BRAISED CUBE STEAK WITH ONION GRAVY (AIP)

Steps:
- In a large skillet with a cover, heat oil over medium heat.
- Meanwhile, season steaks with salt, then coat each piece of meat with flour on both sides.
- Cooking in batches if necessary, brown the steaks without moving them for 3-4 minutes, then flip and brown on other side for 3-4 minutes. Remove from pan and set aside.
- Add onions to skillet and cook until softened and beginning to brown (about 6-7 minutes).
- Add garlic and cook until fragrant (about 1 minute).
- Slowly add broth, stirring and scraping bottom of skillet to dislodge browned bits. Bring to a boil and then reduce to low.
- Add fresh thyme leaves and stir to distribute.
- Return steaks in a single layer so that the are not completely submerged by gravy.
- Cover and simmer on low for 45 minutes.
- Serve steaks with gravy (it's delicious on spaghetti squash, cauliflower mash, or other starchy side dish!)

Steps:
- Heat oil in a skillet.
- Mix flour, salt and pepper.
- Dredge cube steaks in flour mixture; fry steaks until cooked but do not overcook or will become stringy.
- Remove steaks from pan and drain on towels; cover to keep warm.
- Drain off all of fat except for 2 tablespoons.
- Saute onion in skillet till tender;scrape up little bits of meat from pan.
- Add flour and cook with onion till slightly brown.
- Whisk in beef broth and cook till thick and bubbly. If not thick enough mix up a little flour/water and whisk into gravy.
- Cut cube steaks into 1" strips and return to pan with gravy; heat through and serve.

- Heat oil in large, heavy-bottomed skillet over medium heat. Sprinkle both sides of steak with salt and pepper.
- Put 1/2 cup flour on a plate, and coat each piece of meat. Shake off excess flour and add steak to pan, working in batches. Cook about 3 or 4 minutes per side, or until browned, and remove to a platter.
- Add onions to skillet and cook about 3 minutes or until wilted. Stir to help loosen browned bits from bottom of pan. Lower heat, then sprinkle with 1 tablespoon flour. Stir constantly, cooking for about 4 minutes.
- Gradually add water or stock, continuing to stir to keep lumps at bay. Bring mixture to a boil, then turn heat to low and add steaks to pan. Simmer, partly covered, for 45 minutes. Remove to a platter and taste pan sauce, correcting for seasoning.

- Preheat oven to 350°F.
- Combine flour, salt, & pepper in a shallow plate. Dredge the meat in the flour mixture.
- Heat olive oil over medium heat in a dutch oven. Brown steaks on each side (adding additional olive oil if needed). Set aside.
- Melt the butter in the dutch oven and cook onions in it until they are tender, add the wine and cook until it reduces. Top with browned steaks.
- Add remaining ingredients except for cornstarch. Cover and place in the oven. Cook for 2 ½-3 hours or until fork-tender. Halfway through cooking, add 1 more cup of broth so the meat is covered with liquid.
- Remove the dutch oven from oven and remove the steaks from the pot and place on a plate covered with foil.
- Combine cornstarch with 1 tablespoon water. Bring liquid in the pot to a boil. Stir in cornstarch slurry and stir until thickened.
- Serve over mashed potatoes.

- Dust the beef in flour, then set aside. Heat the oil in a large pan. Add the onions and fry for 5 mins. Add the sugar and cook for 5-10 mins, stirring frequently, until the onions are caramelised. Stir in the garlic for the final few mins.

- Salt and pepper steak and dredge in flour.
- Using a skillet, fry steak in oil only until just light brown on each side.
- In same skillet add water, ketchup and worcestershire sauce and let simmer on low heat for 15 to 20 minutes.
- Add onion rings and simmer 10 minutes.
- Push steak and onions to one side in skillet. Using Pillsbury gravy flour, whisk in vigorously while gravy is bubbling and simmer 5 more minutes. (This flour is the secret to not having lumps in your gravy.).

- Mix flour, salt, pepper, garlic powder, and onion powder in small bowl.
- Coat meat in flour and fry in skillet for 5-10 mins til browned on both sides; remove to plate.
- Add 2 T butter to skillet and melt.
- Stir in 2-3 T of remaining flour mixture.
- Whisk in beef broth (may need to add water to thin if gravy is too thick).
- Return meat to skillet, reduce heat to low, cover and cook 30 minutes.
- Serve with rice, mashed potatoes, or noodles.
- Note: I've also made this in a slow cooker. Fixed it in the morning (didn't pan-fry) and let it cook all day. Can't begin to describe how good the kitchen smells when I get home!

- Prepare the flour dredge: Stir together flour, salt, and black pepper on a large plate. Dredge both sides of each cube steak in flour mixture, shaking off excess.
- Brown the Cube Steaks: Heat a large 12" to 16"-skillet with a tight-fitting lid or Dutch oven with a lid over medium-high heat. When the pan is hot, add 1 tablespoon with oil and swirl around the pan. It may make a little smoke - this is the perfect temperature. Add cube steaks and cook until golden brown, about two minutes on each side. Remove cube steaks to a plate and set aside.
- Prepare the Vegetables: With the heat still on medium-high, add another tablespoon of oil. Add onion, garlic, and mushrooms. Cook, stirring frequently until mushrooms have browned, about 3-5 minutes.
- Let it Simmer: If using red wine, add the wine to the pan and allow it to boil for about 30 seconds then add the Worcestershire sauce and beef stock. Stir with a spoon to scrape up and bits from the bottom of the pan. Add the cube steaks, nestling them into the sauce as much as possible.Cover skillet or Dutch oven and place on low to simmer until the steaks are very tender about 45 minutes.
