- Add ice; shake vigorously until blended. Strain into margarita glasses.
GINGER BEER MARGARITA

- Combine the tequila, lime zest, lime juice, orange juice and a few ice cubes in a cocktail shaker and shake for 10 seconds. Pour into a rocks glass over ice. Taste, and stir in some simple syrup if you'd like it sweeter. Top off with the ginger beer and garnish with a lime wedge.

- Gather the ingredients.
- In a cocktail shaker, muddle the lime juice, simple syrup, and ginger.
- Add the tequila and pineapple juice, then fill the shaker with ice.
- Shake vigorously .
- Fine-strain (pour through the cocktail strainer and a fine-mesh strainer to catch most of the ginger) into an old-fashioned glass filled with fresh ice.
- Garnish with a lime wedge. Serve and enjoy.

- Combine the sugar and water in a small saucepan over medium heat. Once all the sugar has dissolved and the mixture is transparent, add the jalapeño slices. Reduce heat to low and simmer for 20 minutes. Strain the syrup into an airtight container and let it come to room temperature uncovered. Put the lid on and store in the fridge.
- Prepare your glass. Pulse the crystallized ginger chips and Himalayan salt in a food processor until a good portion of the ginger chips and salt is ground into a fine dust. There will be a mix of coarse and fine. I used both on my rim but you can sift it if you want to use only the fine powder. Put the mix onto a small plate.
