1 1/4 lbs ripe Roma tomatoes* ((about 5 - 6))
1 (14.5 oz) can petite diced tomatoes**

1/3 cup fresh cilantro ((about a handful))

2 Tbsp fresh lime juice
1/2 tsp chili powder

1/2 tsp granulated sugar ((optional))
Salt and pepper to taste

Steps:

RESTAURANT STYLE SALSA

Restaurant Style Salsa image

Recipe video above. Just like what you get at your favourite restaurant and those jars sold alongside corn chips at the grocery store.... but it's better, healthier and cheaper! The fresh flavour is so, so good. Make it chunkier or smoother, to your taste.

Provided by Nagi

Categories     Dip

Time 5m

Number Of Ingredients 11

1/4 cup chopped onion ((white, brown or yellow))
1 tbsp jalapeño pepper (, seeds removed, roughly chopped (fresh best, canned ok))
400g / 14 oz canned crushed tomato (, best quality)
4 oz / 120g canned diced green chiles ((Note 1))
1/4 cup (packed) cilantro/coriander (, roughly chopped)
1/2 tbsp+ lime juice
1 clove garlic (, minced)
1/2 tsp sugar
1/2 tsp salt
1/4 tsp black pepper
1/4 teaspoon ground cumin

Steps:

  • Place onion and jalapeno in the food processor first, then add remaining ingredients (start with 1/2 tbsp lime juice).
  • Blitz to desired consistency - I like mine pretty smooth because you get better flavour out of the onion etc.
  • Taste test with corn chip for salt and lime. Adjust if necessary.
  • Refrigerate 1 hour before serving with corn chips, or other dippers (see in post for suggestions).

SIMPLE SALSA

Simple Salsa image

There are tons of salsas out there, but I haven't found one exactly like mine. (I don't like the taste of lime or lemon juice. It's similar to pico de gallo I guess.) Do yourself a favor and find authentic Mexican chips from a local restaurant to go with this! Can't beat the taste. :) Can spice this up if you want, I do this for my bf, just add some cayenne to the mix! I love this so much I can eat half the bowl in one sitting!!

Provided by MissJennifer

Categories     Sauces

Time 10m

Yield 3-5 serving(s)

Number Of Ingredients 5

2 medium tomatoes, diced
1/2 small onion, diced
2 garlic cloves, minced
1 -2 tablespoon cilantro
salt & pepper (I use garlic pepper salt as well as salt to taste, but you can use salt, pepper, and garlic powder i)

Steps:

  • Wash and dice tomatoes, peel and cut onion, peel and mince garlic or do what I do and use the already minced garlic (1 tsp.)!
  • In a small bowl combine garlic, onion and tomatoes with cilantro, salt, and pepper (or garlic pepper salt). Stir with a spoon and mash a little, this will make it juicy, and as it sits it'll get juicer.
  • Enjoy with chips or add to entrees for flavor/side dip!

1.5 teaspoons fresh lime juice
0.75 teaspoon kosher salt (or to taste)

ZESTY SALSA RECIPE FOR CANNING

Zesty Salsa Recipe for Canning image

Turn your windfall of tomatoes into salsa! We'll teach you everything about canning salsa, plus share our family favorite zesty salsa recipe for canning.

Provided by Cassie Johnston

Categories     Canning + Preserving

Time 1h30m

Number Of Ingredients 9

10 cups chopped cored peeled tomatoes (about 25 medium)
5 cups chopped seeded green bell peppers (about 4 large)
5 cups chopped onions (about 6 to 8 medium)
2-1/2 cups chopped seeded chili peppers, such as hot banana, Hungarian wax, serrano or jalapeño (about 13 medium)
1-1/4 cups cider vinegar
3 cloves garlic, finely chopped
2 Tbsp finely chopped cilantro
1 Tbsp salt
1 tsp hot pepper sauce, optional

Steps:

  • Prepare boiling water canner. Heat jars in simmering water until ready for use. Do not boil. Wash lids in warm soapy water and set aside with bands
  • Combine tomatoes, green peppers, onions, chili peppers, vinegar, garlic, cilantro, salt and hot pepper sauce, if using, in a large stainless steel saucepan. Bring to a boil over medium-high heat, stirring constantly. Reduce heat and boil gently, stirring frequently, until slightly thickened, about 10 minutes.
  • Ladle hot salsa into hot jars, leaving 1/2 inch headspace. Remove air bubbles. Wipe jar rim. Center lid on jar and apply band, adjust to fingertip tight. Place jar in boiling water canner. Repeat until all jars are filled.
  • Process both pint and half pint jars for 15 minutes, adjusting for altitude. Turn off heat, remove lid, let jars stand 5 minutes. Remove jars and cool 12-24 hours. Check lids for seal, they should not flex when center is pressed.

