STEVE'S BODACIOUS BARBECUE RIB SAUCE
This recipe makes a great semi-sweet sauce for smoked barbecue ribs. Serve this warm on the side along with your ribs or baste directly on the ribs during the last 30 minutes of cooking.

Steps:
- Melt the butter in a medium saucepan over medium heat. Stir in the onion and garlic and saute for 5 minutes. Add the tomatoes, reduce heat to medium low and simmer for 15 minutes. Then add the ketchup, mustard, brown sugar, honey, cayenne pepper, chili powder and Worcestershire sauce.
- Simmer for 60 more minutes, then transfer mixture to a blender or food processor and puree until smooth.

- 1. Place all ingredients in a saucepan and bring to a low boil.
- 2. Continue on a low simmer until it cooks down to the consistency you wish.
- 3. * chile honey (found in NM. I'm not sure you can find this other places, but it's wonderful if you can. substitute with the above listed heat alternatives, but do add a couple of tbsp of honey to bring up the sweetness if not using.)

- Whisk 1 cup mayonnaise, 2 tablespoons each cider vinegar and jarred horseradish, 2 teaspoons lemon juice, 1 teaspoon each spicy mustard and sugar and 1/2 teaspoon pepper. Season with salt.
BODACIOUS BBQ BABY BACK RIBS
These ribs always get raves! They are tender and moist, and the homemade BBQ sauce is scrumptious! These are very similar to the ribs that are served at Applebee's. I actually found this recipe in a magazine and have been hooked on these bodacious ribs ever since!

Steps:
- Cover ribs with water in a large saucepan.
- Bring to a boil, then lower heat, cover, and simmer for one hour, or until ribs are tender.
- Mix all ingrediants in saucepan and bring to a boil, lower heat, and simmer for 30 minutes, until sauce has slightly thickened (stir often).
- Preheat broiler.
- Line broiler pan with foil.
- Place ribs on foil, meat side down, and baste with sauce (reserving 1/2 of the sauce).
- Broil for 6 minutes, then turn ribs over.
- Baste with remaining sauce and broil for an additional 6 to 7 minutes (or until edges are slightly charred).
- Serve with BBQ beans and corn on the cob and your palette will be especially pleased!

STEVE'S BODACIOUS BARBECUE RIBS
These make real mouth-watering 'Pig-cicles'! They take a while to cook, and when you eat them, you'll have pork fat smeared from ear to ear! Mmm! Mmm! I like to smoke with hickory wood, but any of your favorite will suffice.

- In a medium bowl, stir together paprika, cayenne pepper, garlic powder, onion powder, salt, ground black pepper, cumin, brown sugar, cinnamon, cloves, and nutmeg. Apply liberally to the ribs. Place ribs in a large roasting pan, cover, and refrigerate overnight. Remove ribs from the refrigerator 1 hour before smoking.
- Prepare an outdoor smoker, bringing the temperature to 200 to 225 degrees F (95 to 110 degrees C).
- Smoke ribs for 6 to 8 hours, adding wood chips to maintain a steady smoke (approximately one handful every 30 to 45 minutes). Ribs are done when crispy outside and tender inside. Remove from smoker, and set aside for 15 to 20 minutes before serving.

BODACIOUS BBQ TURKEY
About 8 years ago, when injecting meats became popular, I made my turkey this way for Thanksgiving. I have never roasted a turkey since. It turns out so juicy, tender and delicious. The slight smoke flavor compared to a fully smoked turkey is just right in my opinion. Fully smoked turkeys can be a little overbearing when served...

- 1. Prepare BBQ grill with lots of charcoal or wood, your choice. Soak hickory chips in water. Mix all marinade ingredients in deep glass measuring cup or equivilent. Heat in microwave just until butter is melted. Set aside and prepare turkey.
- 2. Wash turkey inside and outide with cool water. With a very sharp serrated blade knife or as I use, a hack saw I use just for my turkeys...cut alongside beast bone all the way through. Then cut down both sides of backbone and cut it completely out. I cut the backbone in half and put it in a pot of cold water with neck to simmer for stock to make the gravy and dressing.
- 3. Pat turkey halves dry and lay each half on a double layer of heavy duty foil big enough to wrap completely around turkey half and securly close after injecting. Using an injector syringe, fill and inject turkey all over about every inch, front and back, keeping marinade stirred as you go. Repeat with other turkey half.
- 4. Season outside of turkey with more BBQ seasoning, seasoning salt, pepper & cayenne. Wrap the foil around turkey to cover completely and fold seams to secure. Spread coals so turkey cooks over indirect heat, add soaked hickory chips a little at a time during cooking process. Place turkey halves on grill and poke holes all over the foil to let the smoke seep in. Turn over every 20 minutes for 1 hour and 30-50 minutes.(depending on size of turkey) pull foil back so turkey will brown the last 30 minutes. Test with an instant read thermometer to read 160-165 degrees. Remove from grill and cover with foil again to rest for 15 minutes. Carve and enjoy.
- 5. Note: You can use the same injection liquid and smoke the turkey instead of BBQ'ing it. It will take about 7-8 hrs, depending on the size of the turkey. Last year I used Michael Simon from The Chew's method of spreading sausage (he used chorizo, I used Jimmy Dean sage sausage) under the breast skin. This added alot of flavor and kept the meat very moist.

- To make the sauce: in a saucepan, combine all the sauce ingredients and ½ cup water; mix well.
- Bring to a simmer over medium heat; cook uncovered, stirring occasionally, until about 2/3 cup remains (about 30 minutes); let cool to room temperature.
- Lightly brush both sides of the steaks with vegetable oil and season generously with salt and pepper.
- Grill the first side of the steaks directly over high heat for 6 minutes; turn the steaks over and cook the second side for 5 minutes; continue to cook the steaks to desired doneness.
- Remove steaks from the grill; season again with salt and pepper; let rest for 3-5 minutes.
- You can serve the steaks whole or cut the siroloin strips and tenderloins away from the bones, then cut the meat into ¼-inch thick slices.
- Serve warm with barbecue sauce.

The original recipe was made with salad dressing but this is much better. The idea of white BBQ sauce comes from the North Alabama region.

- Mix well and refrigerate 18-24 hours. Do not taste after mixing -- it is awful ... just wait.
- Serve as a dip with pulled pork or grilled chicken. Excellent as a dip for fresh vegetables or on a baked potato. Mix 1-2 tablespoons into eggs when beating them for an omelet. Can also be used as a marinade for chicken or fish. May be the best dip ever for any blackened fish.
