Make your favorite steak seasoning at home. Perfect for grilling beef, chicken and pork, or for seasoning potatoes and vegetables.

2 tablespoons peppercorns
1 tablespoon paprika
1 tablespoon coarse salt
1 tablespoon dried garlic or granulated garlic
1 tablespoon dill seed
1 tablespoon red pepper flakes
1 tablespoon onion powder
2 teaspoons coriander seeds
2 teaspoons mustard seeds

Steps:

  • Combine all spices and grind with a mortar and pestle or spice grinder. Or, place the spices in a zip top bag and crush with a rolling pin or heavy skillet.
  • Store in an airtight container at room temperature.

4 tablespooons salt
1 tablespoon black pepper
1 tablespoon dehydrated onion
1/2 tablespoon dehydrated garlic
1/2 tablespoon crushed red pepper
1/2 tablespoon dried thyme
1/2 tablespoon dried rosemary
1/2 tablespoon dried fennel

Steps:

  • 1. Mix together and store in a shaker. Shake or rub 1 tablespoon seasoning onto 1 pound steaks, pork chops and hamburgers before grilling or broiling.

Why buy this classic steak rub when you can make it yourself? Inspired by the flavors of pastrami, this rub is good on more than just steaks-try rubbing it on chicken, salmon, or even broccoli before grilling or pan-roasting.

Yield Makes about 1/2 cup

Number Of Ingredients 7

2 tablespoons black peppercorns
1 tablespoon mustard seeds
2 teaspoons dill seeds
1 teaspoon coriander seeds
1 tablespoon plus 1 teaspoon coarse kosher salt
1 tablespoon plus 1 teaspoon dried minced garlic
1 teaspoon crushed red pepper flakes

Steps:

  • Cook peppercorns, mustard seeds, dill seeds, and coriander seeds in a small skillet over medium heat, stirring, until fragrant and beginning to pop, about 2 minutes. Transfer to a mortar and pestle and coarsely crush, or transfer to a sturdy resealable plastic bag and coarsely crush with the bottom of a heavy skillet. Add salt, garlic, and chile flakes and crush to combine.
  • Do Ahead
  • Spice rub can be made 1 month ahead. Store in an airtight container.

This is a recipe I litally threw together in a pinch to accompany burgers flavored with montreal steak seasoning. The fries turn out tender on the inside and crispy on the outside with the flavors of montreal steak seasoning. Please be warned, though, that these are lightly salty. DH and I enjoy a bit of saltiness, so that wasn't a problem for us.

4 white potatoes, medium, skins on, cut into 1/2-inch x 1/2-inch wide strips
2 tablespoons olive oil
1 tablespoon McCormick's Montreal Brand steak seasoning

Steps:

  • Preheat oven to 375°F.
  • Scrub potatoes and slice into 1/2" x 1/2" wide strips.
  • Place potatoes in a shallow roasting pan. Drizzle with olive oil and sprinkle with montreal seasoning. Then toss with hands to coat throughly.
  • Roast for 35-40 minutes or until potatoes are tender and lightly browned.

1 teaspoon garlic flakes

Steps:

  • Combine ingredients in a glass jar with an airtight lid and shake well to combine.
  • If seasonings are whole, process in a blender or food processor so that they're still large, but not whole.
