BONNIE'S PIZZA PIE

BONNIE'S PIZZA PIE image

This is an easy way to prepare a quick pizza at home. Most of the ingredients you have right in your pantry. Add toppings of your choice, bake and dinner is served! Enjoy! This dish was inspired by Diana Rodman's Lumpy Pan Pizza recipe, and I give her full credit for it, because without her, this recipe would not have happened. Thank you, Diana! :D

Number Of Ingredients 10

1 - can (16.3 ounces grands refrigerated flaky biscuits.)
1 - cup plus 2 tablespoons barilla basil and tomato pasta sauce
1 - 16 ounce package grated mozzerella cheese
1 - package pepperoni slices (about 33 pieces)
1/4 - teaspoon garlic powder
1/8 - teaspoon basil
1/4 - teaspoon red pepper flakes
- pinch of oregano
3 - green onions sliced thin
1 - can mushroom pieces, drained

Steps:

  • THE BISCUITS: Open the biscuits (there will be 10 large flaky biscuits, and separate each biscuit. With cooking shears, cut each biscuit into 4 pieces, cut each of those 4 pieces in half, then cut those pieces in half. You will now have 16 pieces from one biscuit. Continue cutting each biscuit into 16 pieces until all the biscuits are cut. Set aside.
  • THE SAUCE: In a medium mixing bowl, add the sauce, garlic, basil, red pepper flakes and oregano. Add one cup of mozzerella cheese and combine with sauce. Add the biscuits to the sauce mixture and toss to mix well.
  • THE PIZZA: Spread the sauce and biscuit mixture in an ungreased, medium size pizza pan in an even layer. Add onions, mushrooms, and pepperoni slices. Add one cup of mozzerella cheese, sprinkle evenly over the pepperoni.
  • BAKE IT: Preheat the oven to 375 degrees, bake pizza 30 to 40 minutes, depending on preference of doneness. Serve with parmesan cheese and red pepper flakes if desired. Enjoy!

BROWNIE PIZZA

Time 1h25m

Yield 10 to 12 servings

Number Of Ingredients 13

Nonstick cooking spray, for the pan
2 1/2 cups chocolate hazelnut spread, such as Nutella
3 large eggs
1 heaping cup all-purpose flour
1/2 cup heavy cream
1/2 cup chocolate hazelnut spread, such as Nutella
1/2 cup semisweet chocolate chips
2 ounces white almond bark
Malt balls
Pieces of chocolate-toffee bars, such as Heath
Caramel-filled chocolates, such as Rolos
Candy-coated chocolates, such as M&M's
Sprinkles

Steps:

  • For the brownie base: Preheat the oven to 350 degrees F.
  • Lightly coat a round 12-inch pizza pan with cooking spray. Top with parchment paper and spray again with cooking spray.
  • Add the chocolate hazelnut spread and eggs to a bowl and mix until smooth. Fold in the flour until it is all mixed in. Pour the mixture into the center of the pizza pan and, using a spatula, spread to the edges of the pan in an even layer. (The dough will be quite thick.) Bake until the brownie is cooked through and a toothpick inserted in the center comes out clean, 20 to 25 minutes.
  • Meanwhile, make the hazelnut ganache: Heat the cream in a pan over a medium heat. Place the chocolate hazelnut spread and chocolate chips in a bowl. Pour the hot cream over and whisk until melted and smooth.
  • For the toppings: Put the almond bark in a microwave-proof bowl and microwave in short bursts of 30 seconds, stirring in between, until it is melted.
  • Remove the pizza base from the oven and allow to cool completely in the pan. Carefully slide a spatula under the brownie to loosen it from the parchment and slide onto a cake stand or serving platter.
  • Pour the ganache over and spread, leaving a 1/2-inch border. Decorate with the candy, then drizzle over the melted almond bark, spooning it back and forth in lines. Scatter over the sprinkles.

GRAMA BONNIE'S PIZZA CRUST

Grama Bonnie's Pizza Crust image

This is my absolute favorite pizza crust. My grandmother has been making it for as long as I can remember. She's Irish and a wonderful cook but my Italian grandfathers' hand is definitely in this crust! It's shorter than most and has a flaky, tender, nearly pastry like texture. To get the full benefit of its yumminess I suggest cooking your pizza on a throughly heated pizza stone. (The active prep time includes the rising time and the cooking time is after the pizza has been rolled out and topped)

Time 1h10m

Yield 2 pizzas

Number Of Ingredients 7

2 cups all-purpose flour
2 cups whole wheat pastry flour
1/2 teaspoon salt
1 (1/4 ounce) packet active dry yeast
1 teaspoon sugar
1 cup warm water
1/2 cup extra virgin olive oil

Steps:

  • Mix dry ingredients in a large bowl and set aside.
  • Combine the yeast and sugar in a small bowl and add warm water. Warm means hot enough that you can only hold your finger in it for about 2 or 3 seconds but not so hot that you have to jerk your hand away.
  • Allow the yeast and water to get bubbly, about 8 minutes.
  • Add the yeast/water/sugar mixture and the olive oil to the dry ingredients.
  • Gently mix with a wooden spoon and then switch to your hands. Dump the dough on a wooden board or counter top and knead until smooth and elastic (about 6-8 minutes). You may need to add more flour.
  • When kneaded place the dough in a lightly oiled bowl and cover with a towel. Set in a warm place and allow to rise until double (about 45minutes).
  • After the dough has risen gently punch it down, knead again and then divide into two equal pieces. Each piece is enough for an approximately 11inch pizza.
