Ingredients

3 ounces vodka, well chilled
2 ounces fresh lime juice
2 ounces ginger syrup (recipe follows)
lime wedge, for garnish
4 cups sugar
2 cups fresh ginger, cut into 1/8-inch slices
2 cups water

Steps:

In a cocktail shaker, combine all ingredients with ice. Shake well and strain into a martini glass. Garnish with lime wedge.
For the ginger syrup:.
In a medium saucepan over high heat, combine sugar, ginger and water and bring to a boil. Reduce heat and simmer until syrupy and reduced by half, about 40 to 45 minutes. Strain ginger pieces out and reserve syrup.
(Trick: toss dried ginger in sugar, bake at 200 degrees until dried thru, about 4 hours and voila-ginger candy).

3/4 ounce simple syrup
Cucumber wheel or lime wedge, for garnish

Steps:

Fill a cocktail shaker with ice and pour in the gin, lime juice and simple syrup. Stir vigorously with a long cocktail spoon until very cold.
Strain into a chilled coupe or martini glass, or strain over a rocks glass filled with ice, depending on preference. Garnish with the cucumber wheel and serve immediately.

7 organic basil leaves
1/2 ounce simple syrup
3/4 ounce fresh lime juice
1 1/2 ounces gin, such as 209 Gin

Steps:

Place 6 of the basil leaves in the palm of your hand and clap. Place the leaves in the base of a cocktail shaker and add the simple syrup and lime juice. Pummel the basil leaves with a muddler to release the oils. Add the gin to the shaker along with ice. Put the top on the cocktail shaker and shake. Using a strainer, pour the mixture into a glass.
Place the remaining basil leaf in your hand and clap. Garnish the cocktail with the basil leaf and serve.

Gimlet mix
27 ounces (3 1/4 cups plus 2 tablespoons) sweet-and-sour mix *
6 1/2 ounces (3/4 cup plus 1 tablespoon) freshly squeezed lime juice (from about 6 medium limes)
26 1/2 ounces (3/4 cup plus 1 tablespoon) ginger syrup
To Serve
40 ounces (5 cups) vodka, well chilled
Lime wedges, for garnish (from about 3 medium limes)
*Sweet-and-sour mix, a combination of lemon or lime juice and sugar syrup, is used to make cocktails such as margaritas and pisco sours. Homemade mix is easy to make and produces the best results, but premade mix is available at liquor stores.

Steps:

Make gimlet mix:
In large pitcher, stir together sweet-and-sour mix, lime juice, and ginger syrup. Cover and refrigerate until ready to use. (gimlet mix can be refrigerated up to 2 hours. When ready to serve, shake each cocktail to order.)
To make one cocktail:
In chilled cocktail shaker, combine 2 ounces gimlet mix, 2 ounces vodka, and 3 to 4 ice cubes. Shake well and strain into chilled martini glass. Garnish with lime wedge.
