8 -10 ounces salmon steaks
3/4 lb unsalted butter (olive oil works better)
1 tablespoon sweet paprika
1/2 teaspoon salt
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon ground cayenne powder
3/4 teaspoon white pepper
3/4 teaspoon ground black pepper
1/2 teaspoon dried thyme leaves
1/2 teaspoon dried oregano leaves

Steps:

  • Each steak works best if it is about 3/4 inches thick, especially when using a cast iron skillet. Coat each stake with the butter (or olive oil) and let sit while the rest of the butter/olive oil heats up in the pan. After about 10 minutes, coat each stake on both sides with the seasoning mix and let it cook for around 2 minutes uncovered. Afterwards, flip it over and cook the stakes until they are a nice pink color inside. The time that it takes to cook each stake determines on how large they are.

1 teaspoon cracked black pepper

2 tablespoons salt

Four 6-ounce portions skinless and boneless salmon fillets
1/4 cup white wine
1/2 cup heavy cream
3/4 cup blue cheese crumbles

Steps:

  • Preheat oven to 400 degrees F.
  • In a small bowl, combine the Italian seasoning, black pepper, paprika, salt, and cayenne. Season each piece of fish with the rub.
  • Heat a large skillet over medium-high heat and add the butter and oil. Once the butter has melted, add the fish and cook about 2 minutes per side.
  • Transfer the whole pan to the oven and cook for another 4 to 6 minutes.
  • For the sauce:
  • Place the white wine into a medium saucepan and reduce by half. Add the heavy cream and allow to reduce. Add the blue cheese and whisk until smooth. Serve on top of the salmon.

2 pounds cleaned spinach
2 tablespoons olive oil

1 tablespoon garlic chopped in olive oil
1/4 tablespoon paprika
1 tablespoon chopped fresh parsley
2 tablespoons blackened red fish mix
2 tablespoons olive oil
1 tablespoon grated Parmesan cheese
8 (10-ounce) salmon fillets

Steps:

  • For the Dijon sauce, saute on medium heat 1/4 teaspoon chopped fine shallots and 1 tablespoon butter. Then add 1/4 cup white wine, Dijon mustard and a pinch of paprika. Simmer for 3 minutes.
  • For the balsamic sauce, saute on medium heat 1/4 teaspoon chopped fine shallots 1 tablespoon butter. Then add balsamic vinegar, veal stock and 1/2 teaspoon fresh rosemary chopped, if desired. Bring to a boil and reduce by 1/2 or until it coats back of spoon.
  • Put 2 tablespoons olive oil and 3 cloves of garlic (peeled) into a hot saute pan and saute until brown and then add 2 pounds cleaned spinach.
  • Mix all blackened mixture ingredients together in a blender. Coat salmon fillets with mixture. Saute on each side 3 to 4 minutes over high flame. Place in a preheated 400 degree oven 6 to12 minutes, or to your liking. Serve with sauces and spinach.

Four 8-ounce portions wild salmon, skin on, pin bones removed
Kosher salt
1/2 teaspoon cayenne pepper

1 large bunch Tuscan kale, (about 12 ounces) stemmed and torn into bite-size pieces
4 large garlic cloves, minced

Grated zest and juice from 1 large lime

Steps:

  • Preheat oven to 400F. Set an oven rack in the lower-middle position.
  • Prepare the salmon: Use 1 tablespoon of the olive oil to grease the bottom of a rimmed sheet pan. Place the salmon, skin side down, on a flat surface and season with salt. In a small bowl, mix together the cayenne pepper, paprika, garlic powder, and mustard and set aside. Sift an even layer of the spices over the salmon and arrange filets skin side down, on the baking sheet, with space between each.
  • Prepare the kale: In a medium bowl, massage the kale with the remaining 3 tablespoons olive oil and the garlic. Arrange it all around (but not covering) the fish on the pan. Sprinkle the oregano on top of the salmon.
  • Cook the salmon: Place the pan in the lower-middle rack and roast for 10 to 12 minutes for medium to medium-rare salmon. (For well-done fish, leave in the oven an additional 5-8 minutes.) Remove the pan from the oven and sprinkle all of the lime zest and juice over the fish. Drizzle with honey. Serve immediately.

