2-1/4 teaspoons baking powder
1/2 teaspoon salt
1-2/3 cups milk
3 eggs, separated
1/4 cup butter, melted
2/3 cup fresh or frozen blueberries
SAUCE:
1-1/2 cups fresh or frozen blueberries
1/2 cup orange juice, divided
3 tablespoons honey
1 tablespoon cornstarch

Steps:

  • In a large bowl, combine the flour, baking powder and salt. Whisk the milk, egg yolks and butter; stir into dry ingredients just until moistened. Fold in blueberries., In a small bowl, beat egg whites until stiff peaks form; fold into batter., Bake in a preheated waffle iron according to manufacturer's directions until golden brown., Meanwhile, in a small saucepan, combine the blueberries, 1/4 cup orange juice and honey. Bring to a boil. Combine cornstarch and remaining orange juice until smooth; gradually stir into berry mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve warm with waffles.

1 1/2 pints fresh blueberries, rinsed
1 cup vanilla sugar
1 tablespoon fresh lemon juice

Steps:

  • Combine the blueberries and vanilla sugar in a large heavy saucepan. Add 1 cup water and the lemon juice and bring to a boil over high heat, stirring occasionally. Reduce the heat and simmer for 15 minutes, or until the mixture begins to thicken.
  • Remove from the heat and strain through a fine sieve. Cool to room temperature, cover and refrigerate.

1 cup part-skim ricotta
1 tablespoon confectioners' sugar
1 teaspoon grated lemon zest, plus more for garnish
1 teaspoon fresh lemon juice
1 pint fresh blueberries, or 1 pound frozen blueberries, thawed
2 tablespoons honey or pure maple syrup
1 teaspoon fresh lemon juice
1 cup spelt flour
1 cup whole-wheat flour
1 tablespoon granulated sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/8 teaspoon fine sea salt
2 cups low-fat buttermilk
5 tablespoons unsalted butter, melted
2 large eggs
1 teaspoon finely grated lemon zest
Nonstick cooking spray

Steps:

  • Make the ricotta cream: In a small bowl, combine the ricotta, confectioners' sugar, lemon zest and lemon juice and whisk until light and fluffy. Cover and refrigerate for at least 30 minutes and up to 2 hours to allow the flavors to meld.
  • Make the compote: In a small saucepan, combine the blueberries, 1/4 cup water and the honey and bring to a simmer over medium heat. Cook until the mixture thickens, about 7 minutes. Transfer to a bowl, add the lemon juice and let cool at least slightly.
  • Make the waffles: Preheat the oven to 275 degrees F; set a rack on a baking sheet and put in the oven.
  • In a medium bowl, whisk together the flours, granulated sugar, baking powder, baking soda and salt. In a large bowl, whisk together the buttermilk, butter, eggs and lemon zest. Add the flour mixture and mix just until the batter is combined. Let rest for 15 minutes.
  • Heat a waffle iron according to the manufacturer's instructions; coat with nonstick spray. Pour the batter onto the iron (the amount depends on the size of the iron), leaving a 1/2-inch border on all sides. Close the iron and cook until the waffle is golden brown and crisp, 3 to 5 minutes. Transfer to the rack in the oven to keep warm; repeat with the remaining batter.
  • To serve, top the waffles with the blueberry compote and ricotta cream. Garnish with lemon zest.

1 2/3 cups milk

Steps:

  • Heat waffle iron.
  • Separate eggs into one bowl for whites, one for yolks.
  • To start the batter: Whisk milk into the egg yolks, then add the flour, baking powder and the salt. Whisk them together then add the butter and whisk until batter is just smooth then stop. Set aside to rest while completing the next steps.
  • Put the 1 1/2 cup blueberries in a saucepan with the honey and 1/4 cup of the orange juice.
  • Mix the 1 tbs of cornstarch in the other 1/4 cup of orange juice.
  • Bring the sauce to a boil, then add the orange juice/cornstarch while whisking constantly. Continue to whisk until it thickens to a thick syrup like sauce.

1/8 cup sour cream, thick
1/2 cup mascarpone cheese
1/2 cup whipped cream
2 cups all-purpose flour
1 tablespoon sugar, white

1 teaspoon baking soda

1 cup buttermilk, shake well
1 cup 2% low-fat milk

Steps:

  • Cherry Sauce: Using a large pot combine sugar, almond extract, water and corn syrup.
  • Bring to a boil over medium heat, stirring often.
  • Next reduce the heat to a simmer and add the lime rind and cherries and simmer for 5 - 10 minutes longer.
  • If you want a thicker sauce add 1 1/2 tsps of cornstarch and 3 tsps of water to a mug, whisk well to remove lumps.
  • Add to hot cherry sauce bringing to a boil, cook until desired thickness is achieved.
  • Cream Topping: In a large bowl whip sour cream and mascarpone cheese until a soft peak forms then gently mix into the whipped cream.
  • Place covered in fridge until needed.
  • Waffles: Whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl.
  • In a smaller bowl whisk together the buttermilk, 2% milk, mascarpone cheese and egg yolks.
  • Next gently whisk the milk mixture into the flour mixture until just combined.
  • Beat the egg whites until stiff. Gently fold into the waffle batter then add the blueberries and diced bananas.
  • Brush hot waffle iron lightly with vegetable oil and pour batter into each waffle mold.
  • Cook waffles according to manufacturer's instructions until golden (3 minutes).
  • Place waffles in low oven in 1 layer to stay crisp.
  • When ready to assemble, place waffle or waffles on plate, place a generous amount of topping in center of waffles and pour desired amount of cherry sauce over top and ENJOY.

2 cups all-purpose flour

3 tablespoons honey
½ cup orange juice
1 tablespoon cornstarch

Steps:

  • In a medium bowl, whisk together egg yolks and milk. Stir in flour, baking powder and salt. Stir in butter, and set mixture aside for about 30 minutes.
  • Preheat a lightly greased waffle iron.

Steps:

  • Melt the butter in a medium bowl. Whisk in the sugar, yolks, milk, flour, baking powder, salt and lemon extract until smooth. Set aside for 30 minutes.
  • Beat the egg whites until stiff. Fold into the yolk mixture along with the 1/2 cup blueberries.
  • Use 2/3 cup batter in a greased belgian waffle maker or follow waffle maker directions.
  • To make the sauce: combine the blueberries, sugar and orange juice in a saucepan. Bring to a boil, then simmer 2 minutes. Add the cornstarch paste and simmer another 1-2 minutes, stirring constantly, until thickened.
  • Serve waffles with warm sauce.

1 teaspoon baking soda
