheese and serve!

- Char peppers over gas flame or in broiler until blackened on all sides. Enclose in paper bag 10 minutes.
- Peel and seed peppers. Transfer peppers to blender and puree until very smooth. Season to taste with salt. (Can be made 1 day ahead. Cover and refrigerate.).
- In large skillet, heat olive oil over medium heat. Add garlic. Stir in bratwurst and heat through.
- Add cream, red pepper puree, red pepper flakes, salt and pepper. Stir in Parmesan cheese.

RED WINE ITALIAN SAUSAGE PASTA SAUCE
I grew up in an Italian household with my Grandfather (Carl D'andrea), teaching me from early childhood, his family recipe for 'basic tomato sauce' or marinara (not written down, completely from memory). I know this recipe like the back of my hand, and when I recently found myself with leftover italian sausages, peppers, and onions from italian sausage sandwiches the night before - I decided to 'get creative' with my grandfathers marinara recipe in combination. Awesome flavor, very good over pasta -- enjoy, & as my Grandpa used to say, 'Mangia!' (which means 'EAT' in Italian)...

- In a large non-stick skillet with a lid, add the olive oil and warm over medium heat, allow oil to heat for approximately 2 minutes.
- Add chopped onion and green pepper, cook for about 2-3 minutes or until onion is soft and you can see thru it, stir for even cooking.
- Add chopped/minced garlic, stir and continue to simmer thru for another 2 minutes.
- Add dry seasonings, chopped tomato, and chopped Italian sausage. Stir all and cook for another 2 minutes then add the ¼-cup dry red wine and stir all together.
- Add fennel seed & black pepper, cook another 2 minutes longer.
- Next, add the tomato sauce and water, bay leaves, salt and sugar, stir all and cover with lid, allow to cook on medium until mixture begins to slow boil, then remove lid. Stir again, cover and turn heat to a low simmer, allowing to cook for several hours or until ready to serve with pasta.
- Allowing sauce to slow cook for at least 2-3 hours makes for a more robust sauce ~ serve with al dente pasta, a good crusty Italian bread (ciabatta for example), freshly grated Italian cheese (a good quality aged Pecorino Romano made from sheeps or goats milk is best, never cows milk), & your favorite red wine (our favorite is a good cabernet).
- Sauce is also better the next day, so as a time saver make this sauce up a day ahead, allow to cool thoroughly before refrigerating, then serve the next night for dinner.

- In large pot saute onion and garlic in olive oil until onion is softened.
- Add tomato paste and stir into olive oil until completely mixed .
- Stir in tomato sauce and tomatoes.
- Slowly mix in the 4 cups of water.
- Add bay leaves,.
- oregano, basil, salt, pepper, sugar and stir well.
- Bring to a boil then turn down and simmer for one hour.
- For your meatballs combine the beef, finely minced garlic, Italian bread crumbs, basil, oregano, parmesan cheese, eggs, salt and pepper and mix together well.
- Shape into 1 inch size meatballs and place on a cookie sheet.
- Bake meatballs in 350 degree oven for 20 minutes.
- Add meatballs to the sauce after 1 hour of cooking sauce.
- Continue to cook the sauce and meatballs 1 more hour or longer if you like.
- Uncover the sauce during the last half hour to thicken up the sauce.
- Cook pasta according to package directions.
- Serve sauce and meatballs over spaghetti.