  • Put the potatoes in a saucepan; cover with cold water by 1 inch and season with salt. Bring to a boil, then reduce the heat to medium and simmer 8 minutes. Add the sour cream, 1 tablespoon butter and the reserved cooking water. Season with salt and pepper and smash.

CAJUN BLACKENED SALMON

Yet another recipe from my mother-in-law, who is probably the best cook that I personally know. This is, hands down, our favourite way to eat salmon in our house - and we eat a lot of it! The spice portion can be doubled and stored for later - I typically double or triple the recipe and store it in an airtight jar so that it is available whenever I want it.

2 tablespoons butter
1 tablespoon paprika
1 tablespoon salt
1 tablespoon onion salt

Steps:

  • 1. Cook Edamame as per package instructions (not required for Chickpeas).
  • 2. Grind cooked Edamame or Chickpeas into Falafel-like texture and spread out on paper plate to dry out (if cooked).
  • 3. Mix together all spices.
  • 4. Combine spices with Edamame or Chickpeas. Should feel like breadcrumbs.
  • 5. Coat Salmon with mixture and set aside for 30 minutes.
  • 6. Coat pan with a thin layer of oil and put over medium-high heat until oil is very hot, but not smoking.
  • 7. Drop Salmon in oil and cook for 2-4 minutes on each side (depending on filet thickness). Salmon should be blackened and crusty on the outside, flaky on the inside, and lightly cooked in the very middle.

1 tsp dried oregano
½ tsp cayenne pepper (or just a pinch if you want less heat)
1 tbsp soft light brown sugar
2 limes , zested, 1 juiced and 1 cut into wedges
1 garlic clove , crushed
3 tbsp olive or rapeseed oil
3 peppers , cut into chunks
2 red onions , peeled and cut into wedges
2 x 400g cans black beans , drained
850g side of salmon , pin-boned and scaled
3 small or 2 large ripe avocados
1 small, firm ripe mango
1 red chilli , finely chopped
small bunch coriander , chopped

Steps:

  • Heat oven to 200C/180C fan/gas 6. Mix the paprika, oregano, cayenne, sugar, lime zest, garlic and oil in a bowl with a good pinch of salt. Toss the peppers, onions and beans with half of the spice paste in a large roasting tin, then cook in the oven for 25 mins.
  • Remove from the oven and give the veg and beans a good mix. Lay the salmon on top, skin-side down, then brush over the remaining spice paste. Bake for a further 25 mins, until the salmon is cooked through.
  • Meanwhile, for the salsa, halve, stone and finely chop the avocados and mango. Mix with the lime juice, chilli, coriander and some salt. Serve the salmon, veg and beans with the salsa and lime wedges for squeezing over.

1 lb salmon fillet (preferrably fresh but frozen works well too! Just cook it alittle longer.)
blackening seasoning (I like Zatteran's found at most supermarkets)
olive oil

Steps:

  • Remove salmon from package and rub with blackening seasoning on skin free side.
  • Use just enough to cover the piece of fish but not so much that you can't see the pink behind the seasoning.
  • Heat grill pan on med heat and brush lightly with olive oil (very lightly) Place salmon skin side down on pan and cook on med heat until half of the salmon (from the bottom up) is opaque.
  • Flip salmon and remove skin (it will peel off very easily and usually in one piece- I place it in a small plastic bag and tie it before dropping it in the garbage can to reduce fishy odors) Cook another 5-8 minutes until the entire piece of fish is opaque and runs with a white milk like substance (healthy omega fatty acids) Serve immediately with rice or potato and veggie of your choice for a healthy meal that tastes like you're at a restaurant even when you cooked it yourself!

