2 tb Honey divided
1/2 ts Ground cinnamon
2 ts Baking Powder
1/2 c cranberries Coarsely chopped
1 c Uncooked rolled oats
1/2 ts Salt
2 tb Margarine
3/4 c Unsweetened Apple Sauce
1/2 c apple Peeled; chopped
1/4 c Skim milk
2 c All-purpose flour
1/3 c Sugar
1/2 ts Baking soda

Steps:

  • Preheat oven to 425F. Spray baking sheet with nonstick cooking spray. In large bowl, combine flour, oats, sugar, baking powder, salt, baking soda, and cinnamon. Add 1/2 cup of apple sauce and margarine; cut in with pastry blender or fork until mixture resembles coarse crumbs. Stir in cranberries and apple. In small bowl, combine milk and 1/4 cup honey. Add milk mixture to flour mixture; stir together until dough forms a ball. Turn out dough onto well-floured surface; knead 10 to 12 times. Pat dough into 8 inch circle. Place on prepared baking sheet. Use tip of knife to score dough into 12 wedges. In another small bowl, combine remaining 1/4 cup apple sauce and 2 tablespoons honey. Brush mixture over top of dough. Bake 12 to 15 minutes or until lightly browned. Immediately remove from baking sheet; cool on wire rack 10 minutes. Serve warm or cool completely. Cut into 12 wedges. 3/4 cup unsweetened applesauce, divided
2 tablespoons butter
1/2 cup coarsely chopped cranberries
1/2 cup peeled chopped apple
1/4 cup skim milk
1/4 cup honey, plus
2 teaspoons honey, divided

Steps:

  • Combine first seven ingredients (flour through cinnamon) in large bowl.
  • Add ½ cups applesauce and butter; cut in with pastry blender until mixture resembles coarse crumbs.
  • Stir in cranberries and apple.
  • In small bowl combine milk and ¼ cups honey; add to flour mixture and stir until dough forms ball.
  • Knead dough 10-12 times on floured surface; pat into 8-inch circle and place on sprayed baking sheet.
  • Use sharp knife to cut dough into 12 wedges, and separate wedges slightly.
  • Combine remaining applesauce and honey, and brush over top of dough.
  • Bake 12-15 minutes at 425 degrees, or until lightly browned; remove from baking sheet and cool on wire rack.

1 1/3 cups old-fashioned rolled oats, plus more for topping
1/4 cup plus 2 tablespoons light-brown sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon freshly grated nutmeg
2 teaspoons baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1 1/2 sticks cold unsalted butter, cut into pieces
1 1/2 cups diced Granny Smith apple (2 apples cut into generous 1/4-inch cubes)
2/3 cup cold buttermilk, plus more for brushing
Raw turbinado sugar, for sprinkling

Steps:

  • Preheat oven to 400 degrees. Whisk together flour, oats, brown sugar, cinnamon, nutmeg, baking powder, baking soda, and salt. Cut in butter with a pastry blender or rub in with your fingers. (The largest pieces should be the size of small peas.) With your fingertips, flatten butter pieces into small disks. Add apples and buttermilk, stirring until dough just comes together.
  • Turn out dough onto a lightly floured work surface. Pat dough into a 6-by-8-inch rectangle, and cut into twelve 2-by-2-inch squares with a floured knife. This is one of my standard weekend breakfast recipes. It is basically the recipe printed in 1997 version of the Joy of Cooking.

1 1/2 cups all-purpose flour
1/4 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 1/4 cups rolled oats
1/2 cup dried cranberries (or raisins)
1 large egg
10 tablespoons unsalted butter (melted)
1/3 cup milk

Steps:

  • Preheat the oven to 450°F (230°C).
  • Whisk together the flour, sugar, baking powder and salt. Stir in the oatmeal and cranberries. You may need to use your fingers to be sure the cranberries are all separated.
  • Whisk together the egg, butter and milk then add the mixture to the dry ingredients. Mix together just until the dry ingredients are moistened. The dough will be sticky.
  • Transfer the dough onto an ungreased baking sheet and pat into a circle about 3/4 inches (2 cm) thick. Sprinkle liberally with sugar and score the top into eight wedges.
  • Bake on a rack in the middle of the oven for about 12 minutes until lightly browned.

1/2 cup whole wheat flour
1/2 cup sugar
2 teaspoons baking powder
1 teaspoon baking soda

2 cups quick-cooking oats
1 cup dried blueberries or raisins
1 cup plain yogurt
3 tablespoons fat-free milk, divided
Coarse sugar

Steps:

  • Preheat oven to 400°. In a large bowl, whisk the first six ingredients. Cut in butter until mixture resembles coarse crumbs. Stir in oats and blueberries. In another bowl, whisk yogurt and 1 tablespoon milk until blended; stir into crumb mixture just until moistened., Turn onto a lightly floured surface; knead gently 10 times. Divide dough in half; pat each into a 7-in. circle. Cut each into eight wedges. Place wedges on a baking sheet coated with cooking spray. Brush tops with remaining milk. Sprinkle with coarse sugar., Bake 13-15 minutes or until golden brown. Serve warm.

3/4 teaspoon baking soda

1/3 cup sugar or 1/3 cup Splenda sugar substitute
3/4 cup unsalted butter, cold, cut into bits
1 1/3 cups old fashioned oats
1/2 cup dried currants, raisins or 1/2 cup dried cranberries
1/2 cup milk (I use buttermilk) or 1/2 cup buttermilk (I use buttermilk)
1 large egg, lightly beaten
1 cup apple butter (served with)

Steps:

  • Preheat oven to 375 degrees.
  • Combine first 5 ingredients in a food processor or bowl.
  • Add butter and process until it resembles coarse meal.
  • Add oats, currants and buttermilk and stir mixture until dough just sticks together.
  • (DO NOT over mix) Transfer to a floured work surface and knead about 5 times.
  • Roll out dough to 1 inch thickness.
  • (in circle) cut into pie shaped pieces or cut with cookie cutter.
  • Arrange on a slightly greased baking sheet.
  • Gently brush scones with egg and bake 20 minutes or until golden.
  • Serve with Apple Butter.
  • Enjoy.

Steps:

  • Bake scones until puffed and brown and tester inserted into centers comes out clean, about 22 minutes. Serve warm.
