A favorite recipe that my family has been making for years that we received from a friend of the family. These are great for New Years Eve.

Steps:
- Combine wafer crumbs, finely chopped pecans, 1 cup confectioners' sugar and cocoa.
- Blend the bourbon and the corn syrup together. Add the crumb mixture and mix well. Shape into 1 inch balls and roll in confectioners' sugar. Refrigerate.

BOURBON BALLS
Steps:
- Sift the cocoa and 1 cup powdered sugar into a medium bowl. Combine the bourbon and corn syrup and add to the cocoa mixture. Stir in the crushed wafers and pecans, mixing until well blended.
- Shape the mixture into 3/4-inch balls; roll in powdered sugar. Cover and chill at least 20 minutes and up to 2 weeks.
BOURBON BALLS
Bourbon Balls function as the ultimate easy dessert for Southern cocktail parties, and they put a sweet, slightly boozy finish on any get-together. Think of them as an edible digestif. Crushed vanilla wafers hold all the chocolatey goodness together. Buy an 11-ounce box and remove two dozen wafers to save for another use, like Banana Pudding.

- Combine the crushed wafers and pecans in a large bowl. Place the chopped chocolate in a separate bowl.
- In a small saucepan, combine the cream, corn syrup, and cinnamon, place over medium heat, and bring to just a boil, stirring constantly. Immediately pour the mixture over the chopped chocolate and whisk to blend in the cream as the chocolate melts. Let cool for 1 to 2 minutes, then whisk in the bourbon.
- Pour the chocolate mixture over the crumb-nut mixture and stir well to combine. Place in the refrigerator to chill for 30 minutes. Form the mixture into balls with a small melon baller (about 2 teaspoons), roll in coatings if desired, and arrange on a parchment-lined baking sheet. Store in an airtight container in a cool place for up to 1 week.
BOURBON BALLS
Yum! These were a unanimous hit among the Kitchen Crew... even with those who wouldn't normally opt for Bourbon. I do suggest that you lessen the amount of alcohol a bit if you're not used to the flavor, as it does come through the chocolate quite prominently.

- 1. Thoroughly combine 1 crushed vanilla wafer crumbs, chopped pecans, 1 cup confectioners' sugar, and the cocoa.
- 2. In a separate bowl, blend the bourbon and corn syrup.
- 3. Stir this bourbon mixture into the dry mixture; blend well. Cover and chill for at least a few hours.
- 4. Sift about 1/2 to 1 cup of confectioners' sugar on a cookie sheet.
- 5. Shape small bits of the dough into balls and roll them in the confectioners'.
- 6. Store in refrigerator in tightly covered containers. Make these a few days in advance for best flavor, and roll in confectioners' sugar again before serving, if desired.
- 7. These can also be frozen for longer storage. Makes about 3 dozen bourbon balls.

- Preheat oven to 325 degrees F.
- Spread the pecans on a cookie sheet, and place in the oven for 3 minutes. For even toasting, turn the tray, front to back. Toss the nuts with a metal spatula and bake for another 3 minutes. You'll know they're done when they give off their fragrant aroma, and be sure to check them so they don't become overbaked or charred.
- In a food processor, chop the vanilla wafers into crumbs. Add the pecans and process just until they are finely chopped. In a medium bowl, mix together the crumb-pecan mixture, 1/4 cup of the cocoa, and 1/4 cup of the confectioners' sugar. Add the corn syrup and bourbon. Mix thoroughly. Sift the remaining 1/4 cup cocoa and 1/4 cup confectioners' sugar onto a large plate. Form the crumb mixture into 3/4-inch balls and roll them through the cocoa-sugar to coat. Store in a sealed container for up to 5 days. If necessary, touch them up with a light dusting of the remaining confectioners' sugar.

