1 -100 lb shrimp, no matter the size of shrimp,cover with water so there is at least 1 to 2 inches of water covering s
1/4 cup cider vinegar
3 -4 tablespoons Old Bay Seasoning, to taste
spices, to own liking,if desired

Steps:

  • ONLY USE FOR BEST TASTE WILD CAUGHT SHRIMP NO FARM RAISED SHRIMP I don't care if you use cold, warm or hot water!
  • Start cooking shrimp.
  • The water may never come to a boil.
  • But constantly stir srhrimp.
  • Don't worry about the water boiling or time, it does not matter!
  • When you see 1 or 2 shrimp float!
  • drain immediately and have an ice bath waiting, to shock the shrimp and stop cooking process.
  • Drain well and chill 1 hour before serving!
  • If eating hot serve right after cooking.
  • If you follow this method you will only serve the best.
  • I have been following my recipe for over 20 years and it is fool proof.
  • I have never seen anyone use this recipe, BUT LET ME SAY THAT IF YOU TRY THIS, YOU WILL NEVER COOK IT ANY OTHER WAY!

BOILED HEAD-ON SHRIMP

1 dried habanero chili pepper
1 tablespoon whole black peppercorns
4 bay leaves
1 tablespoon kosher salt
5 tablespoons white-wine vinegar
2 pounds extra-large shrimp, preferablyTexas farm-raised, with heads and shells on
Lemon wedges and hot sauce for serving

Steps:

  • In a large kettle, combine the chili, peppercorns, bay leaves and salt with 1 gallon (16 cups) water. Bring to a boil over high heat. Lower the heat and simmer, uncovered, for 20 minutes.
  • Add the vinegar, raise the heat and bring to a rolling boil. Add the shrimp, turn off the heat and cover. Allow to sit, stirring occasionally, until the shrimp are just cooked through, about 5 minutes. Drain and serve the shrimp immediately, garnished with lemon wedges. Pass hot sauce on the side.

If you prefer to serve the entree without the shrimp heads, save them to make a flavorful broth for soups and sauces. Wrapped tightly, they will keep in the freezer for up to one month.

One 28-ounce can whole tomatoes
1/2 cup dry white wine
14 sprigs of fresh chervil, 8 reserved for garnish
1 garlic clove, smashed
Kosher salt and freshly ground black pepper
2 pounds head-on shrimp, submerged in cold water to clean (about 12)

Steps:

  • Place the tomatoes and their juice in a 3-quart pot and break them up with a fork. Add the wine, 6 sprigs of chervil, garlic, and 1 cup of water and bring to a boil. Reduce the heat and simmer 15 minutes.
  • Pour the mixture into a fine-mesh strainer and let sit for 10 minutes. Discard the tomato pulp. Season with salt and pepper. Return the broth to the pot and bring to a boil.
  • Add the shrimp, reduce the heat, and simmer for 2 to 3 minutes, or until the shrimp are pale pink and the tails curl.
  • Divide the shrimp among 4 shallow soup bowls. Ladle some of the broth into each bowl and garnish with the chervil.

  • Add wine to pan, simmer for 1-2 minutes or until liquid decreases by half. Add butter, garlic, salt and pepper. Stir and sauté for 1 minute. Add shrimp and lemons to pan. Toss until coated in butter mixture.
  • Transfer pan to oven and roast 15-20 minutes or until pink and cooked through. Toss twice during cook time. Broil on high the last 2-3 minutes for a little char (optional).