Blackened salmon is a perfectly easy, 20-minute salmon recipe coated in a rich homemade blackened seasoning.

3 tsp smoked paprika
2 1/2 tsp garlic powder
2 1/2 tsp onion powder
2 tsp dried thyme
2 tsp dried oregano
2 1/2 tsp coarse salt
1 1/2 tsp black pepper
2 tsp brown sugar
1/2 tsp cayenne pepper (more or less to taste)
4 skin on salmon filets that are 6-8 oz. each
2 tbsp unsalted butter
1-2 tbsp canola oil (for cooking)
4 lime wedges (for serving)

Steps:

  • Combine all the ingredients for the blackening seasoning in a bowl and whisk it well. Set aside.
  • Melt butter and set it aside as well.
  • Pat salmon fillets dry with a paper towel.
  • Set a large skillet (or another pan you with to use) on the stove over medium heat or just a little below medium heat. (Every stove is different especially comparing gas and electric, so you will know your stove best. Just don't set the heat higher than medium.) It will take about 5 minutes to preheat the skillet.
  • While the pan is preheating, season the salmon. Brush each salmon fillet with butter on top and sides and dip into the seasoning on top and the sides.
  • Spread oil in the preheated pan all over the bottom.
  • Place seasoned salmon into the pan flesh down and let it cook for 3-4 minutes.
  • Flip each filet skin side down and let it cook for 5-6 more minutes. (Thick fillets may take another minute or so.)
  • Take salmon out of the pan, let it rest for 5 minutes, and serve with lime wedges.
  • Total cook time will always depend on the thickness of salmon fillets. Salmon is considered fully cooked at 145° internal temperature but many people find it too well done. Personally, I prefer salmon at either medium or medium-well temperature, which is around 125°-130°.
  • You can also tell if salmon is done by touch. When meat is cooked through, it will be firm to the touch when pressed in the center. If you still feel some squishy texture inside, it's not cooked through.
  • Another way to tell is to gently press on the flesh, on top, and slightly pull it apart, it should flake easily.

2 lemons, zested and juiced

Steps:

  • In a small bowl, add the paprika, cayenne, thyme and oregano and salt and mix to blend. Put the mixture on a plate or other flat surface and coat the portions of salmon, 1 at a time, on the flesh side only.
  • Heat a large heavy-bottomed pan or cast iron skillet over medium heat, and add the oil. When the oil begins to smoke quite heavily shut the heat off under the pan. Add the salmon, 1 at a time, in a single layer, flesh side down, in the oil. Turn the heat back on under the pan and cook for 2 to 3 minutes. Use a spatula to turn the salmon to the other side. Cook the salmon over medium heat, until the skin becomes crispy, about 5 to 6 minutes.

Steps:

  • Set salmon fillets on a plate with flesh-sides up; brush the tops with melted butter.
  • Combine paprika, brown sugar, cayenne pepper, salt, garlic powder, onion powder, oregano, black pepper, white pepper, basil, and thyme for seasoning in a small bowl. Sprinkle seasoning evenly over top of the salmon fillets, then lightly press the spices down onto the fish.

Steps:

  • Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.
  • Pat salmon dry with paper towels. Coat lightly in 1 tablespoon grapeseed oil. Season with blackened seasoning.
  • Heat remaining grapeseed oil in a cast iron skillet over medium heat until it starts to smoke. Be sure to turn on your oven vent. Put salmon in the skillet and cook until it flakes easily with a fork, 4 to 4 1/2 minutes on each side (turning only to flip to the other side). Set salmon aside and let cool while you mix up the pasta salad.
  • Combine drained pasta, pineapple, cucumber, onion, olives, broccoli, Brussels sprouts, banana peppers, bell peppers, tomato, and thyme in a large bowl. Mix well. Mix in mayonnaise and salad dressing, adjusting to taste. Flake the salmon and gently fold into the pasta salad.