- Place a rack in the center of the oven and preheat the oven to 350 degrees F. Spread the pecans in a single layer. Bake until the pecans are toasted and crisp, about 8 to 10 minutes, stirring once halfway through. Immediate transfer to a cutting board to cool.
- In the bowl of a food processor fitted with a steel blade, pulse together the cookie crumbs (if you are starting with whole cookies, make the crumbs now then double-check to make sure you have 2 1/2 cups).
- Add the cooled nuts and salt. Continue to pulse, until the nuts are finely ground but not completely pulverized (you want them in small bits but for them to still have a little bit of texture).
- In a small bowl, whisk together the bourbon, powdered sugar, cocoa powder, and molasses until smooth.
- Add to the food processor bowl and pulse until just combined.
- Scoop the mixture into a bowl and give it a few stirs if the ingredients are not evenly combined. Press it into a mass. Let rest at room temperature for 1 hour to allow the crumbs to absorb some of the liquid.
- Arrange anything you'd like to roll the balls in a shallow dish (a low bowl both works well).
- Portion the dough by tablespoonfuls (I like to use a tablespoon scoop like this) and roll into 1-inch balls. Roll the balls in toppings of your choice, then transfer to a storage container (or enjoy IMMEDIATELY!).

I make these for Christmas presents, and for my husband when he gets the cravings for them. Everyone loves them and it's the first thing they ask me at Christmas. "Are you making the Bourbon Balls?" This is one of my biggest requests.

Steps:
- Mix the whole pound of sugar and butter together.
- Add Bourbon and pecan chips, then add extra powdered sugar to your mixture till you are able to roll into balls easily. I usually add up to an extra 1/2 pound, depends.
- I usually have to let them sit in the fridge for an hour before I roll them, that all depends on how much extra powdered sugar I add.
- Roll into balls. Put back in the fridge to harden 1 hour or until you get your chocolate melted.
- Melt Chocolate Chips and Parrifin wax in double boiler. Use milk chocolate or semi sweet chips, whatever your taste. Milk Chocolate can be very sweet. As for the wax, add enough wax to make the chocolate thin and coat easily. 1 package of Chips should coat all the bourbon balls.
- Dip balls in chocolate, let set up on wax paper.
- These get better with age. My husband says they are great after they've sat a week. They get stronger tasting as they sit.

BOURBON BALLS
This recipes comes from my aunt. These are wonderful cookies for the adults during the holidays! You can substitute other liqueurs for the bourbon, such as brandy, rum, or Kahlua (Kahlua balls are scrumptious)! You can also substitute walnuts for the pecans if you'd like.

- Finely crush vanilla sugar wafers in a food processor and measure out 3 cups worth.
- Finely crush 1 cup of whole pecans in a food processor.
- Mix wafers, nuts, powdered sugar, and cocoa.
- Stir in bourbon and corn syrup.
- Using a teaspoon to help gather mixture for each ball, shape mixture into 3/4" to 1" balls.
- Rolls balls in powdered sugar. I do this by dropping batches of the balls into a ziplock bag with a bit of powdered sugar in it. Refill some sugar into ziplock bag as needed.
- Refrigerate in tightly covered containers several days before serving (though they are very yummy right away!).
- Makes about 5 to 8 dozen balls.

- Cream butter and sugar. Add pecans, bourbon and vanilla extract mixing well with mixer. Chill this mixture in the freezer for 30 minutes. Remove from freezer and make into balls using about a teaspoon of mixture for each one. Place on wax paper on cookie sheet and put back in freezer for 30 more minutes.
- When 30 minutes are up, melt the chocolate chips about 2 minutes in the microwave. (The smaller the container or bowl you use to melt the chips the easier it is to dip the bourbon balls in the chocolate). Some people use a toothpick to hold the bourbon balls. It is easier for me to just drop them in the chocolate and use a wooden spoon to cover. Remove each bourbon ball and place on a clean piece of wax paper on cookie sheet. Add a pecan half on top. Place in refrigerator for at least 30 minutes until chocolate hardens. Store in refrigerator. Makes about 30 bourbon balls depending on the size you make them.
