DATE FILLED OATMEAL COOKIES

This makes a huge batch, cut the recipe in half if desired. These cookies are best if they sit for a couple of days to soften. They freeze well also. From Company's Coming Cookie cookbook.

Number Of Ingredients 10

2 cups butter or 2 cups margarine, softened
2 cups brown sugar, packed
1 cup milk
4 cups all-purpose flour
4 cups rolled oats
5 teaspoons baking powder
1 teaspoon salt
1/2 lb chopped dates
1/3 cup granulated sugar
2/3 cup water

Steps:

  • Cream butter and sugar together well.
  • Slowly mix in milk.
  • Add remaining ingredients.
  • Mix well.
  • Chill for 1 hour.
  • Roll out fairly thin on lightly floured board.
  • Cut into 2 1/2-inch rounds.
  • Place on ungreased baking sheets.
  • Bake in 350°F oven for 8-10 minutes.
  • Cool.
  • Fill with Date Filling, to form a sandwich.
  • For date filling: combine dates, sugar and water in saucepan.
  • Bring to a boil.
  • Simmer, stirring often, until mushy and thickened.
  • Add more water if too dry, or simmer longer if too runny.
  • Cool and spread between cookies.

This is a unique family recipe that is originally from my great, great aunt. I have not tried it, but submitted it in response to a request. I'm sorry I don't know the serving size or exactly how long it takes to bake!

1/2 cup butter
1 cup sugar
2 large eggs
1 tablespoon milk
2 teaspoons baking powder
2 cups flour
1 pinch salt
1 cup chopped dates
1/2 cup water
3 teaspoons flour
1/2 cup sugar
chopped nuts, to taste

Steps:

  • Cream butter and 1 cup sugar; add eggs and beat well.
  • Add milk.
  • Sift together baking powder, 2 cups flour, and salt; add flour mixture to creamed mixture.
  • Refrigerate.
  • While dough is chilling, make filling by cooking dates, water, 3 tsp flour, and 1/2 cup sugar until thick; add chopped nuts.
  • Roll out dough; cut in rounds.
  • Mound filling in center, place another round on top and seal edges.
  • Bake at 375°F on greased cookie sheets until lightly browned.

MARY'S FILLED SUGAR COOKIES

This is another tried and true recipe from Grandma. She always made her own jams and jellies and depending on what fruit was in season that was the fruit of choice for these cookies. Best - Apricot!!! 2nd Strawberry or Raspberry -- You make the choice, they are all good.

1/2 cup shortening
3/4 teaspoon salt
1 teaspoon vanilla
1 cup sugar
1 egg, beaten
3 cups flour, sifted
3 teaspoons baking powder
1/4 cup milk

Steps:

  • Cream shortening, sugar and beaten egg.
  • Mix in dry ingredients, then alternate mixing in with milk.
  • Chill dough overnight or as long as it takes to make the dough easy to handle.
  • Roll and cut into circles, one for the top and one for the bottom.
  • Place the bottom circle on the greased cookie sheet, add one+ teaspoon jam/jelly in the center. With a moistened finger, wet the outside edge of the bottom circle, place the top circle over the bottom and seal the edges by pressing down. (You can do this with a fork if you prefer, like the edge of a pie crust).
  • You can also put the jam on one side and flip the top over to make a half moon.
  • Bake @ 350 degrees for 12-15 minutes or until the bottom edge is starting to brown.

These cookies have two layers of delicious and light sugar cookies sandwiched with date filling. I even loved these as a kid, when dates weren't COOL!

1 1/2 cups dates, cut up fine (You may use a combination of figs, raisins and dates -l/2 cup each- if you prefer)
1/2 cup sugar
1 tablespoon flour
1/2 cup water
2 teaspoons lemon juice
1/2 cup shortening
1 cup sugar
2 eggs
2 tablespoons heavy cream or 2 tablespoons canned milk
1 teaspoon vanilla
2 1/2 cups flour
1/4 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • Mix in a sauce pan the dates, sugar and TBSP of flour, water, and lemon juice. Cook this for about 5 minutes on a medium heat, until all are blended well.
  • Mix together the shortening, sugar, and eggs.
  • Stir in the 2 Tbsps. thick cream and l teaspoons vanilla.
  • Sift together the 2 1/2 cups of flour, baking soda and salt. Add to shortening mix to form dough.
  • Chill dough for at least 1 to 2 hours.
  • Roll out dough in thin layers in small batches and cut with round cookie cutter.
  • Put mixture (about a tbsp.) in the center between 2 thin cookies pressed together.
  • Bake at 350 degrees on lightly greased sheet pan for 8-10 minutes or until bottoms are lightly browned.

