Steps:
- Place ribs in slow cooker. Add tomatoes, dressing, soy sauce and garlic powder; cover with lid.
- Cook on LOW 6 to 8 hours (or on HIGH 4 hours). Skim and discard fat from top of sauce before serving.

BRAISED CHICKEN
Steps:
- Gather the ingredients and heat the oven to 300 F.
- Dry the chicken well with paper towels and season generously with salt and pepper.
- Heat a Dutch oven over medium-high heat. Cook the bacon until it's crispy and the fat has rendered out. Remove and set aside.
- Add 1 breast (skin-side down), 1 thigh (skin-side down), 1 drumstick, and 1 wing. Brown the chicken for 4 to 5 minutes, then remove to a platter and repeat with the other 4 pieces. Finally, brown the backbone, skin-side down, and remove.
- Add the onion, leek , and garlic and sauté until the onion is translucent, about 3 to 4 minutes. Add the wine and boil, scraping any roasted bits from the bottom of the pan. Stir in the tomato paste.
- Return the chicken and bacon to the pot. Add the chicken stock or water. Season with salt (if needed). Add the rosemary and bay leaf and bring to a boil.
- Cover with a tight-fitting lid and transfer to the oven. Cook for one hour, or until an instant-read thermometer registers at least 165 F . Remove the lid and let the chicken cool in the pot for 15 minutes before serving.

SLOW-BRAISED BEEF SHORT RIBS RECIPE (VIDEO)
Easy, slow-braised beef short ribs in red wine sauce, with creamy mashed potatoes.

- Pat the short ribs dry with a paper towel, if needed, and season generously all over with sea salt and black pepper. Use your hands to work in the salt. Place the flour into a large bowl and coat each short rib all over with flour; tap off any excess.
- Preheat a large stainless-steel or cast iron frying pan over medium-high heat and add a drizzle of cooking oil. Once the pan is extra hot, add in 4 to 5 short ribs and brown them all over for 8 to 10 minutes, ensuring that all sides are well browned. Remove them onto a tray, clean the frying pan and then fry the second batch. Watch my video recipe to see how it's done!
- Next, preheat a braising pan over medium heat and add the butter. To the melted butter, add the mushrooms and onion and sauté them for 4 to 6 minutes, until tender. Next, add in the minced garlic and cook for an additional minute. Season the mixture with salt, pepper and fresh herbs. Add in the wine and tomato paste and whisk everything together. Cook this mixture for a few minutes before adding the beef broth.
- Bring the sauce up to a simmer over medium-high heat and then return the short ribs to the pan, placing the ribs with the meat side facing down. Allow the sauce to come up to a simmer again, then cover the braising pan with a tight-fitting lid and reduce the temperature to low.
- Braise the beef short ribs for 3 to 3 ½ or even 4 hours, until the meat is extra tender and falls of the bone naturally. If the braising sauce reduces too much, add an additional ½ cup to 1 cup beef broth, as needed. Once the ribs are done, remove the pan from the heat and gently place the short ribs to one side of the pan. Tilt the pan slightly and use a large spoon to skim off the fat that has risen to the surface into a measuring cup. Allow this fat to cool, then dispose of it in a waste container.
- When the short ribs have approximately 30 minutes of cooking time left, prepare my Creamy Butter Mashed Potatoes recipe.
- For serving, place 1 large or 2 small ribs onto each plate, over a bed of mashed potatoes. Pour extra sauce over each rib and garnish with fresh thyme leaves.
- Alternative cooking methods: a. Pressure Cooker: brown the short ribs first, then prepare the sauce in the pressure cooker and add the ribs. Cook on the 'High' Pressure setting for 60 to 70 minutes with Natural Release 15 minutes, or use the machine setting for 'short ribs'.b. Slow Cooker: prepare the recipe as written and place the sauce and ribs into the cooker. Cover and cook on the 'high' setting for 10 to 12 hours. Add an additional ½ cup to 1 cup beef broth halfway through, if needed.