BEST DAMN SALSA EVER!

Best Damn Salsa Ever! image

This homemade salsa recipe is absolutely irresistible! It's loaded with delicious, vibrant flavor and it comes together in less than 5 minutes.

Provided by Kim Lee

Categories     Appetizer     Dip

Time 5m

Number Of Ingredients 8

4 small jalapeño peppers* ((leave the seeds in for an extra kick))
1/2 onion, chopped
3 garlic cloves
1/4-1/2 cup fresh cilantro
6 tomatoes of varying sizes, chopped
1 1/2 to 2 teaspoons ground cumin
1 teaspoon sea salt + more to taste
2 tablespoons lemon or lime juice ((about 1/2 lemon, juiced))

Steps:

  • Add all ingredients to the bowl of a food processor. I like to add in the jalapeños, onion and garlic first and then the cilantro and tomatoes, so the tomatoes do not get too liquid-y. Pulse about 10 or so times and until all ingredients are combined and diced, but be sure to stop before the salsa becomes too watery. However, you can pulse longer if you do like your salsa with more liquid.
  • Taste the salsa and add more ingredients as desired. I would advise stirring in the extra ingredients, not pulsing in the food processor. The salsa will become too watery, quickly.
  • Transfer to a bowl and enjoy!
  • I prefer to refrigerate salsa for 1 day prior to serving to allow the flavors to intensify. Salsa will keep for about 1 week in an airtight container or jar in the fridge; however, it's never lasted that long in this household.

I asked for this recipe at a party 20 years ago, and I've been making it ever since! I always feel a little guilty when people ask for the recipe, because it's so easy!!! THE BEST HOMEMADE SALSA

The Best Homemade Salsa image

Provided by Mel

Categories     Appetizers

Time 1h40m

Number Of Ingredients 13

10 cups peeled, chopped and drained tomatoes (see note)
3 cups chopped onion
1 3/4 cups chopped green bell pepper
5 jalapeños, finely chopped, membranes and seeds removed (leave in for extra spice)
7 cloves garlic, finely minced
2 1/2 teaspoons ground cumin
2 1/2 teaspoons coarsely ground black pepper
2 1/2 tablespoons canning or pickling salt (see note)
1/3 cup chopped fresh cilantro
1/3 cup sugar (optional, depending on sweetness of tomatoes)
1 1/4 cups apple cider vinegar (see note)
16 ounces tomato sauce (NOT optional - necessary for safe canning/proper pH)
12 ounces tomato paste (optional if you want a thicker salsa)

Steps:

  • Combine all the ingredients in a large pot and bring to a boil. Reduce the heat and simmer for 10 minutes, stirring often.
  • Fill sterilized pint-size canning jars within 1/2-inch of the top. Wipe the rim of the jar clean and seal with a lid and ring.
  • Process in a water or steam bath canner for 15 minutes (add 5 minutes if you live at 1,001 to 3,000 feet; add 10 minutes for 3,001 to 6,000 feet; add 15 minutes for 6,001 feet to 8,000 feet).
  • Remove the jars carefully from the water or steam bath and let cool to room temperature. Check to make sure the jars have sealed correctly (lightly press the top of the lid; it should be firm - if the center bubbles up and down when you press on it, it hasn't sealed correctly and will need to be refrigerated or re-processed).

EASY BAKED SALSA CHICKEN AND RICE

Easy Baked Salsa Chicken and Rice image

This Easy Baked Salsa Chicken and Rice is a super easy Mexican-inspired weeknight meal made in only one pan! On the table in about 30 minutes!

