1 lb beef liver
1 cup milk
3 tablespoons flour
1/2 teaspoon salt
4 tablespoons oil or 4 tablespoons bacon grease
1 onion
2 cups beef broth
2 tablespoons lemon juice
1 tablespoon sugar
1/4 cup sour cream

Steps:

  • Cut liver into 1 in strips.
  • Soak in milk for one hour.
  • Remove from milk and dredge in flour/salt mixture.
  • Saute in hot oil until browned on all sides.
  • Remove and set aside.
  • Brown onions in same pan.
  • Remove onions and set aside on top of liver.
  • Add beef broth, lemon juice and sugar to hot pan and deglaze.
  • Place liver and onion back into pan and cook for 5 minutes.
  • Turn off heat and add sour cream.
  • Serve with parsley whipped potatoes and your favorite green vegetable.

A very inexpensive and healthy main dish. Even people who are not fond of liver will eat it cooked this way. Especially good when sweet Vidalia onions are in season. We typically serve with macaroni and cheese and spinach for added iron.

seasoning salt
pepper
3 tablespoons vegetable oil
1 lb beef liver, sliced
2 onions, thinly sliced
2 beef bouillon cubes
1 cup water, hot

Steps:

  • Dredge sliced liver in seasoned flour.
  • Brown liver on both sides in oiled skillet over medium high heat.
  • Place onions on top of liver in skillet.
  • Dissolve bouillon cubes in hot water, pour on top of liver and onions.
  • Cover and simmer on low until onions are tender and broth forms a thin gravy.

This recipe comes from a little book called ABC Jiffy Cookery. I've had it for over 50 years. I haven't tried any of the recipes yet. I'm putting tyhem here so I can find them easier. Hopefully, I will be able to make some of them after changing some of the ingredients (such as shortening to fry) and see how they turn out.

1 1/2 lbs calf liver
1 cup onion, finely chopped
1/4 cup shortening
1 tablespoon paprika
1 tablespoon tomato paste
1/2 teaspoon salt

Steps:

  • Slice liver in small, thin pieces. Brown the onions in shortening. Stir in the paprika and tomato paste. Add the liver. Cover and simmer over a low flame for 15 minutes, or until the liver is done. Add salt just before serving.

I love liver. This is an especially nice way to make it with lots of contrasts in flavours and textures. Serve with oven-roasted broccoli and cauliflower.

3 tablespoons raisins
2 tablespoons marsala wine
3/4 lb frozen pearl onions
1/4 cup butter
1 1/2 teaspoons sugar
flour, seasoned with
salt and pepper (for dredging)
1 1/2 lbs calf liver, sliced thin
2 tablespoons olive oil
2 tablespoons pine nuts, toasted
1 cup beef broth

Steps:

  • In a small bowl let the raisins steep in the Marsala for 1 hour.
  • In a saucepan, combine the onions, 2 tblsps of the butter, sugar and salt and pepper to taste and add enough water to just cover the onions.
  • Bring to a boil over moderate-high heat and boil 10 minutes, or until water is evaporated.
  • Saute the onions, shaking the pan, for 5 minutes, or until golden-brown.
  • In a shallow dish, dredge the liver, patted dry, in the seasoned flour, shaking off excess.
  • In a skillet, heat the remaining 2 tblsps butter and the oil over moderate-high heat until hot and sauté the liver in batches, turning it, for 3 minutes, or until browned outside and pink within.
  • Transfer liver with slotted spatula and keep warm, covered.
  • Add the raisin mixture and stock to skillet and reduce over moderate-high heat, stirring, until thickened slightly.
  • Add the onions and salt and pepper to taste.
  • Nap the liver with the sauce and sprinkle with pine nuts.

1/2 cup virgin olive oil
2 large onions, thinly sliced
1/4 lb thinly sliced pancetta
1 cup red wine vinegar
1/2 cup sugar
1 cup dry red wine
12 baby turnips, with tops halved
1 lb calf liver, cut into 1/4-inch thick slices
2 cups Wondra Flour, seasoned with salt and pepper
1/2 cup dry white wine
1/4 cup balsamic vinegar
1/4 cup finely chopped flat leaf parsley

Steps:

  • Preheat the oven to 400°F.
  • In a large skillet, heat 1/4 cup of the olive oil over medium heat.
  • Add the onions and cook slowly until caramelized.
  • Use a slotted spoon and remove to a bowl.
  • Place the pancetta on a baking sheet and cook in the oven until crisp, 12 to 15 minutes.
  • Transfer to paper towels to drain.
  • Combine the vinegar, sugar and wine in a 6-quart saucepan and bring to a boil.
  • Add the turnips and cook for 5 minutes, or until tender.
  • Remove the turnips and drain.
  • In a clean skillet, heat the remaining 1/4 cup of olive oil.
  • Dredge the liver in the seasoned flour, and add half of the slices to the skillet.
  • Cook the liver, undisturbed, over moderately high heat until dark brown, 3 to 4 minutes.
  • Transfer to a platter.
  • Add the balsamic vinegar and caramelized onions to the skillet and bring to a boil, then reduce the heat and simmer for 3 minutes.
  • Return the liver to the skillet and cook for a minute, then add the parsley.
  • Transfer the liver and sauce to a platter, top with the pancetta and turnip halves and serve.
  • Serve with brown rice and biscuits.

1 lb calf's liver (1/2 inch thick), cut into 4 pieces
1 cup whole milk
8 bacon slices, halved crosswise
3 medium onions, halved lengthwise, then cut lengthwise into 1/4-inch slices
1/2 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Soak liver in milk in a bowl 20 minutes.
  • While liver is soaking, cook bacon in a 12-inch nonstick skillet over moderate heat, turning over occasionally, until crisp. Transfer bacon to paper towels to drain and reserve 2 1/2 tablespoons fat in skillet, transferring remaining fat to a small bowl.
  • Cook onions with salt and pepper to taste in fat in skillet over moderate heat, stirring frequently, until golden brown, 12 to 15 minutes. Transfer onions to a bowl and add bacon. Keep warm, covered.
  • Pat liver dry and discard milk. Stir together flour, salt, and pepper on a sheet of wax paper and dredge liver in flour mixture, shaking off excess.
  • Add 1 1/2 tablespoons reserved bacon fat to skillet and heat over moderately high heat until hot but not smoking, then sauté liver, turning over once, until browned but still pink inside, about 4 minutes total. Serve liver topped with onions and bacon.
