This no-bake pumpkin pie takes just 10 minutes to prepare, If you're short on time and need a great dessert, this recipe is an excellent choice.

8 ounces of cream cheese (softened)
1/2 cup light brown sugar (packed)
1 cup pumpkin (or squash puree)
1/2 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
2 1/2 cups frozen whipped topping (thawed, regular or lite; most of an 8-ounce tub)
9-inch graham cracker crust (purchased or homemade)
Garnish: whipped topping (or sweetened whipped cream, for topping)
Optional: cinnamon sugar for sprinkling

Steps:

  • Gather the ingredients.
  • In a mixing bowl with an electric mixer , beat the cream cheese with the pumpkin or squash puree, brown sugar, pure vanilla extract , cinnamon, nutmeg, and ginger, until well blended and fluffy.
  • Fold in the 2 1/2 cups whipped topping.
  • Spread the mixture in the graham cracker crust.
  • Cover and chill the pie for 2 to 3 hours before serving.
  • Serve with whipped topping or sweetened whipped cream and sprinkle with cinnamon sugar, if desired.

1 (9 inch) prepared graham cracker crust
1 (.25 ounce) package unflavored gelatin
1 teaspoon ground cinnamon
½ teaspoon ground ginger
½ teaspoon ground nutmeg
½ teaspoon salt
1 (14 ounce) can sweetened condensed milk
2 eggs, beaten
1 (15 ounce) can pumpkin puree

Steps:

  • In a heavy saucepan combine gelatin, cinnamon, ginger, nutmeg, and salt. Stir in condensed milk and beaten eggs, mixing well. Let stand one minute, then place on burner over low heat, stirring constantly for about 10 minutes, or until gelatin dissolves and mixture thickens. Remove from heat.
  • Stir in pumpkin, mixing thoroughly, and pour mixture into graham cracker crust. Chill for at least 3 hours before serving.

1 (15 ounce) can pumpkin puree
1 ¼ cups skim milk
¾ cup granular sucralose sweetener (such as Splenda®)
½ cup egg substitute
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
½ teaspoon ground ginger
½ teaspoon ground nutmeg

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a pie dish.
  • Beat pumpkin puree, milk, sweetener, egg substitute, vanilla extract, cinnamon, ginger, and nutmeg in a bowl until smooth; pour into prepared pie dish.
  • Bake in preheated oven until set, about 30 minutes.

This is an interesting recipe I found in an ad for Keebler products. I put it here for safekeeping. It's nice to have a no-bake recipe for a favorite pie. (Cook time is refrigerator time).

1/2 cup cold milk
1 (4 5/8 ounce) package vanilla flavor instant pudding and pie filling mix (6-serving size)
1 teaspoon pumpkin pie spice (see note *)
1 cup Libby's canned pumpkin
2 1/2 cups frozen non-dairy topping, thawed
9 inches keebler graham cracker crust

Steps:

  • In large bowl beat milk, pudding mix and spice with wire whisk for 1 minute. (Mixture will be very thick).
  • Whisk in Libby's 100% pure pumpkin.
  • Stir in whipped topping. Spread in crust.
  • Refrigerate at least 2 hours or until set. Garnish as desired.
  • *Note: May substitute 1/2 teaspoon ground cinnamon, 1/4 teaspoon ground ginger and 1/8 teaspoon ground cloves in place of the pumpkin pie spice.

1 baked 9-inch graham cracker crust
2 tablespoons butter
1/4 cup white sugar
1/2 cup brown sugar
1 cup evaporated milk
1/2 teaspoon salt
2 1/2 tablespoons cornstarch
1 1/2 cups pumpkin puree
2 teaspoons ground cinnamon
1/2 teaspoon nutmeg
1 cup milk
3 egg yolks
1 cup whipping cream

Steps:

  • In a medium saucepan, blend butter, sugars, salt, and cornstarch. Add evaporaed milk and stir until boiling. Once it boils, cook two minutes longer or until it is thickened. Remove from heat. Blend in pumpkin, spices, and milk. Add some mixture to beaten egg yolks. Add to saucepan and continue to cook for several minutes until it boils. Stir 2 minutes longer. Pour into pie shell. After cooled, add whipped topping.

1 tsp. ground cinnamon
1/2 tsp. ground ginger
1/4 tsp. ground nutmeg
1 env. KNOX Unflavored Gelatine
1/4 cup water
1 can (16 oz.) pumpkin
1 ready-to-use graham cracker crumb crust (6 oz.)
1 cup thawed COOL WHIP Whipped Topping

Steps:

  • Mix condensed milk, cinnamon, ginger and nutmeg with whisk until blended.
  • Sprinkle gelatine over water in medium saucepan; let stand 1 min. Cook on low heat 2 min. or until gelatine is completely dissolved, stirring constantly. Add milk mixture; stir until blended. Continue cooking 5 min. or until slightly thickened. Remove from heat. Stir in pumpkin. Spoon into crust.
  • Refrigerate 4 hours or until firm. Top each serving with a dollop of COOL WHIP just before serving.

  • To make the filling, place all dry ingredients in a saucepan and whisk to combine. Then add pumpkin puree and whisk again. Slowly pour in milk and stir again until well combined.
  • Place over medium heat and bring to a low bubble - not boil - whisking often. Once it starts bubbling and getting thick, reduce heat to medium-low and continue cooking until a visible ribbon forms when spooning it across the top. It should be thick and kind of jiggly. During this process switch to a rubber spatula for stirring to ensure the pudding isn't sticking to the bottom or sides of the pan.
  • Remove from heat and add vanilla and whisk. Let set for 5-10 minutes, then transfer to a glass bowl and cover with plastic wrap, making sure the wrap TOUCHES the pudding - otherwise a film will form.
