BLACKBERRY PORK CHOPS
Pork chops in a blackberry sauce is easy enough for family and fancy enough for guests!

Steps:
- Combine the chili powder, cayenne, salt and pepper. Rub into chops.
- Heat oil in a large heavy skillet over medium-high heat. Add the chops and brown on both sides. Cover the pan and reduce heat to low and cook 5-7 minutes; remove chops from the pan cover and keep warm.
- Saute the onion in the same pan over medium-high heat for about 2 minutes. Deglaze the pan with the wine and scrape up any browned bits.
- Add 3 cups of the berries, stock and sugar. Bring to a boil then simmer for 3 minutes. Coarsely mash the berries then simmer the sauce over low heat until it's slightly thick-about 8 minutes.
- Stir in the remaining berries and cook until heated through; remove from heat and stir in the butter. Season with salt and pepper to taste. Add the chops back to the pan and serve with the sauce.

Steps:
- Sprinkle both sides of pork with steak seasoning. ** please note...just SPRINKLE the pork with seasoning...don't rub it in, don't coat it..just SPRINKLE !**
- Cook on grill for 8-10 minutes or until done.
- In saucepan, combine remaining ingredients (EXCEPT FRESH BERRIES) and bring just to a boil, stirring occasionally.
- Pour sauce over pork to serve, garnishing with fresh blackberries if desired.
BLACKBERRY PORK CHOPS FOR GRILL OR WHATEVER
I am giving this recipe for the grill method, but it can be easily adapted by browning the pork chops, then adding the rest of the ingredients (with whole blackberries for garnish) to simmer until tender. For a lazyme dinner, I will be posting recipes for shortcut horseradish mashed potatoes and green beans,which is a quick and easy menu we enjoy.

Steps:
- Preheat grill. Sprinkle both sides of pork with steak seasoning. Coat both sides of pork with cooijg spray.
- Place on grill, and grill 4-5 mns. on each side, until internal temp reaches 160 dg.
- Combine remaining ingredients (except whole blackberries) in small saucepan . Bring until just boiling to liquifu. Cover and remove from heat.
- Plasce chops on serving platter, garnish with whole blackberries (if desired) and ladle sauce over pork chops.

This is a simple recipe I have adapted from Company's Coming.It is simple to throw together the marinade in the morning before going off to work and coming home to an easy dinner to prepare at night.

- In deep bowl mix all marinade ingredients.
- Marinate at least 2 hours.
- Remove from marinade and cook over medium-high heat on greased grill for no more than 15 minutes or until done. Cooking time for second side is shorter by 1-2 minutes. 3/4" or thinner, 5-6 minutes maximum per side, thicker than 3/4" 6-7 minutes maximum per side. DO NOT OVER_GRILL, chops will become tough. After 2 minutes grilling on a side, rotate chops 45 degrees for even cooking. Turn over when juices pool on upper surface and meat appears to be cooked half-way through.

- Mix water, soy sauce, vegetable oil, lemon pepper seasoning, and minced garlic in a deep bowl; add pork chops and marinate in refrigerator at least 2 hours.
- Preheat an outdoor grill for medium-high heat and lightly oil the grate.

- Broil chops 4-5 in. from the heat for 4-5 minutes on each side or until a thermometer reads 145°. PORK CHOPS WITH BLACKBERRY PORT SAUCE
I love pork chops. I love fruit with pork chops. The most common fruit accompaniment for pork is apple, but I wanted to try something a little different. I considered apricots (I love them too), but thought they are too sweet. After reading a number of different recipes, I settled on blackberries. They are tart and, I thought, would pair well with a sweet port to make the sauce.

- Season the pork chops on both sides with salt and pepper. Heat 1 teaspoon of olive oil in a skillet over medium-high heat, and pan fry the chops until they are lightly browned and no longer pink in the center, 2 to 3 minutes per side. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C). Set the chops aside.
- Heat 1 more teaspoon of olive oil in the skillet, and cook and stir the shallots and thyme until the shallots start to become translucent, about 1 minute. Pour in the port wine, blackberry juice, chicken broth, and balsamic vinegar. Bring the mixture to a boil, scraping off and dissolving any brown flavor bits from the skillet into the sauce. Cook until reduced by a third, about 5 minutes. Mix cornstarch and water into a paste, and stir into the sauce. Cook until thickened, stirring constantly, about 1 minute. Reduce heat to low, and stir in the blackberries. Simmer until berries are hot.
- Return the chops to the skillet, and turn to coat with sauce. Serve hot, topped with sauce.

Steps:
- Combine flour and steak seasoning in a small bowl; stir well.
- Dredge pork chops in flour mixture.
- Spray large nonstick skillet with cooking spray; add oil.
- Place over medium high heat until hot.
- Add pork chops; cook for 5 minutes on each side or until done.
- Remove pork chops from skillet.
- Wipe drippings from skillet with a paper towel.
- Add preserves, soy sauce, lemon juice, cinnamon and curry to skillet.
- Bring just to boiling, stirring occasionally to dissolve preserves.
- Cover and remove preserves from heat.
- Ladle sauce over chops and garnish with fresh blackberries. Serve.

- In a small saucepan, combine spreadable fruit, lemon juice, soy sauce and cinnamon. Cook and stir over low heat until spreadable fruit is melted.
