SOUR CREAM AND ONION MASHED POTATOES
Friendsgiving means your mom won't yell at you for eating potato chips for dinner. These creamy mashed potatoes are loaded with sour cream and caramelized onions, then covered in potato chips for plenty of crunch. For even creamier potatoes, whip them with a hand or stand mixer, then serve with even more whole potato chips, for dipping.

Steps:
- In a stockpot or pasta pot, bring about 2 gallons of water to a boil with a palmful of salt and a splash of oil.
- Meanwhile, set a large frying pan over high heat, then coat the bottom of the pan with oil. Add the onions with a pinch of salt and cook, working in batches if necessary, until browned, about 2 minutes. Return all the onions to the pan, then turn the heat to medium-low and cover. Continue to cook, stirring frequently, until the onions have turned a deep golden color, about 20 minutes.
- Peel the potatoes and cut into 1-inch chunks. When the water has come to a full boil, add the potatoes. Cook, uncovered, until easily pierced with a fork, about 15 minutes. Drain and return to the pot.
- Using a potato masher or large whisk, begin to break down the potatoes. Add the sour cream, milk and butter and continue to mash until the desired consistency is reached. Season to taste with salt. Add the caramelized onions and chopped chives and mix well. Place in a large serving bowl and cover with foil to keep warm. Sprinkle with additional chives and crushed potato chips right before serving.

Stir all the ingredients together and scatter over the remaining chives. If you are not eating it straight away store it covered in plastic wrap in the refrigerator.
- When the potatoes are ready with a crisp skin and soft inside, remove them from the oven, take them off the skewers and cut a cross in the top of each of them and slightly squeeze them so they open out and place them into bowl. - Place an oven rack on the center shelf, and preheat the oven to 425 degrees F. Line a baking sheet with aluminum foil. Using a fork, prick numerous holes all over the potatoes, and rub with the olive oil. Bake until the skins are crisp but the potatoes are tender when gently pressed, approximately 55-60 minutes.
- Once the potatoes are cool enough to handle, slice in half lengthwise using a serrated knife or sharp chef’s knife, taking care to avoid tearing the skin away from the sides (the potatoes will be used as cups to hold the filling).
- Scoop the potato flesh into a medium-sized bowl. Add the sour cream, butter, green onions, rosemary, thyme, salt and pepper, using a spatula or potato masher to combine. Taste and adjust seasoning if desired.
- Scoop the filling into 4 of the 8 potato skins (discard or save the remaining skins). Don’t pack too tightly to avoid breaking the skins.

Turn off the oven and return the skillet with the potatoes to the oven, leaving the door ajar, while you prepare the onion.
