- Combine all spices/dry ingredients in a bowl and mix well.
- Spread the spice mixture onto a flat plate.
- Press the fish fillets firmly into the spices, coating both sides.
- Heat the olive oil until almost smoking in a large heavy skillet.
- Cook the fish about 2 1/2 minutes on each side for fillets less than 3/4 inch thick.
- Increase time slightly for thicker fillets.

Steps:
- Sprinkle fish on both sides with Cajun seasoning.
- Heat oil in a large nonstick skillet over medium high heat. Add half of the fillets and cook until lightly browned, about three minutes.
- Turn and cook until just opaque, two to three minutes longer.
- Transfer to plate and repeat with remaining fillets.
- Meanwhile, combine salsa and cilantro. Serve the fish topped with this.

TAQUERIA GREEN SALSA (SALSA VERDE)
This is not like the tex mex green salsa you encounter at big chains that contain avacados or tomatillos. This is a more of a taqueria style sauce that you find in local mexican meat markets. I liked the sauce so much that I asked the waitress at a taqueria if she knew how to make it and she asked a person in the back and was fortunate enough to get an answer. It is VERY spicy.

Steps:
- Cut the stems off the jalapenos and throw them in a small pot.
- Remove seeds if you don't want it as spicy.
- Add peeled garlic.
- Add a small amount a water, about 1/4 cup or a little more to get a steam effect.
- Place on stove at a low medium heat to get it steaming for about 15 minute.
- Add contents to a blender and add oil and blend until smooth.
- Add salt to taste.
- You may need to adjust salt, water, and chicken cubes to suit the taste because jalapenos are not all uniform in taste depending on the season.
- I used olive oil but I doubt a mexican restaurant uses olive oil.

BROILED PARMESAN TILAPIA (LOW-CARB)

Steps:
- Set oven to broiler heat.
- Grease a broiler pan, then line with foil and grease the foil slightly.
- In a small bowl mix together Parmesan cheese, butter, mayo, lemon juice and garlic.
- Add in all the remaining seasonings and salt if using; mix well and set aside.
- Arrange the fillets in a single layer on the prepared pan (you sprinkle salt on fish but it is not necessary).
- Broil a few inches from the heat for about 2-3 minutes.
- Turn the fish over and broil a couple minutes more.
- Remove from oven and cover them with the Parmesan mixture on the top side only.
- Return to oven and broil for about 2 minutes more or until the topping is browned and the fish flakes easily (do not overcook the fish!).

This tamale preparation will work with any type of filling, i.e., chicken, beef. The filling also works well in empanadas, tacos, sopes and quesadillas.

- For the Tamale Dough:.
- In a mixer add corn flour, water, baking powder, salt, butter and shortening. Mix at medium speed for about 3 minutes until mixture becomes light and fluffy.
- Spread 2 ounces of tamale dough on each corn husk and place 1 1/2 ounces of pork filling in the center of each. Fold corn husk and place into a steamer for 1 hour. Allow time to rest and serve warm.
- For the Roast Pork with Salsa Verde Filling:.
- Heat medium-sized roasting pan, add vegetable oil, and add pork which has been cut into cubes about 2 inches by 2 inches and seasoned on all sides with salt and pepper.
- Sear pork to a golden brown on all sides.
- Add salsa Verde and chicken broth. Cover and place in a 300-degree oven for about 1 1/2 hours, or until meat is very tender.
- Remove pork from liquid and cool.
- Pull meat, shredding it into small pieces, then brown lightly in a sauté pan and add cooking liquid. Season to taste.
- For the Salsa Verde:.
- In a medium pot bring 3 quarts of water to a boil, then add tomatillos, onions, jalapenos and garlic. Simmer for 5 minutes and drain.
- Place ingredients in a blender with cilantro, lime juice and salt; puree.
- Return pureed mixture to sauce pot and simmer gently for 15 minutes. Adjust seasoning as needed.
