BOURBON PEACH PUNCH

Steps:
- Fill a medium saucepan with 3 cups of water and add the sugar, cinnamon, allspice and cloves. Bring to a simmer, stirring to dissolve the sugar. Add the peaches and simmer until tender, about 5 minutes. Transfer the peaches and about 1 cup of the liquid to a blender and blend until smooth (be careful when blending hot liquids). Transfer the blended liquid to a pitcher to cool slightly, then add the bourbon. Refrigerate until very cold.
- When ready to serve, add ice cubes to the pitcher and serve in rocks glasses with more ice.
PEACH COBBLER COCKTAIL
Steps:
- Fill a large wine goblet with crushed ice. Gently muddle the rye, peach nectar, dash of bitters, peaches, mint, and a squeeze of lemon juice in a cocktail shaker. Pour over ice and serve cold.

PEACH LEMONADE SPRITZ
You can use a fresh peach, nectarine or apricot here. You can also substitute thawed frozen peach slices or 3 ounces peach puree, canned peaches or peach juice if fresh fruit is unavailable. For best results, refrigerate all ingredients beforehand. This is such a refreshing cold drink!

- Make the lemonade syrup: In a small saucepan, heat 3/4 cup water over medium heat. Add the sugar and whisk until the sugar dissolves, 1 to 2 minutes. Stir in the lemon zest and juice. Transfer the syrup to a small bowl and set aside to let cool.
- Muddle and mix: Place half of the peach in a cocktail shaker and muddle it. Add 4 ounces of the lemonade syrup, the Ketel One and a few ice cubes. Cover the shaker and shake thoroughly to blend.
- Serve: Divide the cocktail between 2 glasses with a few ice cubes and the remaining peach slices in each. Top with a splash of club soda. Garnish with the mint or basil. Stir and enjoy!
PEACH PARADISE COCKTAIL
One sip, and you'll be transported to a tropical beach. This delightful cocktail features a peach base and just the right hint of ginger and a touch of evaporated milk that adds a creamy finish. For the peach puree (step #1), I used half of a 15-ounce can of sliced peaches, and it worked out well.

- Place the drained peaches and grated ginger in food processor (or blender). Pulse until smooth and thoroughly blended.
- For each cocktail: add ice, the pureed peach mixture, evaporated milk, rum, pineapple juice, orange juice and grenadine to a cocktail shaker, and shake well. Pour into glass.
- Top each cocktail with a teaspoon of honey, and stir well.
- For garnish, add a peach slice and 2 maraschino cherries to an umbrella skewer; add to cocktail and serve immediately.
GRILLED SHRIMP WITH PEACH COCKTAIL SAUCE

- In a small sauce pan, combine the peaches and white wine. Bring to a simmer, cover and cook until the peaches are soft, about 10 minutes. Uncover and cook an additional 10 minutes to reduce slightly. Turn off the heat and stir in the honey, horseradish and 1/2 teaspoon salt. Using an immersion blender (or back of a fork) puree or mash the fruit slightly to create a sauce. Cool to room temperature or chill completely for later use (see Cook's Note).
- Preheat a grill pan over medium-high heat.
- Toss the shrimp with the olive oil and remaining 1/2 teaspoon salt. Place on the hot grill and grill until pink and opaque all the way through, about 3 minutes per side. Finish with a squeeze of lemon juice. Remove to a tray and serve alongside peach cocktail sauce.
