The basic classic: bacon, lettuce, and tomato -- nothing fancy, just delicious. (I personally use fake vegetarian bacon these days, and it's still really good!)

Steps:
- Cook the bacon in a large, deep skillet over medium-high heat until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate.
- Arrange the cooked bacon, lettuce, and tomato slices on one slice of bread. Spread one side of remaining bread slice with the mayonnaise. Bring the two pieces together to make a sandwich.

BLT PASTA
Steps:
- Boil water for pasta and line a plate with paper towel: Bring a large pot of salty water to a boil. Line a plate with paper towels and set it aside for later use.
- Season the tomatoes: Place the tomatoes in a medium bowl and season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Toss to combine. Taste the tomatoes and if they need additional sweetness, add a pinch of sugar and toss again.
- Combine sundried tomatoes and cheese: Into the bowl with the quartered tomatoes, add the sundried tomatoes and mozzarella.
- Cook the bacon in batches: In a large skillet over medium-high heat, add the bacon in a single layer, being sure not to crowd the pan. Work in batches to cook all of the bacon. Cook, flipping once or twice, until crispy, 5-8 minutes total. Remove the cooked bacon to the plate lined with paper towels. Reserve 3 tablespoons of the bacon fat. Pour it into a small heat-proof bowl. You will use it later to flavor the pasta and salad dressing.
- Crumble the bacon: Using your hands, crumble or tear the bacon into bite-sized pieces over the bowl of tomatoes and cheese.
- Cook the pasta: Cook the pasta until al dente, according to the package instructions. When the pasta is done, drain it in a colander. Transfer it to a large mixing bowl. Drizzle in 3 tablespoons of olive oil and 2 tablespoons of the reserved bacon fat. Season with the remaining 1/2 teaspoon of salt and remaining 1/4 teaspoon of pepper. Toss well. Add the tomato-bacon mix and stir to combine, then taste the pasta and add more salt and pepper if necessary.
- Make the salad dressing and dress arugula: In a small jar with a lid, combine the lemon juice, remaining 1 tablespoon olive oil, and remaining 1 tablespoon of the reserved bacon fat. Season with salt and pepper to taste and shake well. Taste and adjust seasonings as necessary. Put the arugula into a medium bowl and toss it with the dressing.
- Serve: Divide the pasta between six plates and pile a handful of dressed greens on top of each serving.

- Bring a large pot of salted water to a boil. Cook pasta according to package directions, about 12-13 minutes. Drain and rinse with cool water. Set aside.
- To make the dressing, in a medium bowl, whisk to combine mayonnaise, buttermilk, ranch seasoning mix and 2 tablespoons parsley. Set aside.
- In a large bowl, toss to combine tomatoes, lettuce, 3/4 of the cooked bacon, scallions, salt and pepper. Drizzle in 1/4 cup dressing and toss to coat. Use a small spoon and fill the shells with the salad.
- To garnish, drizzle the dressing over the shells and top with 1 tablespoon chopped parsley and remaining chopped bacon.

SOFT-SHELL CRAB BLTS
How do you make a BLT even better? Top it with a soft-shell crab! Around here, the crab is fried in a batter made with Old Bay Seasoning, invented in Baltimore.

Steps:
- Stir together the mayonnaise, mustard, horseradish, lemon juice, hot sauce and Worcestershire sauce in a small bowl. Refrigerate until ready to use.
- Cook the bacon in a large skillet over medium-high heat, turning, until browned and crisp, 6 to 8 minutes. Remove to a paper towel-lined plate and break the slices in half.
- Whisk the flour and 1 tablespoon Old Bay in a shallow bowl. Season the crabs with salt and pepper, then dip the crabs in the seasoned flour to coat on both sides.
- Melt the butter in a large skillet over medium-high heat until foamy. Immediately add the crabs and cook, turning, until browned and cooked through, 5 to 7 minutes. Remove to a paper towel-lined plate and sprinkle with more Old Bay.
- Assemble the sandwiches: Spread some of the mayonnaise mixture on 4 slices of toast. Top each with lettuce, tomato, some bacon and a crab. Spread the remaining mayonnaise mixture on the 4 other slices of toast and place on top of the sandwiches. Gently press down on each sandwich and cut in half. Serve with pickles.
LOBSTER BLTS
Steps:
- Bring a medium pot of water to a boil. Add the lobster tails and boil until the shells are bright red and the lobster is just cooked through, about 7 minutes. Drain and submerge in a bowl of ice water to cool.
- Using kitchen shears, remove the shells by the underside down the middle and then cutting the top. Pull out the meat, rinsing or wiping off any residual shell fragments, and dice into 1/2-inch pieces.
- Put the bacon in a cold, large skillet and cook over medium heat, turning occasionally, until crisp and browned, 10 to 12 minutes. Drain on a paper-towel-lined plate.
- In a medium bowl, stir together the 1/3 cup mayonnaise, shallots, celery, capers, vinegar and lemon zest and juice. Fold in the diced lobster. Add salt and pepper to taste.
- Lay out the bread slices on a work surface and spread each with 1/2 tablespoon mayonnaise. Top half of the slices with 2/3 cup lobster salad, 2 slices bacon and 2 tomato slices. Season the tomatoes with salt and pepper. Top with a piece of lettuce and cover with the remaining bread slices.
- Slice the sandwiches in half, securing each half with a frilly toothpick.
GRILLED OR SAUTEED SOFT SHELL CRAB BLT
Steps:
- If grilling, brush the crabs lightly with blended olive oil, and season with salt and pepper. If sauteing, season the crabs with salt and pepper, and dredge lightly in flour. Cook the crabs for about 3 minutes per side over medium heat. Set aside and keep warm. Place the toasted brioche in the center of a plate and cover it generously with Basil Mayonnaise. Layer the arugula leaves, tomato slices, and warm pancetta, in that order, on top of the brioche. Top with the warm crabs and squeeze more Basil Mayonnaise over the plate and the crabs. Garnish with rosemary, and serve with shoestring potatoes or chips.
- Place the egg yolks, water, and basil in the bowl of a food processor. Turn on the processor and slowly add the oil through the feeding tube. Add salt and pepper, to taste. If the mayonnaise is too thick, add a little water. Transfer Basil Mayonnaise to a squeeze bottle and refrigerate.
LOBSTER BLTS
Steps:
- Preheat the oven to 400 degrees F. Place a baking rack on a sheet pan and lay the bacon on the rack in a single layer. Roast the bacon for 15 to 20 minutes, until browned. Transfer to a plate lined with paper towels and set aside.
- Meanwhile, for the dressing, whisk together the mayonnaise, ketchup, relish, 1/4 teaspoon salt, and 1/8 teaspoon pepper in a medium bowl and set aside. Slice the avocados crosswise 1/4 inch thick, place the slices in a bowl with the lemon juice, toss gently, and set aside.
- To assemble, place 4 slices of toast on a board and slather them generously with the dressing. On each sandwich, place first a lettuce leaf, then a layer of avocado, then a slice of tomato. Sprinkle generously with salt and pepper. Cut a slice of bacon in half and place both halves on the tomato. Top with a quarter of the lobster. Generously spread more sauce on the remaining 4 slices of toast and place them, sauce side down, on the sandwiches. Serve immediately.
