Steps:
- Pre-heat the oven to 220C/200C Fan/Gas 7. Put the broccoli in a pan with the sauce and fish, cover and simmer gently for 6 minutes.
- Add the sweetcorn, season, then put in a pie dish. Dampen the edge of the dish. Lay the pastry on top and trim to make a lid. Pierce a hole in the middle.
- Bake for 20 minutes or until the pastry is golden.

We eat this almost every week. Ommit the cheese for a lighter sauce. I use a blender to make the breadcrumbs. Serve with Lemon and Dill Potatoes - Recipe #159786 and peas.

Steps:
- Poach the fish in the milk for approximately 15 minutes or until cooked.
- Remove the fish from the liquid and flake into a baking dish reserving the liquid for the sauce.
- Boil the broccoli for 3 minutes, you don't want it too soft.
- Drain and stir into the fish.
- Mix a little milk or water into the cornflour and add to the reserved liquid.
- Cook until the sauce thickens, stirring constantly. Add more milk if too thick.
- Stir in the cheese until melted.
- Add salt and pepper to taste.
- Pour the sauce over the fish and broccoli.
- Cover with the breadcrumbs.
- Cook at 170c for 30 - 45 minutes or until the breadcrumbs are brown.

- Pre-heat the oven to 220C/200C Fan/Gas 7. Put the fish in an ovenproof dish with the veg, bay leaf and parsley stalks. Season and add 400ml of the milk and fish stock. Cover and bake for 20 minutes or until the fish flakes easily. Remove from the oven and leave to infuse for 20-30 minutes.
- Peel and cut the potatoes into even-sized pieces. Cook in boiling water until tender. Drain, return to the pan, cover and heat gently for 1 minute to dry. Heat the remaining milk with 50g of the butter until hot but not boiling. Add to the cooked potatoes, then mash and set aside.
- Break the fish into large pieces, Discard the skin and bones. Strain the milk and reserve. Put the fish in a baking dish with the prawns.
- Mix the remaining butter with the flour to make a paste. Heat the strained milk, adding the paste a bit at a time, whisking, until the sauce simmers and thickens. Stir in the parsley and pour over the fish.

- Put all but 2tbsp of the milk, the onion, bay leaves and peppercorns in a pan and bring to the boil. Take off the heat immediately and set aside.
- Meanwhile, put the potatoes in a pan of water and bring to the boil. Simmer for 15-20 mins until tender. Drain and leave to stand for 5 mins.
- Return the potatoes to the pan with 20g of the butter, the mustard, lemon zest and the remaining 2tbsp milk. Mash until smooth. Put in a piping bag with a large star attachment.

- Cut the broccoli into short lengths, add to a pan of boiling water and simmer for 4 minutes. Drain, rinse with cold water and drain again.
- Put the fish fillets and mushrooms in a pan with the milk, bayleaf and onion. Partially cover, heat and simmer very gently for 5 minutes. Leave to cool.
- Meanwhile, boil the potatoes until tender. Drain, return to the pan and stand over a very low heat for a few seconds to dry out. Mash with the fromage frais and Parmesan. Set aside.
- Discard the onion and bay leaf. Lift out the mushrooms and fish and discard any skin and bones. Break the fish into large flakes, and put into a 2-litre pie dish with the mushrooms, broccoli and prawns.
