WARM DATES WITH BLUE CHEESE AND PROSCIUTTO



Warm Dates with Blue Cheese and Prosciutto image

24 large dried Medjool dates with pits (14 ounces)
6 ounces sharp blue cheese, such as Bleu d'Auvergne
1/4 pound thinly sliced prosciutto (8 to 10 large slices)

Steps:

  • Preheat the oven to 400 degrees F.
  • With a small paring knife, slit each date lengthwise and spread open just enough to remove the pit while leaving the date intact. Fill the cavity of each date with a small piece of blue cheese and fold the date over the cheese, pressing it back into its original shape.
  • Cut a strip of prosciutto as wide as each date is long and wrap it around twice, enclosing the date almost completely. Place the dates on a sheet pan and bake for about 8 minutes, until the prosciutto is browned and the cheese starts to melt.
  • Cool slightly and serve warm.

4 slices bacon
1/2 small red onion, chopped
3 tablespoons orange juice
1/2 cup blue cheese, crumbles
2 1/2 ounces cream cheese (light or fat free are fine)
1/2 cup chopped pecans, divided
24 pitted dates

Steps:

  • Cook bacon in a large skillet over medium heat until crisp. Transfer to drain on paper towels, reserving 1/2 teaspoon bacon grease in skillet.
  • Add onion and cook over medium heat until softened, 3 to 4 minutes. Add orange juice and cook, scraping up any browned bits, until liquid is evaporated, 1 to 2 minutes more.
  • Transfer onion to a medium bowl and let cool.
  • Crumble bacon into the onions. Add cheeses and half of the pecans. Stir well to combine.
  • Stuff each date with a heaping teaspoon of the mixture and top with remaining pecans.

1/4 cup (2 ounces) mascarpone cheese, a room temperature
1/4 cup finely chopped fresh basil leaves
Kosher salt and freshly ground black pepper
16 Medjool dates (12 ounces), pitted
8 thin slices prosciutto, halved lengthwise

Steps:

  • In a small bowl, mix together the cheeses and basil and season with salt and pepper, to taste.
  • Gently pull the dates apart and stuff with about 1/2 teaspoon of the cheese mixture. Close the dates around the filling. Wrap a piece of prosciutto around each date and secure with a toothpick.
  • Arrange the stuffed dates on a platter and serve.

16 marcona almonds, toasted
1/4 lb valdeon blue cheese or 1/4 lb cabrales blue cheese
8 slices bacon, each cut in half
16 toothpicks

Steps:

  • Cut each date along one side, removing the pit and replacing it with a toasted Marcona almond.
  • Place a teaspoon of the cheese inside the date and close it. Wrap each date with half a slice of bacon and secure it with a toothpick.
  • Bake in a 400-degree oven until golden brown, about 5 to 7 minutes.

1 ounce prepared pesto sauce
8 pieces applewood bacon (cut in thirds)

Steps:

  • Cook Applewood Bacon halfway. Best when baked but you can fry. (If you don't have applewood sprinkle a small amount of brown sugar on bacon).
  • Put blue cheese, almond & small amount of pesto in bowl.
  • Make slit in the date and stuff with cheese mixture.
  • Wrap with bacon. (secure with toothpick if needed).
  • When you're ready to serve cook for 10 minutes on 325 or until bacon is cooked.

1 pound sliced bacon, cut in half
1 pound pitted dates
4 ounces blue cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Slice dates in half, and open them up. Pinch off pieces of blue cheese, and place them into the center of the dates. Close the halves of the dates, and wrap a half-slice of bacon around the outside. Secure each one with a toothpick. Arrange in a baking dish or on a baking sheet with sides to catch any grease.
  • Bake for 30 to 40 minutes in the preheated oven, or until the bacon is crisp. Turn dates over after the first 20 minutes for even cooking.

  • Using a paring knife cut a small slit lengthwise across the date. Open date and remove pit. Repeat this process with all dates.
  • With your fingers add a small amount of crumbled blue cheese to the opening in date. You may need to press cheese together to get it to hold well. Arrange on serving platter. Top with chopped walnuts and gently press into cheese.
  • At this point dates can be covered and refrigerated for 2-3 days. Before serving drizzle with honey.
