CHINESE PORK DUMPLINGS

Chinese Pork Dumplings image

When I was growing up, my family made dumplings together every Sunday morning. It's a wonderfully interactive way to start the day. Dumplings are economical and simple to make and they taste especially great with the family by your side.

Provided by Anita Lo

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 17

1/2 medium green cabbage, roughly chopped
salt
1/2 teaspoon grated ginger
1 large clove garlic, finely chopped
1/2 cup finely chopped scallions
1/2 cup chopped garlic chives (optional)
3 ounces peeled shrimp, deveined and chopped
1/2 pound ground pork
1/4 cup soy sauce
1/2 teaspoon toasted sesame oil
Freshly ground black pepper
1 package dumpling wrappers
2 tablespoons vegetable oil
1/4 cup soy sauce
3 tablespoons rice vinegar
1 teaspoon thinly sliced scallion white
1 pinch toasted sesame seeds

Steps:

  • The filling: Place the cabbage in a food processor, add 1/2 teaspoon salt, and pulse until finely chopped but not puréed. Wrap the chopped cabbage in a clean kitchen towel and squeeze to remove juices, then transfer to a large bowl. Add ginger, garlic, scallions, and, if desired, garlic chives. Add the shrimp and pork and season with 1/4 cup soy sauce, sesame oil, and salt and pepper. Mix together by hand.
  • Taste the filling by poaching or frying a small amount, and adjust seasonings to taste. To prepare the dipping sauce, combine soy sauce, rice vinegar, scallions, and toasted sesame seeds in a small bowl.
  • To wrap, place 1 tablespoon of filling into the center of a dumpling wrapper. Wet the wrapper's edges, then fold in half to form a taco-like shape. Make a pleat on the side facing you about 20 degrees from the apex of the half-circle and seal with your fingers to the back of the skin. Repeat on the other quarter, in mirror fashion, and seal the dumpling completely, trying to eliminate any air pockets. Repeat until all filling is used.
  • To pan fry, heat oil in a large, nonstick pan over high heat. Add the dumplings in one layer so that they do not overlap. Add water to come halfway up the dumplings, and cover the pan. Reduce the heat to medium-high and cook until all water is evaporated and the bottoms are browned and crispy, about 10 minutes. Alternatively, the dumplings can be steamed until cooked through, about 5 minutes in a steam basket.
  • Transfer the dumplings to a plate and serve with a dipping sauce.

BONNIE'S CHINESE PORK ROAST AND DUMPLINGS

BONNIE'S CHINESE PORK ROAST AND DUMPLINGS image

I was craving Chinese food, so I thought I would try my hand at making a pork roast with all my favorite Asian flavors. I also wanted to make it in the crockpot. I paired the roast with steamed white rice, vegetables and pork dumplings. It turned out really good, and I am happy to share this recipe with my JAP friends! ...

Provided by BonniE !

Categories     Roasts

Number Of Ingredients 16

1 1/2 to 2 pound lean pork roast, trim any fat
6 large carrots cut into chunks
1 large onion cut into thick slices
1 cup snow peas
1/2 cup soy sauce
1 can vegetable broth
1/2 teaspoon chinese 5 spice powder
1/2 teaspoon red pepper flakes
1/4 cup dark brown sugar
2 tablespoons minced garlic from jar
1 tablespoon grated ginger
2 tablespoons sesame oil
1 can drained mushrooms or fresh sliced
1/4 cup chopped cilantro
12 to 14 frozen dumplings (also called pot stickers)
1/4 cup chopped green onions (garnish)

Steps:

  • 1. Wash and prepare the carrots and onions and place in the bottom of the crockpot and pour one can of vegetable broth over the vegetables. Add grated ginger, cilantro and garlic to the vegetables. Add mushrooms to the vegetables if desired.
  • 2. Place the meat on top of the vegetables. You may brown the meat if you wish. I chose not to. Pour 1/2 cup of soy sauce over the meat. Sprinkle the top with 2 tablespoons sesame oil. Sprinkle the Chinese 5 spice powder and the red pepper flakes evenly over the top of the meat, then do the same with the brown sugar. The meat will not be covered with liquid. (Don't wash off the spices or sugar) Cook on high about 4 hours, and low 1 to 2 hours. Test with meat thermometer. Time will depend on your crockpot and size of the roast. You don't want to overcook the meat. You want it just done enough so it will be firm enough to slice, or it will fall apart. Add the snow peas in the last hour of cooking.
  • 3. Fry 14 frozen dumplings (or pot stickers) in a little olive oil and sesame oil until golden brown, add 2/3 cup of water and put the lid on to steam them according to package directions. Set aside.
  • 4. Remove the meat to a platter and slice it in thick slices.
  • 5. Push the vegetables to the side of the crockpot and carefully put the cooked dumplings in the juices. Handle them carefully so as not to tear them. Then add the sliced pork. Let the dumplings and meat rest in the juices about 10 minutes on low to warm up and absorb the flavors, then serve immediately. Serve the sliced pork with the dumplings, white rice and the vegetables from the crockpot. Garnish with chopped onions.
  • 6. Dinner is served! Enjoy!

CHINESE PORK DUMPLINGS

Chinese Pork Dumplings image

Provided by Allrecipes

Categories     Main Dish Recipes     Dumpling Recipes

Time 1h20m

Yield 5

Number Of Ingredients 15

½ cup soy sauce
1 tablespoon seasoned rice vinegar
1 tablespoon finely chopped Chinese chives
1 tablespoon sesame seeds
1 teaspoon chile-garlic sauce (such as Sriracha®)
1 pound ground pork
3 cloves garlic, minced
1 egg, beaten
2 tablespoons finely chopped Chinese chives
2 tablespoons soy sauce
1 ½ tablespoons sesame oil
1 tablespoon minced fresh ginger
50 dumpling wrappers
1 cup vegetable oil for frying
1 quart water, or more as needed

Steps:

  • Combine 1/2 cup soy sauce, rice vinegar, 1 tablespoon chives, sesame seeds, and chile sauce in a small bowl. Set aside.
  • Mix pork, garlic, egg, 2 tablespoons chives, soy sauce, sesame oil, and ginger in a large bowl until thoroughly combined. Place a dumpling wrapper on a lightly floured work surface and spoon about 1 tablespoon of the filling in the middle. CHINESE PORK DUMPLINGS (POT STICKERS)

Chinese Pork Dumplings (Pot Stickers) image

From: http://chinesefood.about.com/od/potstickers/r/potstickers.htm Loved these. Tasted like takeout Chinese dumplings from down the street. Great flavor, but could use some improvements.

Provided by KinMa

Categories     Asian

Time 50m

Yield 48 dumplings

Number Of Ingredients 13

2 cups all-purpose flour
1 cup boiling water
8 ounces Chinese cabbage (Napa cabbage)
3 teaspoons salt, divided
1 lb ground lean pork
1/4 cup finely chopped green onion, with tops
1 tablespoon white wine
1 teaspoon cornstarch
1 teaspoon sesame oil
1 dash white pepper
1/4 cup soy sauce
1 teaspoon sesame oil
2 -4 tablespoons vegetable oil

Steps:

  • Cut the cabbage across into thin strips. Mix with 2 teaspoons salt and set aside for 5 minutes. Squeeze out the excess moisture.
  • In a large bowl, mix the celery cabbage, pork, green onions, wine, cornstarch, the remaining 1 teaaspoon salt, 1 teaspoon sesame oil, and the white pepper.
  • **In a bowl, mix the flour and 1 cup boiling water until a soft dough forms. Knead the dough on a lightly flour surface about 5 minutes, or until smooth.
  • Divide the dough in half. Shape each half into a roll 12 inches long and cut each roll into 1/2-inch slices.
  • Roll 1 slice of dough into a 3-inch circle and place 1 tablespoon pork mixture in the center of the circle. Lift up the edges of the circle and pinch 5 pleats up to create a pouch to encase the mixture. Pinch the top together. Repeat with the remaining slices of dough and filling.
  • Heat a wok or nonstick skillet until very hot. Add 1 tablespoon vegetable oil, tilting the wok to coat the sides. If using a nonstick skillet, add 1/2 tablespoon vegetable oil. Place 12 dumplings in a single layer in the wok and fry 2 minutes, or until the bottoms are golden brown.
  • Add 1/2 cup water. Cover and cook 6 to 7 minutes, or until the water is absorbed. Repeat with the remaining dumplings.
  • To make a dipping sauce, in a small bowl, mix the soy sauce with 1 teaspoon sesame oil. Serve with the dumplings.
  • NOTE: The dough was VERY sticky. So I had to use a lot of flour on it when rolling it out. Just make sure you don't use too much. I also didn't have wine on hand, so didn't use it. I found that the meat inside was more like a meatball, and not saucy or mushy like I think it should have been (maybe because I didn't use the wine?). Also when cooking be very careful as they do seem to fall apart unless you make the pieces of dough thicker, and a tad larger. I only hope that by posting this here someone can come up with ideas on how to make the meat more mushy I've tried other recipes for the dumpling portion, and it just didn't taste as good.

  • Heat a pan with oil. Add chopped ginger, minced garlic, and green onions. Add salt and pepper. Fry for about one minute until softened. Set aside.
  • Remove the leaves from the Chinese celery and rinse well to clean. Chop the celery verrrry fine. Place in a separate bowl, add 1 teaspoon salt and stir. Let sit for about 20 minutes. After 20 minutes, squeeze the chopped celery with your hands so that most of the water drains out of it. Try to remove as much excess water as you can, so your dumplings are not soggy.
  • In a large bowl, add the pork and chopped celery. Mix for 5 minutes to create a smooth texture for the filling. This is best done with your hands. You could use plastic gloves if that grosses you out. The mixture should have a paste-like texture when it’s done.
  • Next, add the following seasonings to the pork mixture; from step one add the chopped ginger, minced garlic, and green onions mix. Then add 1 or 2 eggs (depending on the dryness of the mixture), sugar, light soy sauce, dark soy sauce, chicken base, cooking wine and possibly a little more salt if needed, after testing your cooked sample. Stir until everything is mixed well.

  • Line a large baking sheet with parchment paper. Spoon about 1 tablespoon of the filling into the center of 1 gyoza wrapper and, using your finger, moisten half of the edge with water. Moisten the top of one end with water, bring the other end over and pinch to bring together and create a rosebud shape. Place the dumpling on the parchment-lined baking sheet and keep covered with a clean kitchen towel while you assemble the rest. Repeat the process with the remaining filling and wrappers.
  • Line 2 large steamer baskets with cabbage leaves and set the dumplings on the cabbage. Set the basket in a pot of boiling water and steam until the wrappers turn transparent and the filling is firm, 8 to 10 minutes.
  • Meanwhile, make the dipping sauce In a small saucepan, simmer the stock over moderately high heat until reduced by half, about 2 minutes. Whisk in both vinegars and the ginger. Serve the warm dipping sauce with the dumplings.

  • In a large bowl, add pork, ginger, garlic, green onion, soy sauce, 1 ½ tbsp sesame oil, egg and cabbage. Stir until pork filling is well combined.
  • Fill a small bowl with water. Take 1½ tsp of filling into each dumpling wrapper. Dip your finger in a small bowl of water wet the edges of the wrapper. Then fold edges over to form a half-circle. Slightly pinch the edges until dumplings are well-sealed (see videos below for reference). Alternatively, you can also use this handy dumpling maker! Place dumpling on a lightly floured large baking pan. Repeat with the remaining wrappers and fillings.
  • Heat 1 tbsp of sesame oil into a large pan on medium heat. Depending on the size of your pan, add just enough dumplings to cover the surface without overcrowding. Make sure the flat side of the dumpling is facing down. Cook for 1-2 minutes, or until the bottom of the dumpling turns golden brown.
  • Very carefully, pour in 1/4 cup of water into the pan to steam. Keep in mind that the oil may spatter, so cover the pan with a lid immediately after pouring in water. Let steam for 3 minutes, or until water is fully absorbed.
