BACON-BLEU CHEESE BALL
A zesty bleu-cheese, bacon, and onion cheese ball. Best served with multi-grain crackers. The recipe I reworked for this cheese ball called for 1 pound of bacon fried, drained, and crumbled. I didn't have time for all that, so used the bacon bits and found them at least as good and less mess. Make sure your cream cheese is really soft, or else it is a little hard to mix well. This Cheese Ball is a holiday must ever year! It's incredibly easy to make and it only requires a few simple ingredients. It has a deliciously creamy texture, it's brimming with rich and cheesy flavor, and who doesn't love that nutty pecan finish for a contrasting crunch?

Steps:
- Add cream cheese, sour, garlic powder and onion powder and pepper to a medium mixing bowl. Mix with an electric hand mixer until smooth.
- Mix in cheese (with electric mixer). Cover bowl and chill 1 hour to help firm it up.
- Shape into a ball using a spatula then with greased hands.
- Place pecans in a medium bowl. Roll cheese ball through pecans to cover entirely.
- Serve with crackers, using a butter knife for spreading. Store in refrigerator.

- In a large bowl, with an electric mixer, beat cream cheese with cheddar, mustard, Worcestershire sauce, and a generous pinch of pepper until well combined. Mix in 1/4 cup pecans. Cover cheese mixture with plastic wrap, and chill at least 2 1/2 hours or up to overnight.
- Divide the cheese mixture in half, and shape each half into a ball. Spread remaining 3/4 cup pecans on a plate, and roll balls in pecans to coat completely, pressing nuts to adhere. Serve chilled.

- Place the bacon in a medium skillet and heat over medium heat. Cook the bacon until almost entirely crispy, about 10 minutes. Add the shallots and cook for an additional 2 minutes. Using a slotted spoon, scoop the bacon mixture into a medium bowl. Add the cream cheese and gorgonzola and mix well with a rubber spatula. Using a 1-tablespoon ice cream scoop, scoop little balls of the cheese mixture and roll them between your palms to smooth. Place on a plate, cover and refrigerate for at least 1 hour.
- When ready to serve, allow the balls to sit at room temperature for 5 minutes. Mix together the pretzels and chives in a small bowl. Roll the truffles in the crushed pretzel mixture and serve.