2 cups raisins
3/4 pound pitted dates
3/4 cup sugar
2 small navel oranges, peeled and quartered
1/3 pound dried figs
1/3 cup chopped walnuts
1/4 cup water
DOUGH:
1 cup shortening
1 cup sugar
2 large eggs, room temperature
1/4 cup 2% milk
2 teaspoons vanilla extract
3-1/2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
GLAZE:
2 cups confectioners' sugar
2 to 3 tablespoons 2% milk

Steps:

  • Place the first 7 ingredients in a food processor; cover and process until finely chopped. Set aside., In a large bowl, cream shortening and sugar until light and fluffy, 5-7 minutes. Beat in the eggs, milk and vanilla. Combine the flour, salt, baking powder and baking soda; gradually add to creamed mixture and mix well. Divide dough into 4 portions; cover and refrigerate for 1 hour., Roll out each portion between 2 sheets of waxed paper into a 16-in. x 6-in. rectangle. Spread 1 cup filling lengthwise down the center of each. Starting at a long side, fold dough over filling; fold the other side over the top. Pinch seams and edges to seal. Cut each rectangle diagonally into 1-in. strips. Place seam side down on parchment-lined baking sheets. , Bake at 400° for 10-14 minutes or until edges are golden brown. Cool for 10 minutes before removing from pans to wire racks to cool completely. Combine confectioners' sugar and enough milk to achieve desired consistency; drizzle over cookies. Store in an airtight container.

This recipe comes from "Treasured Recipes Old and New 1975," a community cookbook by the Schuyler-Brown Homemakers Extension in Iowa Falls. It was contributed by Wilma Miller, who credits the recipe to her great-aunt. Ms. Miller wrote that the original recipe called for two pounds of walnuts, but that she prefers it with pecans "and not that many." That makes sense. Mixing in even a pound of nuts requires the arms of a sturdy farm wife. The recipe yields enough for an entire church supper.

2 1/2 cups/350 grams all-purpose flour
1 teaspoon/5 grams salt
1 teaspoon/3 grams cinnamon
1/2 teaspoon/1 1/2 grams ground cloves
8 ounces/2 sticks/227 grams soft unsalted butter
1 1/2 cups/300 grams light brown sugar
3 large eggs, lightly beaten
1 tablespoon/13 grams baking soda
1 pound/450 grams chopped pitted dates
1 pound/450 grams chopped walnuts or pecans
Confectioners' sugar

Steps:

  • Heat oven to 350 degrees. Line one or more baking sheets with parchment. Place flour in a bowl and whisk in the salt, cinnamon and cloves. Set aside.
  • Cream butter and brown sugar together by hand or in an electric mixer. Beat in eggs. The mixture will not be smooth. Dissolve the baking soda in 1 tablespoon hot water and stir it in. Stir in the dates and nuts. The batter will be heavy and not easy to mix. Work in the flour mixture, about a third at a time. If your electric mixer has a dough hook, use it for working in the flour.
  • Scoop heaping teaspoons of batter onto prepared baking sheet or sheets, making craggy mounds about 1 1/2 inches in diameter. Space them about 1 1/2 inches apart; the cookies will not spread very much. (Alternatively, for neater cookies, you can roll the batter into balls between your palms, then lightly press them down with the back of a spoon or the tines of a fork.) Allow to sit at room temperature 30 minutes to 1 hour before baking. Depending on the size of your oven and your baking sheets, you can form the cookies ready to bake on sheets of parchment paper on your countertop, then transfer them to baking sheets in shifts.
  • Bake 15 to 20 minutes, until nicely browned. Let cool, then dust with sifted confectioners' sugar. If you plan to freeze some of the cookies, do not dust them with confectioners' sugar; wait until after they thaw.

½ cup white sugar
¾ cup water
½ cup butter, softened
½ cup packed brown sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a small saucepan over low heat, mix dates, sugar and 1/2 cup of water. Bring to a boil, and cook for 15 minutes, or until thick and smooth. Set aside to cool.

  • On a floured surface, roll dough to 1/8 inch thickness and cut into 2 inch rounds. Place 1/2 of the rounds on cookie sheets. Spoon date mixture in the center of each round and top with another round. Press edges firmly together.

2 cups chopped dates
3/4 cup sugar
3/4 cup water
1/2 cup nuts
1 cup shortening
3 1/2 cups flour
2 cups brown sugar
1 teaspoon baking soda
2 eggs
1 teaspoon salt
1/2 cup buttermilk

Steps:

  • Mix all filling ingredients (except nuts) together over medium heat. Add nuts -- stirring constantly.
  • Once sugars are disolved and mixed with other ingredients, take off heat and let cool.
  • Mix shortening, sugar and eggs thoroughly. Stir in buttermilk. Sift in flour, baking soda, and salt.
  • Let chill at least 1 hour.
  • Roll dough in ball and make a thumb print in center of the cookie. Add approx 1 tsp date filling in the hole, then cover top of filling with a small piece of dough patted down lightly.
  • Bake at 400 degrees for 8-10 minutes.
