4 slices beefsteak or heirloom tomatoes
2 teaspoons olive oil
Kosher salt
Freshly cracked black pepper
4 leaves fresh basil
2 eggs
1 tablespoon finely sliced chives
1/4 cup mayonnaise
2 slices boule or country bread (3/8 inch thick), toasted
6 slices crispy cooked smoked bacon
4 leaves gem lettuce

Steps:

Preheat the oven to 300 degrees F.
Season the tomato slices on a baking sheet with 1 teaspoon of the olive oil and some salt and pepper. Place a basil leaf on top of each slice and bake until the tomatoes are wilted, about 10 minutes.
Heat a large nonstick pan, add the remaining 1 teaspoon olive oil and place 2 ring molds in the pan. Crack the eggs into the molds, reduce the heat to low and cover. Cook over low heat until the whites have cooked through, about 4 minutes. Season with salt and pepper and top with chives.
Spread the mayonnaise on each slice of toast. Divide the bacon, lettuce and tomato between the bread slices. Place an egg on top of each sandwich and serve.

Ingredients

6 eggs (at room temperature)
8 slices bacon (thin, rind removed)
12 butter lettuce leaves (torn)
3 egg tomatoes (thickly sliced, they specified roma's)
1 cup crouton (shop bought o'kay)
1/3 cup light sour cream
1/4 cup buttermilk
3 teaspoons coarse grain mustard
3 green onions (finely chopped)

Steps:

Place eggs in a saucepan, cover with cold water and then bring to the boil over moderate heat, gently stirring (the helps centre the yolks) and boil, with stirring, for 8 minutes and then drain and then refresh under cold water and then peel and cut eggs in half lengthwise.
Meanwhile, heat a frying pan over moderately high heat and cook bacon for 3 minutes each side or until brown and cooked and then drain on paper towel and once drained of fat chop coarsely.
Arrange lettuce on serving plates and top with bacon, tomato, egg and croutons.
Whisk sour cream, buttermilk, 1 tablespoon water, mustard and green onion in a bowl and then drizzle dressing over salad and serve.

4 tablespoons mayonnaise
3 teaspoons grainy mustard
8 slices sourdough bread
butter (optional)
2 large tomatoes
salt and pepper
lettuce leaf
4 eggs, fried in bacon fa

Steps:

Fry bacon till crisp.
Combine mayonnaise and mustard.
Toast bread lightly then butter if so desired.
Spread toast with mayo/mustard mix.
Top with sliced tomatoes, season then add lettuce leaves.
Fry eggs in bacon fat and place on sandwich then season.
Cover with second slice of toast.
Serve immediately.

Add bacon to skillet and cook over medium heat until crispy, about 5-7 minutes. Remove to a plate lined with paper towels to allow to drain.
Keep bacon grease in skillet. Crack egg into bacon grease to fry for about 1-2 minutes on each side on medium-high heat. I like my eggs over easy (runny yolk). If you don't, add an extra minute to each side to allow the yolk to harden. The egg should flip easily with a spatula, that's how you know it's time to flip!
Layer bread, bacon, tomato, lettuce, egg and any optional toppings. Serve while egg is still warm.
