Malted-milk powder adds richness and complexity to hot chocolate.

4 cups milk
1 teaspoon pure vanilla extract
4 ounces semisweet chocolate, roughly chopped
3/4 cup malted-milk powder

Steps:

  • In a medium saucepan, heat milk and vanilla over medium heat just until milk begins to steam, 5 to 6 minutes. Add chopped chocolate, and whisk until completely melted and combined.
  • Pour malt powder into a warmed serving pitcher or another saucepan. Add hot chocolate mixture, whisking thoroughly until powder dissolves. Divide among four mugs; serve immediately.

4 ounces bittersweet chocolate, finely chopped

Steps:

  • In saucepan, bring milk with sugar just to boil over medium-high heat, stirring often.
  • Remove from heat.
  • Whisk in malt powder and chopped chocolate until smooth.
  • (Make-ahead: Let cool. Refrigerate in airtight container for up to 2 days; reheat.).

Steps:

  • Warm Glossy Chocolate Sauce:
  • In the top half of a double boiler, combine the 2 chocolates over simmering water. Stir constantly until melted, then whisk in the corn syrup and water. Whisk until smooth and shiny.
  • Combine all the ingredients in a blender and blend until smooth.

1 teaspoon salt
2 teaspoons cornstarch

Steps:

  • Combine all ingredients in a mixing bowl and incorporate evenly. In a small pot, heat 4 to 6 cups of water.
  • Fill your mug half full with the mixture and pour in hot water. Stir to combine. Seal the rest in an airtight container, keeps indefinitely in the pantry. This also works great with warm milk.

8 marshmallows (vegetarian brand, if required)

Steps:

  • Preheat the grill to high and line a large baking sheet with parchment. Put all 16 malted milks on the tray with a square of milk chocolate on 8 and a marshmallow on the remaining 8. Grill until both are melting.
  • Sandwich the two different types on top of each other until oozing at the edges and eat while hot or dunked in a hot chocolate for extra chocolately flavour.

1/2 cup chocolate instant malted milk powder
6 caramels, unwrapped
1 teaspoon vanilla
8 cups water or 8 cups milk
whipped topping (optional)
mini marshmallows (optional)

Steps:

  • Mix all ingredients, except the last two optional ones, in a slow cooker.
  • Heat on high for 3 hours, stirring occasionally.
  • Taste before serving. Depending on cocoa mix you might need to add more liquid. (Be sure to heat any additional liquid in the microwave before adding.).

  • In a large saucepan, heat milk over medium heat until bubbles begin to form around the edge of the pan.
  • While milk is heating, pour cream into a small chilled bowl. Blend the whipping cream until it begins to thicken. Add sugar and continue to blend until soft peaks form.