- Place the skinless, bone-in chicken thighs in a 4-quart (or larger) crock pot.
- Cook bacon ~ drain well ~ crumble bacon over chicken in crock pot.
- IF YOU HAVE THE TIME, cook onion, over medium heat, in 2 tablespoons reserved bacon fat, stirring, until softened, 3 to 6 minutes. Add garlic, thyme, fennel seeds, pepper and bay leaf and cook, stirring, for 1 minute. Add wine, bring to a boil and boil for 2 minutes, scraping up any browned bits. Add tomatoes and their juice and salt; stir well.
- Pour the tomato-wine mixture over chicken.
- IF YOU DON'T HAVE THE TIME, place the following into crock pot over the chicken: crumbled bacon, sliced onion, garlic, thyme, fennel seeds, pepper, bay leaf, wine, tomatoes and their juice, and salt!
- Cover and cook until the chicken is very tender, about 3 hours on High, or 6 hours on Low. Remove the bay leaf.

- Heat oil in a Dutch oven over high heat. Add beef brisket and salt. Cook and stir until browned.

BRAISED BEEF RAGU
Slow cooked, beef ragu in a robust tomato sauce. Great Sunday Supper. Serve with pasta, red wine and bakery bread.

- Bring the beef to room temperature then cut it into 4 pieces. Pat it dry with paper towels, then generously season it on all sides with salt and pepper (I used a good tablespoon of salt).
- Add the olive oil and a tablespoon of butter to a Dutch oven or large, oven-safe pot over medium high heat and once it's hot, add the beef searing on all sides and ends then transfer the beef to a plate.
- Add the onion, celery, carrot, garlic, rosemary and sage. Reduce the heat to medium-low and saute 5 minutes then add the tomato paste and continue cooking 2 more minutes.
- Pour in the wine scraping the bottom to get all the brown bits off and cook 2-3 minutes on medium heat stirring occasionally or until the wine starts to reduce, then fold in the crushed tomatoes and beef stock
- Return beef and their juices to pot, turning them over in the sauce then cover bake at 325 degrees for 2 - 2 1/2 hours, stirring at the 1 hour point and checking for doneness at 2 hours. You want the beef to be able to shred easily, but before it becomes mushy.
- Remove the pot from the oven and take the beef out of the pot for shredding. Remove the carrots, celery and herbs then continue cooking the sauce 15 more minutes (stovetop) uncovered allowing the sauce to reduce and thicken more while you shred the beef.
- Taste the sauce and adjust for salt and pepper.NOTE: Some canned tomatoes aren't as sweet as others. If your sauce isn't as sweet as you'd like, add brown sugar ½ teaspoon at a time, combining thoroughly and tasting after each ½ teaspoon.
- Using 2 forks shred the beef (I like to leave about 1/3 of it in a bit larger pieces) then add the shredded beef to the sauce along with the other tablespoon of butter and chopped parsley.
- Serve with pappardelle or gnocchi cooked according to package directions along with fresh bread or salad and fresh parmesan cheese.
SLOW BRAISED LAMB SHANKS
Slow braised lamb shanks in a delicious, rich red wine sauce is the kind of showstopping comfort food cravings are made of.

- Pre-heat the oven to 160ºC/320ºF.
- Season the lamb shanks generously with salt and pepper. Brown the lamb shanks in a large, deep oven-proof pot/pan until well-browned on both sides. Remove from the pan and set aside.
- In the same pan, fry the onion, carrot, celery and garlic until soft and fragrant. Add the herbs and tomato paste and cook for 30 seconds before adding the red wine and stock. Allow to come to a simmer then add the lamb shanks back into the sauce.
- Cover with a lid and place in the oven. Allow to braise slowly for 2-3 hours until the lamb is soft and succulent. Check on the lamb shanks half-way through cooking and add more stock if necessary.
- Remove from the oven and serve.

BRAISED TOMATOES

- Preheat oven to 200 degrees F.
- Place the tomatoes, cut side up, on a cookie sheet. Combine the remaining ingredients, except the oil, in a small bowl. Rub the tomatoes with a little oil and top each tomato with a generous amount the bread crumb and herb mixture. Season with salt and pepper and bake for 10 minutes.
SLOW BRAISED BEEF SHORT RIBS WITH CHEESY MASH

- Pre-heat the oven to 160ºC/320ºF.
- Season the short ribs generously. In a large, oven-proof lidded pot, heat a splash of olive oil then sear the beef ribs until well-browned on all sides.
- Remove from the pot and set aside. Add the onions, carrots and celery and cook until soft and translucent.
- Add the garlic and herbs then cook for another 30 seconds before adding the flour.
- Stir to coat the vegetables in the flour then add the wine and stock. Allow to come to a simmer then add the tomatoes and beef short ribs back to the pot. Season well then cover and place in the oven. Allow to braise for 2-3 hours or until the ribs are soft. Add the mushrooms and braise for another 20 minutes. Adjust seasoning and serve.
- To make the cheesy mashed potatoes, Cook the potatoes in a large pot of salted water until they can easily be pierced with a sharp knife.
- Mash the potatoes with the butter and milk then add the cheese and season to taste.
- Serve cheesy mash with braised short ribs.

