2 pounds beef top round steak, cut into thin strips
1 tablespoon plus 2 teaspoons canola oil, divided
1 large onion, sliced
1 large green pepper, cut into strips
1/2 pound sliced fresh mushrooms
1-1/4 cups reduced-sodium beef broth, divided
1 can (8 ounces) tomato sauce
3/4 cup sherry or additional reduced-sodium beef broth
2 tablespoons Worcestershire sauce
2 tablespoons prepared mustard
2 teaspoons paprika
1 bay leaf
1/2 teaspoon dried thyme
1/4 teaspoon pepper
1 package (12 ounces) yolk-free noodles
3 tablespoons all-purpose flour
1 cup reduced-fat sour cream

Steps:

  • In a large nonstick skillet coated with cooking spray, cook beef in 1 tablespoon oil until no longer pink; drain and set aside. , In the same skillet, saute onion and green pepper in remaining oil for 1 minute. Stir in mushrooms; cook for 3-4 minutes or until tender. Stir in 1 cup broth, tomato sauce, sherry or additional broth, Worcestershire sauce, mustard, paprika, bay leaf, thyme and pepper. Return beef to the pan; bring to a boil. Reduce heat; cover and simmer for 40-50 minutes or until meat is tender. , Cook noodles according to package directions. Meanwhile, combine flour and remaining broth until smooth; gradually stir into beef mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Discard bay leaf. Remove from the heat; stir in sour cream until blended. Drain noodles; serve with stroganoff.

This Hungarian-inspired paprika beef stew recipe is well worth the cooking time.

1 tbsp. sunflower oil
750 g (1lb 11oz) braising steak, excess fat trimmed, cut into 2cm (¾in) cubes
25 g (1oz) plain flour
1 red onion, roughly chopped
1 each red and green pepper, deseeded and roughly chopped
1½ tsp paprika
5 tbsp. tomato purée
500 ml (17fl oz) beef stock
250 g (9oz) long-grain rice, washed
Fresh coriander or parsley to garnish
Cream, to drizzle (optional)

Steps:

  • Heat the oil in a large pan over a medium heat. Meanwhile, dust the beef with the flour, making sure every bit is coated. Brown the beef in the pan (do this in batches if necessary to avoid overcrowding the pan).
  • Once all the beef is browned and returned to the pan, add the onion, peppers, paprika and tomato purée and fry for 5min. Pour in the stock, bring to the boil, then cover and simmer for 1hr or until the beef is tender. Take the lid off for the final 15min of the cooking time, stirring occasionally.
  • When the beef has 15min left to cook, boil the rice according to the instructions on the packet.
  • Garnish the beef with the coriander or parsley and a drizzle of cream, if using. Serve with the rice.

2 pounds lean beef chuck, trimmed and cut into 1 inch cubes
1 cup chopped onion
1 clove garlic, minced
¾ cup ketchup
2 tablespoons Worcestershire sauce

½ teaspoon mustard powder
2 teaspoons paprika
1 ½ cups water

Steps:

500 g lean stewing beef (In NZ I use topside steak)
1 large onion (roughly chopped)
2 garlic cloves (peeled and finely chopped)
2 cups mushrooms (roughly chopped)
2 tablespoons tomato paste
1 tablespoon paprika
1 1/2 cups water
1/2 teaspoon beef stock powder
1 tablespoon cornflour
2 tablespoons water

Steps:

  • Remove any fat from the meat and cut into cubes.
  • Brown in a little hot oil. Do this in batches to keep from 'stewing'.
  • Return all meat to pan and add onion, garlic, mushrooms, tomato paste, paprika, stock powder and first measure of water.
  • Cover and simmer gently for 1-11/2 hours or until the meat is tender.
  • Mix the cornflour with the 2 Tbsp water and stir into the beef.
  • Heat for a few minutes until thickened.
  • Serve sprinkled with chopped parsley if liked.

I made this for Russ and me the other night and was very pleased with the result. We ate it over horseradish mashed potatoes. I cooked this in our electric frying pan (skillet), but you could do it on the stove top on low.

