Sweet & Savory Pineapple Chutney image

A little snap from cayenne brightens the taste of this chutney. An old recipe from the Chicago Tribune. Cooking time is approximate.

4 cups canned crushed pineapple, well drained
2 cups brown sugar, packed tightly
2 cups cider vinegar
1 teaspoon salt
1 cup green bell pepper, seeded and chopped
1 cup seedless raisin
1 cup slivered almonds
1 teaspoon ground ginger
1/2 teaspoon garlic powder
1/2 teaspoon cayenne pepper

Steps:

  • Combine pineapple, sugar, vinegar and salt in a large saucepan.
  • Heat to boil; simmer gently, stirring frequently for 25 minutes.
  • Stir in remaining ingredients.
  • Cook slowly, stirring often, until mixture thickens.
  • Ladle into sterilized hot jars, leaving 1/4 inch headspace.
  • Seal; process in water bath canner for 10 minutes.

APPLE CHUTNEY

6 Granny Smith apples, peeled, cored and half-inch diced
1 cup chopped yellow onion
2 tablespoons minced fresh ginger
1 cup freshly squeezed orange juice (2 oranges)
3/4 cup good cider vinegar
1 cup light brown sugar, lightly packed
1 teaspoon whole dried mustard seeds
1/4 teaspoon hot red pepper flakes
1 1/2 teaspoons kosher salt
3/4 cup raisins

Steps:

  • Combine the apples, onion, ginger, orange juice, vinegar, brown sugar, mustard seeds, pepper flakes and salt and in a large saucepan. Bring the mixture to a boil over medium-high heat, stirring occasionally. Reduce the heat to simmer and continue cooking, stirring occasionally, for 50 minutes to 1 hour, until most of the liquid has evaporated. Take off the heat and add the raisins.
  • Set aside to cool and store covered in the refrigerator for up to 2 weeks.

  • Combine vinegar and sugar in large saucepan.

  • Strain pineapple and set aside, return juices to pan.
  • Add chile, ginger and spices to pan.
  • Simmer and reduce au nape.
  • Mix spiced syrup with pineapple.
  • Refrigerate immediately.

3 red onions , finely chopped
1 tbsp yellow mustard seeds
1 tbsp black onion seeds (kalonji or nigella)
1 tsp turmeric
2 pineapples peeled, cored and chopped into small chunks
1 red chilli , deseeded and finely chopped
thumb-sized piece ginger , finely chopped
250g soft light brown sugar
175ml cider vinegar

Steps:

  • Heat the oil in a large heavy-based pan. Tip in the onions and spices and cook for 5 mins until fragrant. add the rest of the ingredients plus 1 tsp salt and simmer for 1 hr until dark golden and thick. Pour into sterilised jars and allow to cool before covering.

3 cups prepared juice (buy 2 medium fully ripe pineapples)
6-1/2 cups sugar, measured into separate bowl
1/2 tsp. butter or margarine
2 pouches CERTO Fruit Pectin

Steps:

  • Bring boiling-water canner, half full with water, to simmer. Wash jars and screw bands in hot soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain jars well before filling.
  • Pare and finely chop or grind pineapples. Place three layers of damp cheesecloth or jelly bag in large bowl. Pour prepared fruit into cheesecloth. Tie cheesecloth closed; hang and let drip into bowl until dripping stops. Press gently. Measure exactly 3 cups juice into 6- or 8-qt. saucepot.
  • Stir sugar into juice in saucepot. Add butter to reduce foaming. Bring mixture to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly. Stir in pectin. Return to full rolling boil and boil exactly 1 min., stirring constantly. Remove from heat. Skim off any foam with metal spoon.
  • Ladle immediately into prepared jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with two-piece lids. Screw bands tightly. Place jars on elevated rack in canner. 1/2 cup honey
1/2 cup white wine vinegar
2 and 1/2 cups pineapple (chopped)
2 teaspoons curry powder
1/2 teaspoon ground ginger

Steps:

  • Gather the ingredients.
  • In a heavy saucepan, combine the onion, honey, vinegar , pineapple, curry powder, ginger, salt, and red pepper flakes and mix well.
  • Put the pan on the stovetop and cook over high heat until the mixture comes to a full rolling boil, stirring frequently.
  • Reduce the heat to low and cook the chutney, stirring occasionally so the food doesn't burn, until the pineapple is tender and the mixture is thickened, about 20 to 30 minutes.
  • Take the pan off the heat and cool the chutney completely. Then stir well and decant into another container with a tight lid. Refrigerate the chutney for up to four days or freeze up to three months.

1 tablespoon cumin - toasted and ground
1/2 cup rum
1 pineapple- diced
1/2 juice of fresh lime

Steps:

  • In saucepan over medium heat, saute onions, ginger, jalapenos, and ground cumin for 6 minutes. Then add rum. Cook until almost all of the liquid has evaporated then add pineapple, lime juice and sugar. Bring to a simmer and turn off the heat. Add fresh cilantro, salt and freshly ground pepper to taste.

