CHICKEN WITH SUN-DRIED TOMATO CREAM SAUCE

Crisp-tender chicken in the most amazing cream sauce ever. It's so good, you'll want to guzzle down the sauce!

8 bone-in, skin-on chicken thighs
Kosher salt and freshly ground black pepper, to taste
3 tablespoons unsalted butter, divided
3 cloves garlic, minced
1/4 teaspoon red pepper flakes, or more, to taste
1 cup chicken broth
1/2 cup heavy cream
1/3 cup julienned sun dried tomatoes in olive oil, drained
1/4 cup freshly grated Parmesan
1/4 teaspoon dried thyme
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
1/4 cup basil leaves, chiffonade

Steps:

  • Preheat oven to 400 degrees F. Season chicken thighs with salt and pepper, to taste. Melt 2 tablespoons butter in a large oven-proof skillet over medium high heat. Add chicken, skin-side down, and sear both sides until golden brown, about 2-3 minutes per side; set aside. Melt remaining tablespoon butter in the skillet. Add garlic and red pepper flakes, and cook, stirring frequently, until fragrant, about 1-2 minutes. Stir in chicken broth, heavy cream, sun dried tomatoes, Parmesan, thyme, oregano and basil. Bring to a boil; reduce heat and simmer until slightly thickened, about 3-5 minutes. Return chicken to the skillet. Place into oven and roast until completely cooked through, reaching an internal temperature of 175 degrees F, about 25-30 minutes. Serve immediately, garnished with basil, if desired.

1/3 cup thinly sliced drained sun-dried tomato packed in oil
1 1/2 tablespoons oil, reserved from sun-dried tomatoes
12 ounces boneless skinless chicken breasts
coarse salt
fresh ground black pepper
1 small onion, finely chopped
2 garlic cloves, minced
1/2 teaspoon dried basil, crumbled
1/4 teaspoon hot red pepper flakes, to taste
8 ounces mushrooms, sliced
1/2 cup dry red wine
1/2 cup chicken broth
2 tablespoons tomato paste
1 1/2 teaspoons unsalted butter, softened
1 1/2 teaspoons flour
3 tablespoons fresh flat-leaf parsley, minced

Steps:

  • Heat oil in a skillet over medium high heat; pat chicken dry, season with salt and pepper and brown on both sides; set aside.
  • Reduce heat to medium-low; add onion, garlic, basil and red pepper flakes and saute, stirring, until onion is softened; add mushrooms and salt and pepper and continue cooking and stirring over medium heat until mushrooms are softened.
  • Whisk in the wine, broth, tomato paste; add chicken and bring to a boil; reduce heat to a simmer and cook, covered, for 8-12 minutes until cooked through.
  • Remove chicken and keep warm; knead butter and flour together and add to skillet, stirring until incorporated and smooth; add sun-dried tomatoes and simmer, stirring, 2-3 minutes until thickened.
  • Stir in parsley and pour sauce over chicken; serve immediately.

Steps:

  • Wash and pat dry chicken, sprinkly with salt and pepper.
  • Heat Oil from tomatoes in a heavy skillet, over medium heat.

  • Add garlic and stir 30 seconds--do not brown garlic.
  • Add white wine, cream, pepper, and tomatoes, and bring to a boil.
  • Cover skillet, reduce heat to medium-low, and simmer until chicken is just cooked through, about 3-5 minutes.
  • Transfer chicken to plates.
  • Add most of basil to sauce in skillet.
  • Increase heat and boil until sauce thickens enough to coat spoon, and peppers and tomatoes are soft-about 2-5 minutes. (seems to take longer for me).
  • Season sauce to taste with salt and pepper, spoon over chicken and top with fresh basil and serve.

1 tablespoon olive oil
4 garlic cloves, minced
1/4 cup drained sun-dried tomatoes (packed in oil; 1/2 ounce), patted dry and coarsely chopped
3/4 teaspoon dried hot red pepper flakes
1/4 cup dry white wine
3/4 cup chicken broth
1/4 cup heavy cream
1/4 cup thinly sliced fresh basil

Steps:

  • Pat chicken dry and season with salt and black pepper. Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then brown chicken, turning once, about 6 minutes total. (Chicken will not be cooked through.) Transfer with tongs to a plate.
  • Add garlic, tomatoes, and red pepper flakes to skillet and sauté, stirring, until garlic is pale golden, about 1 minute. Add wine and boil, stirring and scraping up brown bits, until reduced by half, about 1 minute. Add chicken broth and bring to a boil, covered.
  • Add chicken to skillet with any juices accumulated on plate and simmer, covered, until just cooked through, 4 to 5 minutes. Transfer chicken with tongs to a platter and keep warm, loosely covered with foil. Stir cream and 2 tablespoons basil into sauce in skillet and bring just to a simmer.
  • Transfer sauce to a deep heatproof bowl or 1-quart glass measure and purée with an immersion blender until almost smooth. (Alternatively, blend sauce in a standing blender. Use caution when blending hot liquids.) If necessary, add water to thin to desired consistency, then season with salt and pepper.
  • Serve sauce over chicken and sprinkle with remaining 2 tablespoons basil.

This is great. Easy enough to prepare after work, yet elegant enough for company and with flavor to spare. This is a recipe that came from a member of my daughters online playgroup. (Thanks Alice) It is very simple and delicious, but impressive. Your guests will think that you are indeed a "chef". I like to double the sauce recipe and serve this with pasta. Also a quick note: for a variation that tastes just like Johnny Carino's Chicken Scaloppini, make sure to double the sauce recipe and add diced bacon and chopped Roma tomatoes and serve over angel hair pasta.

