3 medium very ripe bananas
1 egg
1/3 cup low-fat buttermilk or 1/3 cup milk
1/2 cup granulated sugar
1/2 cup brown sugar
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
2 -3 tablespoons chocolate chips
2 tablespoons chopped walnuts (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Lightly coat 12 muffin tin liners with cooking spray and place in muffin tin.
  • In large bowl, mash bananas with fork.
  • Whisk in egg, milk, granulated sugar, and brown sugar.
  • In separate bowl, combine flour, baking soda, and salt.
  • Add flour mixture to banana mixture and combine well.
  • Fold in chocolate chips and walnuts.
  • Spoon equal amounts of batter into 12 muffin cups.
  • Bake 20 minutes or until toothpick inserted in center comes out clean.
  • Allow to cool slightly in pan, then remove to wire rack.

1 teaspoon vanilla

Steps:

  • Preheat oven to 350.
  • Combine bananas, oil, sugar, vanilla and egg in a large bowl, and mix well.
  • Mix dry ingredients in a separate bowl.
  • Add flour mixture to banana mixture, mixing until just blended.
  • (ignore lumps) Fill muffin tins about 2/3 full.
  • Bake 20 minutes.
  • This recipe doubles easily.

3 bananas (ripened)
2 eggs, lightly beaten
2 cups flour
3/4 cup sugar
1 teaspoon salt
1 teaspoon baking soda
1/2 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 350*.
  • Mash banana's in a bowl. Add the 2 lightly beaten eggs. Mix well.
  • In a seperate bowl, sift together flour, sugar, salt and baking soda. Add about 1/2 cup at a time to banana and egg mixture. Mixture will be thick and a bit sticky.
  • Place cupcake liners in a muffin pan. Fill muffin cups 3/4 of the way.
  • Bake at 350* for 15-20 minutes.

  • Preheat oven to 425 degrees F (220 degrees C). Lightly grease a 12-cup muffin tin.

3/4 cup all-purpose flour
1/4 cup wheat germ
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, softened
1/3 cup granulated sugar
1/3 cup firmly packed light brown sugar
2 large eggs, at room temperature
2 medium bananas
1/3 cup 2 percent milk
1 teaspoon vanilla extract
1/2 cup semisweet chocolate chips

Steps:

  • Preheat the oven to 375 degrees F.
  • Line a 12-cup muffin pan with parchment squares so they come up over the sides, and set aside.
  • Whisk together the flours, wheat germ, baking soda and salt in a medium bowl. Beat the butter and sugars together with an electric mixer until light and fluffy, about 5 minutes. Add the eggs one at a time, beating well after each addition.
  • Mash the bananas with a fork in a separate bowl. Stir in the milk and vanilla. With the mixer on low, alternately add thirds of the flour mixture and halves of the banana mixture to the butter mixture, beginning and ending with the flour mixture. Mix until just combined. Fold in the chocolate chips.
  • Divide the batter among the muffin cups. Bake until a toothpick inserted in the center of a muffin comes out clean, 20 to 24 minutes.

Steps:

  • In a large bowl, combine the flour, sugar, baking powder, baking soda and salt. In another bowl, whisk the egg, oil, yogurt and vanilla. Stir into dry ingredients just until moistened.   • Preheat oven to 350 degrees F (175 degrees C). Spray muffin cups with cooking spray or line with paper liners.
  • Beat sugar, butter, flax seed, vanilla, and eggs together in a bowl with an electric mixer until smooth and creamy.
  • Sift flour, salt, and baking soda together in a separate bowl. Mix creamed sugar mixture, 1/2 cup at a time, into the flour mixture until fully incorporated and batter is stiff.