My son just gave me 5kg (11lb) nectarines, so I made three times this recipe. It took a bit longer for the larger amount to thicken, but it eventually cooked up beautifully. It's a sweetish chutney that will go super well with pork and poultry.

2 cups packed light brown sugar
1 cup white vinegar
2 1/2 lbs ripe yellow nectarines, peel on and cut into 1/2-inch dice
1 (8 ounce) can crushed pineapple in juice (not heavy syrup)
1 cup golden raisin
3 fresh garlic cloves, minced
1 inch piece fresh gingerroot, peeled and finely grated
1 teaspoon salt
1/2 teaspoon ground cloves
1 teaspoon red chili pepper flakes
1/2 cup sliced almonds

Steps:

  • Place the sugar and vinegar in a large, nonreactive saucepan and bring to a boil over high heat. Boil for 10 minutes.
  • Add the nectarines, pineapple and juices, raisins, garlic, ginger, salt, chili flakes and cloves, and stir to combine. Bring the mixture to a boil, then reduce the heat to maintain a slow simmer. Cook until the chutney is thick, stirring frequently to keep the mixture from scorching or sticking, 60 to 90 minutes.
  • Remove from the heat and stir in the nuts. Pour the hot chutney into hot, sterilized glass jars. Seal tightly, following standard hot-pack canning procedures. Cool completely, then store out of direct light for up to 1 year. Once opened, refrigerate the chutney.

  • Heat oil in heavy large pot over medium-high heat. Add red onion and bell peppers and sauté until onion begins to soften, about 8 minutes. Add jalapeño chilies and curry powder; stir 2 minutes. Add pineapple cubes, orange juice, apple cider vinegar, and golden brown sugar. Bring to boil. Reduce heat to medium and simmer mixture until thick and reduced to about 7 1/2 cups, stirring often, about 1 hour 10 minutes. Season chutney to taste with salt and pepper. 1/2 cup sugar
1/2 medium red onion, diced
1 1/4 cups diced mango
1 1/2 cups diced golden pineapple
1 Granny Smith apple, peeled, cored, and diced
1 Asian pear, peeled, cored, and diced
3/4 cup diced papaya
1 tablespoon ground allspice
1/4 cup peeled and finely chopped ginger
2 tablespoons Caribbean hot sauce (your favorite)
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
3 tablespoons allspice berries, toasted
1 cup apple cider vinegar or white wine vinegar

Steps:

  • In a large bowl, combine all of the ingredients except the allspice and the vinegar. Allow to stand for 30 minutes.
  • Meanwhile, toast the allspice berries in a small saucepan until they just begin to smoke. Add the vinegar, bring to a simmer, and reduce to 1/4 cup. Strain, and discard the allspice berries.
  • Combine the reduced vinegar with the fruit mixture in a large heavy saucepan and simmer over medium heat, stirring occasionally, for 20 to 30 minutes until the liquid is almost syrupy. Refrigerated, this will keep for up to 3 months.

150g caster sugar
1 small pineapple , trimmed, peeled and diced
2 small red onions , very finely chopped
2 red chillies , finely chopped (leave the seeds in if you like it hot)

Steps:

  • Bring the vinegar and sugar to a simmer in a big pan. Tip in the pineapple for 1-2 mins, then remove from the heat and tip into a serving bowl. When almost cool, stir in the onions and chilli. Cool completely, then chill (for up to 24 hrs) until ready to serve.

20 ounces canned crushed pineapple (with juice)
1/4 cup sugar
2 tablespoons apple cider vinegar
1 tablespoon corn syrup
2 tablespoons candied ginger, minced
1/4 cup dried cranberries

Steps:

  • Drain pineapple and combine juice with sugar and vinegar.
  • Boil the mixture down to 1/2 cup.
  • Stir in pineapple, corn syrup, ginger, and cranberries and chill.

4 jalapenos, seeded and chopped
3 1/2 cups canned pineapple chunks (drain and reserve syrup)
1 1/2 cups white vinegar
1 cup firmly packed brown sugar
1 teaspoon salt
1/2 cup golden raisin
2 tablespoons candied ginger, finely chopped
2 garlic cloves, crushed

Steps:

  • Add the reserved pineapple syrup to a saucepan; add the peppers, vinegar, brown sugar, salt, raisins, gingerroot and the garlic and bring to a boil; reduce heat and simmer for 10 minutes.
  • add the pineapple chunks and simmer for about 30 minutes or until thick.
  • You can process and can in the usual way (boiling prepped jars), or just 'keep' in the refrigerator in a covered, airthight container. I have kept this for up to 2 months in the refrigerator without a problem.