1 tablespoon butter
2 garlic cloves, pushed through a press (or 1/4 tsp. garlic powder)
1 1/2 tablespoons all-purpose flour
3/4 cup chicken broth
1/2 cup heavy cream

1 tablespoon oil (see note)
1/4 teaspoon dried thyme

Steps:

  • Heat sun-dried tomato oil over medium-high heat.
  • Sauté chicken in oil 8 minutes, turning once, until browned and cooked though.
  • Transfer to a plate.
  • To skillet, melt butter over medium-high heat.
  • Add mushrooms and saute until they are lightly browned and have released most of their liquid.
  • Add garlic and cook 30 seconds.
  • Stir in flour and cook 1 minute.
  • Stir in broth, cream, tomatoes, thyme, salt, pepper flakes and mushrooms.
  • Bring to boil and cook 1 minute.
  • Add chicken just to heat through.
  • Note: Two TBSP of sun-dried tomato slivers is equal to about 4 sun-dried tomato halves.
  • Buy sun-dried tomatoes packed in oil.
  • They come pre-seasoned.
  • They cut into slivers easily with a kitchen scissors.
  • I also like to flatten chicken breasts with a mallet or rolling pin to help cook more evenly.

1/2 pound pearl onions
1 cup thinly sliced onion
1/2 cup thinly sliced carrot
1/2 cup thinly sliced celery
1 tablespoon plus 2 teaspoons butter, divided
6 boneless skinless chicken breast halves (4 ounces each)
1 cup chardonnay or other dry white wine or reduced-sodium chicken broth
1-1/3 cups reduced-sodium chicken broth
1 tablespoon minced fresh parsley
1 teaspoon salt
1 teaspoon dried thyme
1/8 teaspoon white pepper
1 bay leaf
3 tablespoons all-purpose flour
1/2 cup fat-free evaporated milk
1/2 pound fresh mushrooms, quartered

Steps:

  • In a Dutch oven or large kettle, bring 6 cups water to a boil. Add pearl onions; boil for 3 minutes. Drain and rinse in cold water; peel and set aside. In the same pan, saute sliced onion, carrot and celery in 1 tablespoon butter until tender. Remove vegetables; set aside., Add chicken to pan; brown on both sides. Remove and keep warm. Add wine; simmer until reduced to 1/2 cup. Stir in broth and seasonings. Return chicken to pan; cover and simmer for 5 minutes or until juices run clear. Remove chicken to a serving platter; keep warm. , Combine flour and milk until smooth; gradually stir into pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Return vegetables to pan. Remove from the heat; cover and set aside., In a nonstick skillet, saute pearl onions in remaining butter until tender. Remove and set aside. In the same pan, saute mushrooms until tender. Add the onions and mushrooms to serving platter. Discard bay leaf from sauce; spoon over chicken and vegetables.

SUMMER BRAISED CHICKEN WITH TOMATOES

A simple light casserole with cannellini beans, basil and green chilli served with gluten-free Parmesan cornmeal

2 tbsp olive oil
3 banana shallots , finely sliced
4 chicken legs
300ml gluten-free chicken stock
2 large garlic cloves , peeled but left whole
a few lemon thyme sprigs
400g cherry tomato
3 plum tomatoes , quartered
400g can cannellini bean , drained and rinsed
1 green chilli , finely sliced
175g quick-cook fine polenta
85g finely grated parmesan
knob of butter
small bunch basil , leaves picked and torn, to serve

Steps:

  • Heat oven to 190C/170C fan/gas 5. Heat 1 tbsp of the oil in a shallow flameproof casserole dish over a medium heat. Throw in the shallots and soften, then remove and set aside. Season the chicken, turn up the heat and add to the pan with the remaining oil, browning all over. Return the shallots to the dish, pour over the stock and add the garlic, thyme, tomatoes, beans and chilli. Bring to the boil, cover and put in the oven for 30 mins or until the chicken is cooked through. Remove the lid and cook for 10 mins more to reduce the sauce.
  • Meanwhile, pour the polenta into 700ml boiling water while whisking. Cook for 2 mins (or according to pack instructions). Season generously, remove from the heat and stir through the Parmesan and butter. Serve the polenta with the chicken on top, scattered with basil.

a beurre manié made by kneading together 1 1/2 teaspoons softened unsalted butter and 1 1/2 teaspoons minced all-purpose flour
3 tablespoons minced fresh parsley leaves (preferably flat-leafed)

Steps:

  • In a heavy skillet heat the reserved tomato oil over moderately high heat until it is hot but not smoking, in it brown the chicken, patted dry and seasoned with salt and pepper, and transfer it to a plate. In the fat remaining in the skillet cook the onion, the garlic, the basil, and the red pepper flakes over moderately low heat, stirring, until the onion is softened. Add the mushrooms and salt and pepper to taste and cook the mixture over moderate heat, stirring, until the mushrooms are softened. Whisk in the wine, the broth, and the tomato paste, add the chicken to the skillet, and bring the liquid to a boil. Simmer the mixture, covered, for 15 to 20 minutes, or until the chicken is cooked through. Transfer the chicken to a platter and keep it warm, covered. Whisk the beurre manié into the sauce, whisking until sauce is smooth, add the sun-dried tomatoes, and simmer the sauce, whisking, for 2 to 3 minutes, or until it is thickened. Stir in the parsley and pour the sauce over the chicken.