- Preheat oven to 275F.
- In a large dutch over, heat olive oil over medium-high heat. Season the chuck roast with salt and pepper and brown on all sides, about 8-10 minutes. Remove from heat and set aside.
- Add garlic, onion, baby carrots, and celery and allow to brown, about 6-8 minutes. Add wine and tomato paste. Use a wooden spoon to mix together and scrape any browned pieces stuck to the pan. - Sprinkle pepper on all sides of beef.
- Heat oil in a wide nonstick frying pan over medium-high heat; add beef and brown well on all sides.

SLOW-BRAISED TOMATOES

- Preheat oven to 250°F.
- Cook onion and garlic in 2 tablespoons oil in a 12-inch heavy skillet over moderate heat, stirring occasionally, until softened, 5 to 7 minutes. Remove from heat and stir in basil and red pepper flakes.
- Toss tomatoes with sugar and salt in a bowl. Arrange tomatoes, cut sides down, in a roasting or baking pan (13- by 9-inch). SLOW BRAISED TOMATOES
Steps:
- Preheat oven to 250 degrees F.
- Heat 1/4 cup olive oil in a large saute pan over medium heat. Add the onion and garlic and cook, stirring occasionally, until tender, about 5 minutes. Remove from the heat, add the basil leaves and red pepper flakes, and stir well.
- If using plum tomatoes, cut them lengthwise in half. Toss the tomatoes with the sugar and salt.
- Place the tomatoes cut side down in a roasting pan that will hold them in a single layer. (If you don't have a pan large enough, use an additional roasting pan and more olive oil.) Spoon the onion mixture over the potatoes. Add enough olive oil to come halfway up the tomatoes, about 1/2 cup.
- Roast until the tomatoes are tender and falling apart, about 3 hours (about 1 hour for cherry tomatoes). Stir once, gently, during the roasting. Let cool; then refrigerate, covered, in their oil.
TOMATO BRAISED SICILIAN PORK CHOPS

- Preheat the oven to 325 F
- Season the pork chops on each side with coarse sea salt and cracked black pepper. Add as much or little pepper as you like, but I always advise going a little heavier than you think on the salt because it never seems to be enough when it's cooked.
- Add 2 tablespoons of olive oil to a large ovenproof skillet over medium-high heat. Add the pork chops and sear on each side for 2 minutes.
- Transfer the pork chops to a tray while you start the tomato sauce.
- Add the chopped onions and garlic to the large ovenproof skillet over medium heat and saute for 1 minute or until fragrant. *add more olive oil if needed
- Add the hand-crushed tomatoes and half the basil to the pan and bring the sauce to a light boil.
- Add the pork chops back to the pan. The tomato should come close to covering the pork chops. It's okay if it does cover them.
- Cover the pan tightly with foil and bake for 2 hours and 15 minutes at 325 degrees.
- Reseason the sauce as needed and add the remainder of the basil to the sauce.*If the sauce is too thick add a little water. If the sauce is not thick enough you can let it simmer for another 20-30 minutes on the stovetop or back in the oven.
- Remove the finished pork chops from the pan and serve with pasta, rice or potatoes. Save the extra sauce, it's amazing!

- In a large pan or skillet, fry the bacon over medium heat for about 4 minutes until crisp. Drain on paper towels and crumble when the bacon is cool enough to handle.

- Heat olive oil over medium-high heat in a big pan with sides. When its hot, sear the chicken on both sides till it is nicely browned and remove from the pan and set aside. It should take about 3 or 4 mins per side.
- Add the onion to the pan and saute for a few mins. Add the garlic and 1 min later, add the wine to de-glaze the pan. Scrape up any bits of the chicken that have been stuck to the pan. Add the tomatoes to the pan and saute for a few mins.
