1 cup fresh fava beans (from about 1 pound pods) or frozen fava beans, thawed
Kosher salt
2 lemons, halved
3 pounds baby artichokes (about 16)
4 tablespoons olive oil, divided
Freshly ground black pepper
1 3 1/2-4-pound chicken, cut into 10 pieces
8 shallots, peeled, halved
1 cup dry white wine
3 tablespoons white wine vinegar
1 cup low-sodium chicken broth
2 tablespoons chopped fresh chives
1/4 cup chopped fresh flat-leaf parsley
Flaky sea salt (such as Maldon)

Steps:

  • If using fresh fava beans, cook in a large saucepan of boiling salted water until tender, about 4 minutes. Using a slotted spoon, transfer to a colander set in a bowl of ice water to cool. Drain, remove skins, and place beans in a small bowl. Do not cook frozen beans.
  • Squeeze lemons into a large bowl of cold water. Working with 1 artichoke at a time, remove tough dark outer leaves. Using a serrated knife, cut off 1" from top, then trim stem, leaving at least 1/2" intact. Using a paring knife or vegetable peeler, remove dark outer layer from stem. Cut artichoke in half lengthwise, scoop out choke with a spoon, and discard. Transfer artichoke to lemon water to prevent it from turning brown.
  • Preheat oven to 425°F. Heat 2 tablespoons oil in a large Dutch oven or other heavy pot over medium-high heat. Drain artichokes and pat dry. Add to pan; season with kosher salt and pepper, and cook, tossing occasionally, until brown and crisp in places, 8-10 minutes. Transfer to a baking sheet. Wipe out pot.
  • Heat remaining 2 tablespoons oil in same pot over medium-high heat. Season chicken with kosher salt and pepper. Working in 2 batches, cook chicken, skin side down, until brown and crisp, 6-8 minutes (do not turn). Transfer to baking sheet with artichokes.
  • Reduce heat to medium, add shallots to pot, and cook, stirring often, until golden brown and beginning to soften, 8-10 minutes. Add wine and vinegar and bring to a boil, scraping up any browned bits from bottom of pot; cook until reduced by half, about 5 minutes. Mix in broth, then add artichokes and chicken, skin side up. Transfer to oven and cook, uncovered, until chicken is cooked through, 20-25 minutes. Mix in fava beans.
  • Serve chicken and vegetables topped with chives and parsley and seasoned with sea salt and pepper.

2 teaspoons vegetable bouillon granules
coarse salt

2 tablespoons parsley, finely chopped

Steps:

  • Chop the onions.
  • Place the oil in a Dutch oven, add the onions and braise until transparent.
  • Skin, deseed and chop the tomatoes.
  • Add the tomatoes, beans and stock granules to he onions.
  • Cover and cook for about 30 minutes.
  • Add more water if it looks dry.
  • Season with salt and pepper, garnish with parsley and serve.

5 pounds fresh fava beans, shelled, or 5 cups frozen double-peeled fava beans (from two 16-ounce packages), thawed
2 tablespoons butter, divided
2 tablespoons olive oil, divided
1 1 1/2-pound piece beef tenderloin, cut in half lengthwise, then crosswise into 1/2-inch-thick slices
2 large onions, finely chopped
1/2 cup whipping cream
1/4 cup fresh lemon juice
2 large egg yolks
2 teaspoons salt
1 teaspoon ground black pepper
2 tablespoons chopped fresh mint

Steps:

  • Cook fresh fava beans in large pot of boiling salted water 2 minutes. Drain favas. Place in large bowl of ice water. Drain. Slip outer skin off each bean and discard skin; place beans in large bowl. (If using frozen beans, do not blanch.)
  • Melt 1 tablespoon butter with 1 tablespoon oil in large nonstick skillet over high heat. Working in batches, add beef and sauté just until browned on both sides, about 2 minutes. Transfer beef to medium bowl.
  • Melt remaining 1 tablespoon butter with 1 tablespoon oil in same skillet over medium heat. Add onions; sauté until tender and golden, about 15 minutes. Add fava beans; sauté 5 minutes. Remove from heat; cool 15 minutes.
  • Meanwhile, whisk whipping cream, lemon juice, egg yolks, salt, and pepper in small bowl to blend. Stir cream mixture into fava bean mixture. Cook over medium-low heat just until sauce thickens slightly and mixture is heated through, about 6 minutes (do not boil). Add beef and stir until heated through, about 3 minutes. Transfer fricassee to rimmed platter. Sprinkle with mint.

  • Preheat the oven to 250°. In a large enameled cast-iron casserole, heat the oil. Add 3 of the chicken legs and cook over moderately high heat, turning once, until browned, 10 minutes; transfer to a plate. Repeat with the remaining chicken, then pour off the fat.
  • Add the onion and 1 lemon half to the casserole cut side down and cook over moderately high heat until browned, 1 to 2 minutes. Add the bay leaf and sherry and scrape up any browned bits with a wooden spoon. Return the chicken and its juices to the casserole. Add the stock, the remaining 1 teaspoon of baharat and 3/4 teaspoon of salt; bring to a simmer. Cover and braise in the oven until the chicken is very tender, about 1 hour and 45 minutes.
  • Transfer the chicken legs to a plate and let cool slightly; discard the onion, lemon half and bay leaf. Skim the fat off the braising liquid, then simmer over moderately high heat until reduced by one-fourth, 8 to 10 minutes; season with salt and pepper. Discard the chicken skin and bones and pull the meat into large chunks; return the meat to the braising liquid and keep warm.