Provided by Chrissie

Categories     Chicken     Dinner     Main Course     Meal Prep

Number Of Ingredients 9

1 tablespoon olive oil
4 chicken breasts ((about 3 oz each))
1 tablespoon low sodium taco seasoning
2 bell peppers ((I use red and green) chopped)
1 1/4 cup long grain white rice
3 cups low sodium chicken stock
1 1/2 cups fat free salsa
1/2 cup shredded cheddar cheese
chopped cilantro and sliced jalapenos for serving (optional)

Steps:

  • Preheat your oven to 375 degrees Fahrenheit.
  • Heat a large oven-safe skillet over high heat and add the olive oil.
  • Sprinkle the 4 chicken breasts with the taco seasoning on both sides and sear the chicken in the pan on both sides. The chicken breasts will only need about 2 minutes per side over high heat - the idea is not to cook the chicken through, but just to develop some flavour on the outside of the chicken and in the pan. (Feel free to skip this step to save time - see recipe notes)
  • Turn off the heat under the pan. Remove the chicken breasts to a plate and add the chopped bell peppers, rice, and chicken stock to the pan, stirring everything together.
  • Add the chicken breasts back in, nestling them into the rice mixture.
  • Spoon the salsa over top of the chicken breasts and then top them with the shredded cheese.
  • Add the whole pan to the oven, uncovered, for about 25-35 minutes, or until the rice is cooked and the chicken is cooked through to an internal temperature of 165 degrees Fahrenheit or 74 degrees Celsius. (Because pans and oven temperatures vary, this can affect baking time. Use an instant-read thermometer for best results).
  • Once the chicken and rice are cooked through, remove the pan from the oven and serve with a sprinkling of fresh cilantro, some sliced jalapenos (optional), and even a dollop of sour cream, if desired.

Provided by Jeanine Donofrio

Categories     Appetizer     cooking component     Snack

Number Of Ingredients 9

¼ white onion (rinsed, dried, and coarsely chopped)
1 garlic clove (chopped)
1 pound Roma or other small tomatoes (cut into large chunks)
1 jalapeño (chopped (seeds removed, optional))
¼ cup cilantro
Juice and zest of 1 lime
½ teaspoon sea salt
¼ teaspoon cumin
Pinch of sugar

Steps:

  • In a food processor, combine the onion and garlic. Pulse until well chopped.
  • Add the tomatoes, jalapeno, cilantro, lime juice, lime zest, salt, cumin, and sugar. Pulse until combined but still chunky.
  • The consistency of this salsa varies depending on the water content of the tomatoes. If it's too watery, strain half to remove some of the liquid. Combine the chunky strained mixture with the remaining salsa. If you still prefer a chunkier texture, strain out more of the liquid to reach your desired consistency.

RESTAURANT-STYLE SALSA

Restaurant-Style Salsa image

Food Network's Ree Drummond shares her recipe for homemade restaurant-style salsa that the whole family will love!

Provided by Ree Drummond : Food Network

Categories     condiment

Time 1h15m

Yield 12 servings

Number Of Ingredients 10

Two 10-ounce cans diced tomatoes and green chiles, such as Rotel
One 28-ounce can whole tomatoes with juice
1/2 cup fresh cilantro leaves (or more to taste!)
1/4 cup chopped onion
1 clove garlic, minced
1 whole jalapeno, quartered and sliced thin, with seeds and membrane
1/4 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon sugar
1/2 whole lime, juiced

Steps:

  • Combine the diced tomatoes, whole tomatoes, cilantro, onions, garlic, jalapeno, cumin, salt, sugar and lime juice in a blender or food processor. (This is a very large batch. • Refrigerate the salsa for at least an hour before serving.

  • Add all ingredients (except optional corn and beans) to the canister of a blender or food processor in the order listed. Pulse or blend on high power until texture is as smooth as desired. If you have a very strong blender, you probably don’t need to pre-chop the ingredients before adding them to the blender, but I do just to make sure I don’t get large random, accidentally unblended chunks of any one ingredient.
  • Transfer to airtight container and serve immediately with chips. However, I prefer to refrigerate salsa for 1 day prior to serving because I prefer chilled salsa and because the flavors marry, mellow, and the flavor improves on the second and third day. Salsa will likely keep up to 1 week airtight in the fridge; however, we’ve always eaten a batch within 3 days.
