BAKED POLENTA WITH MUSHROOMS & BLUE CHEESE



Baked Polenta with Mushrooms & Blue Cheese image

6 large portobello mushrooms (about 1 1/2 pounds), stems discarded
3 tablespoons good olive oil
1 tablespoon balsamic vinegar
Kosher salt and freshly ground black pepper
2 1/2 cups good chicken stock, preferably homemade
2 cups half-and-half
3/4 cup fine cornmeal
1/4 cup imported Italian mascarpone cheese
4 ounces Gorgonzola piccante, crumbled

Steps:

  • Preheat the oven to 400 degrees.
  • Brush the mushroom caps gently with a clean cloth to wipe away any dirt. Arrange them, underside up, on a sheet pan, drizzle with the olive oil and balsamic vinegar, then sprinkle with 1 teaspoon salt and 1/2 teaspoon pepper. Bake for 20 minutes, until tender. Set aside. Lower the oven to 375 degrees.
  • Meanwhile, make the polenta. Pour the stock and half-and-half into a large saucepan and bring it to a boil. Lower the heat and, while whisking constantly, slowly sprinkle the cornmeal into the boiling liquid. Simmer for 6 to 8 minutes, stirring almost constantly with a wooden spoon, until the polenta is thick and smooth. Off the heat, stir in the mascarpone, 1 teaspoon salt, and 1/2 teaspoon pepper. Pour into an 8 x 11 x 2-inch baking dish.
  • Arrange the mushrooms, underside up, in one layer over the polenta. Sprinkle on the Gorgonzola and bake for 25 to 30 minutes, until the polenta is bubbly and the cheese is melted. Sprinkle with salt and serve hot.

freshly ground black pepper
3 tablespoons crumbled blue cheese
1 tablespoon roasted pine nuts, or to taste
¼ teaspoon crushed garlic

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Place mushroom caps, tops facing down, on a baking sheet. Drizzle balsamic vinegar on each cap and sprinkle black pepper over vinegar.
  • Bake in the preheated oven until tender and fragrant, about 25 minutes. Sprinkle blue cheese, pine nuts, and garlic on each cap. Continue roasting until cheese melts, about 10 minutes more.

3 shallots, finely chopped
1/4 cup dry sherry (optional)
1/4 cup chicken broth
1/4 teaspoon salt
1/4 teaspoon dried fennel
1 dash white pepper, ground
1 cup portabella mushroom, thinly sliced (1 large)
1 1/2 cups blue cheese (1-2 ounces)
2 cups harvest vegetables, grilled or roasted (red peppers, squash, asparagus, etc.) or 2 cups pasta
parsley, Freshly chopped (optional)

Steps:

  • Add butter to 12-inch non-stick skillet. Saute shallots over low heat until transparent, approximately 10-15 minutes.
  • Add sherry, chicken broth, salt, fennel and pepper.
  • Simmer 2-3 minutes to allow flavors to blend.
  • Add mushrooms.
  • Cook until liquid is absorbed.
  • Remove pan from heat. Crumble blue cheese over mixture and lightly toss.
  • Spread mixture over vegetables or pasta.
  • Garnish dish with chopped parsley.
  • * Note: To roast vegetables, cut into equal sizes. Spread out vegetables on pan in single layer, lightly drizzle with olive or canola oil and sprinkle with salt. Roast under broiler 10-15 minutes until blackened spots appear on vegetables.

4 large Portobello mushrooms, cleaned and stems removed
3 cloves garlic, finely chopped
1/4 cup dry sherry
5 tablespoons olive oil
2 1/2 teaspoons kosher salt
4 ounces mild blue cheese, at room temperature
1 large onion, thinly sliced
4 ounces spinach leaves (about 5 cups)
4 burger buns, toasted

Steps:

  • 1. Lay the mushrooms on a greased baking sheet, gill sides up. Whisk together the garlic, sherry, 2 tablespoons of the oil and 2 teaspoons of the salt. Pour the mixture over the mushrooms. Marinate for at least 30 minutes or up to 2 hours.
  • 2. Preheat the oven to 400 degrees F. Divide the cheese evenly among the mushroom caps. Roast until the mushrooms are fork-tender and the cheese is melted, 15 to 20 minutes. Reserve any cooking juices in the pan.
  • 3. Meanwhile, heat the remaining 3 tablespoons olive oil in a large skillet over high heat. Add the onions and cook until charred and tender, stirring often, about 10 minutes. Add the spinach and the cooking juices from the mushrooms. Cook until just the spinach is wilted. Season with the remaining 1/2 teaspoon salt.
  • 4. Place the mushrooms on the buns and top with the spinach and onions.

2 tablespoons olive oil
1 medium red onion, diced
2 garlic cloves, minced
2 (6 ounce) packages portobella mushroom caps, cleaned trimmed and diced
1/2 teaspoon dried thyme
1 (15 ounce) can plum tomatoes, chopped
salt & pepper

Steps:

  • 1. Heat olive oil in a large casserole and saute the onions until lightly browned, 3 to 4 minutes, stirring often.
  • 2. Add garlic, saute for 1 minute, then stir in mushrooms and thyme. Continue to cook over high heat until the mushrooms have softened and given off their juices, 2 to 3 minutes.
  • 3. Add tomatoes and cook until the mixture is thick, about 10 minutes. Serve over wheatberry, bulgur wheat pilaf or soft cornmeal polenta. Ragu can be cooled and refrigerated for up to 4 days, Garnish with additional thyme, if desired.

1 red onion , cut into wedges
1 tsp olive oil
2 tbsp balsamic vinegar
2 Portobello or flat mushrooms
1 tsp thyme leaves
25g blue cheese
1 ciabatta bread roll
handful rocket leaves
oven fries , to serve (optional)

Steps:

  • Heat oven to 220C/200C fan/gas 7. Mix the onion with the oil and vinegar, spread on a baking tray, then put the mushrooms on top, stem-side up, and scatter over the thyme and some seasoning. Cook in the oven for 15 mins, until starting to soften and caramelise.
  • Crumble the cheese into the cavity of the mushrooms and cook for 5 mins more until the cheese is melted and bubbling.
  • Split the ciabatta roll in half and lightly toast. Top with a handful of rocket, the sticky onions and the cheese-topped mushrooms. Serve with oven fries, if you like.

I had these as an appetizer at the Blue Grotto restaurant in Daytona Beach. My DH and I loved them, so I have attempted to recreate the recipe.

4 large portabella mushrooms
1/2 lb fresh spinach
1/2 cup onion, chopped
1/2 cup blue cheese, crumbled
2 garlic cloves, chopped
1/4 cup olive oil
1/4 cup balsamic vinegar

Steps:

  • Remove stems from mushrooms and chop.
  • Bake portabella caps for about 10 minutes in 400 degree oven.
  • Remove and cool.
  • Saute onions and garlic in 1T oil until onions are translucent.
  • Add spinach to onions and garlic and saute until spinach is wilted.
  • Spoon this mixture into portabella caps.
  • Sprinkle blue cheese on top
  • Bake 15 minutes at 400 degrees.
  • Mix remaining olive oil and balsamic vinegar.
  • Drizzle over the cooked portabellas and serve.