2 tablespoons oil
3 onions, sliced
3 garlic cloves, crushed
100 g pancetta, cut into small dice
2 red chilies, chopped finely
800 g diced beef (we used a blade roast)
2 green capsicum, sliced (bell peppers)
1 (400 g) can chopped tomatoes
1/2 cup white wine
1 cup water
3 teaspoons sweet paprika
1 teaspoon smoked paprika (if you don't have it use sweet)
1 teaspoon salt
1/2 teaspoon fresh ground black pepper

Steps:

  • Heat the oil and cook the onions, garlic and pancetta until the onions are soft (about 10 minutes).
  • Add the chilies and beef and cook until the beef changes colour and browns a little.
  • Add the remaining ingredients and cook on a low setting (just simmering) for 1 ½ hours or until very tender. Add a little extra water if it ever looks like catching.

Mushroom goulash is an easy goulash recipe fantastic for older cuts of beef, but even better made with rump steak (sirloin). This simple dish is enriched with mushrooms which endow this perfect goulash taste with hints of earthiness.

1 - 1.5 pounds beef (chuck roll, beef neck bones, shoulder or beef round, diced)
3 cups beef broth (or 1 beef bouillon cube melted in 3 cups of warm water)
1 yellow onion (medium, diced; or 1 tablespoon onion powder)
1 garlic clove (minced; or 1/8 teaspoon garlic powder)
1 tablespoon paprika (mild or hot)
Salt and pepper to taste
2 tablespoons butter
6 ounces tomato sauce (puree)
1 teaspoon sugar
10-12 ounces mushrooms (penny bun, cremini, portabello or a mix, diced)
Handful fresh parsley (to garnish)

Steps:

  • In a deep pan or pot combine beef and beef broth. Simmer on low to medium for 15-20 minutes.
  • Add onion (or onion powder), garlic (or garlic powder), paprika, salt and pepper to the pan. Mix well and continue simmering 20 minutes. Add a little bit of hot water at times to keep the level of liquid even. (In addition to the broth you'll be adding 1 to 2 more cups of liquid throughout the entire cooking process for a total of 4-5 cups of liquid to replenish evaporated liquid and achieve wanted goulash thickness.)
  • Add butter, tomato sauce and sugar to the pan and mix well. Bring the temperature down to low and simmer another 20 minutes, stirring frequently. (By now the meat should be tender. )
  • Finally, add mushrooms. Combine with ingredients well and simmer another 10- 15 minutes, or until the mushrooms are soft.
  • Garnish with parsley and serve over rice, couscous or pasta.
  • Keep leftovers in the fridge 1-2 days at most, or freeze in freezer-proof containers for up to 3 months. If planning to freeze the stew it's best to omit the mushrooms before freezing. Instead, add a cup of water or broth and do step 4 after you thaw the goulash.

1/4 teaspoon black pepper
1 cup arugula

Steps:

  • Preheat oven to 450ºF.
  • In an oven safe frying pan over medium heat, add 1tbsp butter, extra virgin olive oil, garlic and thyme and cook for one minute.
  • Add mushrooms and pearl onions flat in the pan and cook for 7 minutes, until onions are beginning to soften.
  • Place the pan in the center of the oven and roast for 15 minutes, until onions are tender.
  • Take the pan out of the oven, add paprika salt, pepper and remaining butter and gently toss. Top with arugula and roast for another 3-5 minutes, until arugula has completely wilted.
  • Serve immediately.

You can really use any cut of beef for this as long as it is a tender cut like sirloin or beef tenderloin, beef tenderloin is expensive, so I most always use a sirloin roast sliced very thin or a thick beef rib steak sliced thinly. Place the beef in the freezer to partially freeze, it will make slicing easier. To save time prepare the sour cream/paprika sauce a day ahead and refrigerate. This is a delicious beef recipe that can be doubled if desired. Cooking time is for the sour cream sauce and for browning the beef slices.

  • Mix in sour cream and remove from heat.
  • If you are preparing this to serve the following day, cool, cover and refrigerate, just bring to a simmer before adding in beef.
  • Transfer the sauce to a large dish with high sides.
  • Melt butter in a skillet over medium heat.
  • Working in batches add in beef slices, season with salt and pepper and cook until brown on each side; transfer to a plate.
  • Add in more butter if needed and continue with remaining beef slices.
  • Transfer the beef to the sauce along with any juices from the plate.
  • You can deglaze the pan with some white wine, then add it to the sauce if desired.
  • Top with chopped tomatoes and serve.
