3 cups tomato juice
2 cans (10-1/2 ounces each) condensed beef consomme, undiluted
2 medium potatoes, peeled and cubed
2 celery ribs, thinly sliced
2 large carrots, grated
1 cup fresh or frozen peas
1 teaspoon sugar
1/4 cup uncooked long grain rice

Steps:

  • In a large saucepan, combine the beef mix, tomato juice, consomme, potatoes, celery, carrots, peas and sugar. Bring to a boil. Stir in rice. Reduce heat; cover and simmer for 20-25 minutes or until vegetables and rice are tender.

1-1/2 pounds beef stew meat, cut into 1/2-inch pieces
1 teaspoon salt, divided
1 teaspoon salt-free seasoning blend, divided
3/4 teaspoon pepper, divided
2 tablespoons olive oil, divided
4 large carrots, sliced
1 large onion, chopped
1 medium sweet red pepper, chopped
1 medium green pepper, chopped
2 garlic cloves, minced
1 cup Burgundy wine or additional reduced-sodium beef broth
4 cups reduced-sodium beef broth
1 can (14-1/2 ounces) diced tomatoes, undrained
2 tablespoons tomato paste
2 tablespoons Worcestershire sauce
1 bay leaf
4 medium potatoes (about 2 pounds), cut into 1/2-inch cubes

Steps:

  • Sprinkle beef with 1/2 teaspoon each salt, seasoning blend and pepper. In a Dutch oven, heat 1 tablespoon oil over medium heat. Brown beef in batches. Remove from pan., In same pan, heat remaining oil over medium heat. Add carrots, onion and peppers; cook and stir until carrots are crisp-tender. Add garlic; cook 1 minute longer., Add wine, stirring to loosen browned bits from pan. Stir in broth, tomatoes, tomato paste, Worcestershire sauce, bay leaf and remaining seasonings. Return beef to pan; bring to a boil. Reduce heat; simmer, covered, 2 hours., Add potatoes; cook 30-40 minutes longer or until beef and potatoes are tender. Skim fat and discard bay leaf.

2 carrots (thinly sliced)
2 leeks (thinly sliced)
2 parsnips (cut into 5mm cubes)
2 celery ribs (thinly sliced)
1 medium onion (thinly sliced)
1/4 medium swede (cut into 5mm cubes)
1 (400 g) can chopped tomatoes
1 garlic clove (crushed)
1 bay leaf
2 teaspoons salt
2 -3 pints vegetable stock
50 g small shell pasta (dry weight)
1 teaspoon dried oregano

Steps:

  • Place all the vegetables and chopped tomatoes in a very large pan. Add the garlic, bacy leaf, salt and vegetable stock. Bring to the boil and simmer for 1-1.5 hours, until the vegetables are tender.
  • 20 minutes before the end of the cooking time, add the pasta shapes and dried oregano.
  • When the soup is cooked, remove the bay leaf and discard. Season to taste and serve. (If a thick soup is preferred, place half the vegetalbes in a liquidiser and puree, then stir back into the remaining vegetables).

1/4 cup olive oil
2 Red Bliss potatoes, chopped
1 onion, chopped
1 stalk celery, chopped
1 leek, halved lengthwise and chopped (white part only)
1 turnip, chopped
1 carrot, chopped
1/4 cup chopped shallot
3 cloves garlic, minced
4 cups vegetable stock
bouquet garni
5 zucchini, chopped
2 cups plum tomatoes
1 summer squash, chopped
1 cup green beans, cut into 1 inch pieces
1/4 teaspoon red wine vinegar
fine sea salt
fresh ground black pepper

Steps:

  • Heat oil in a 3 quart soup pot over high heat until hot.
  • Add potaoes, onion, celery, leek, turnip, shallots, and garlic.
  • Stir the vegetabls around until they begin to cook but don't turn brown.
  • Add the Vegetable Stock and the Boquet Garni to the soup pot.
  • Bring to a boil.
  • Reduce heat to simmering and cook for 45 minutes.
  • Add the zucchini, tomatoes, summer squash, and green beans to soup pot.
  • Simmer 15 minutes more.
  • Stir in the vinegar.
  • Season to taste with salt and pepper.
  • Bouqet Garni: Bundle three sprigs fresh thyme, 3 sprigs fresh parsley, 1 bay leaf, and 1 tablespoon black peppercorns together in several thicknesses of cotton cheesecloth.
  • Tie with string.

2 (26-oz.) jars tomato, herbs, and spices pasta sauce
1 (14 1/2-oz.) can diced tomatoes with sweet onion
Garnish: chopped fresh basil

Steps:

  • Brown ground chuck and onion, in batches, in a large Dutch oven over medium-high, stirring 5 to 8 minutes or until meat crumbles and is no longer pink. Drain well, and return to Dutch oven. Stir in salt, black pepper, and beef broth; bring to a boil.
  • Stir in mixed vegetables and next 4 ingredients. Bring to a boil; cover, reduce heat, and simmer at least 20 minutes or until thoroughly heated.

2 tbsp cold-pressed rapeseed oil
1 medium onion , halved and sliced
2 garlic cloves , finely sliced
2 celery sticks , trimmed and thinly sliced
2medium carrots , cut into chunks
2 medium parsnips , cut into chunks
1 tbsp finely chopped thyme leaves
100g wholegrain rice
2medium leeks , sliced
½ small pack parsley , to garnish

Steps:

  • Heat the oil in a large non-stick pan and add the onion, garlic, celery, carrots, parsnips and thyme. Cover with a lid and cook gently for 15 mins, stirring occasionally, until the onions are softened and beginning to colour. Add the rice and pour in 1.2 litres cold water. Bring to the boil, then reduce the heat to a simmer and cook, uncovered, for 15 mins, stirring occasionally.
  • Season the soup with plenty of ground black pepper and salt to taste, then stir in the leeks. Return to a gentle simmer and cook for a further 5 mins or until the leeks have softened. Adjust the seasoning to taste and blitz half the soup with a stick blender, leaving the other half chunky, if you like. Top with the parsley and serve in deep bowls.
