ORANGE ICE TEA

1 cup orange juice
1/2 cup sugar
2 cups water
7 black tea bags (recommended: Red Rose)
3 cups sparkling water, chilled
1/2 small orange, thinly sliced
Ice
Fresh mint or basil sprigs, to garnish

Steps:

  • Special equipment: a 60-ounce (7 1/2 cups) pitcher
  • For the syrup: In a small saucepan, bring the orange juice and sugar to a boil over medium-high heat. Simmer, stirring occasionally, until the sugar has dissolved, about 5 minutes. Remove from the heat and cool for 20 minutes.
  • For the tea: In a small saucepan, bring the water to a boil. Add the tea bags and remove the pan from the heat. Allow the tea to steep and cool to room temperature, about 20 minutes. Remove the tea bags and discard. Pour the tea and syrup into a pitcher and refrigerate until ready to serve.
  • To serve: Pour the sparkling water into the pitcher and add the orange slices. Pour the tea into 4 ice-filled glasses. Garnish with fresh mint, or basil, and serve.

BLACKBERRY-BOURBON ICED TEA



Blackberry-Bourbon Iced Tea image

3 cups fresh blackberries
3/4 cup sugar
2 tablespoons chopped fresh mint, plus mint sprigs for garnish
6 good-quality black tea bags
Good-quality bourbon, to taste (Bobby likes Woodford Reserve)

Steps:

  • Combine the blackberries, sugar and chopped mint in a large bowl and mash with a potato masher or wooden spoon; let sit while making the tea.
  • While the blackberries are macerating, bring 1 1/2 quarts cold water to a boil in a medium saucepan. Remove from the heat, add the tea bags and let steep for about 3 minutes. Remove the tea bags and pour the tea over the blackberry mixture. Let the mixture sit at room temperature for at least 1 hour to let the flavors meld.
  • Pour the mixture through a strainer into a pitcher, pressing on the solids. Cover and refrigerate until cold, at least 2 hours. (You can also pour the mixture into a bowl set over an ice bath to cool it faster.)
  • Serve the blackberry tea over ice in tall glasses and float a shot of bourbon on top of each. Garnish with fresh mint sprigs (like a mint julep).

3 jasmine tea bags
4 water, cold
1 1/4 c blackberries ( frozen or fresh)
1/4 c orange juice, fresh squeezed
1/4 - 1/3 c sugar, white (or to taste)
1/2 c cup water, cold
1 Tbsp orange juice, for rimming glass
1 Tbsp sugar, for rimming glass
4 orange slices ( garnish)
4 mint sprigs ( garnish)
20 ice cubes ( mixture of normal ice cubes, orange juice ice cubes and orange slice & blackberry ice cubes)

Steps:

  • 1. Ice Cubes - For flavored ice cubes - freeze orange juice in ice cube trays.
  • 2. Now for the orange slices/blackberries ice cubes - place half a slice of orange and two blackberries in ice cube tray and fill with water -- freeze and store in plastic bag until ready to use.
  • 3. Steep teabags in 4 cups of boiling water for 3 - 4 minutes, then discard the teabags.
  • 4. Place tea on counter to cool.
  • 5. Don't allow tea to over steep, it will result in a bitter tea.
  • 6. In large pot, bring blackberries, juice, sugar and 1/2 cup water to boil.
  • 7. Reduce heat and simmer, stirring occasionally until the blackberries break down.
  • 8. Next add the berry mixture to the tea.
  • 9. Now allow the tea and berry mixture to cool on the counter before putting into the fridge to prevent clouding in your tea.
  • 10. Once tea has cooled put in fridge to chill for 4 hours.
  • 11. Strain tea mixture and serve in a ice cube filled glass that you have rimmed with orange juice and dipped in sugar.
  • 12. Garnish with orange slice and mint.
  • 13. Close your eye's, sit back on the deck and enjoy.
  • 14. Iced tea taste best when it is freshly made and will last for two or three

1 1/4 cups sugar
1 tablespoon chopped of fresh mint
1/8 teaspoon baking soda
4 cups boiling water
2 family-size tea bags
2 1/2 cups cold water

Steps:

  • Add the blackberries and sugar to a large container; stir to combine.
  • Crush the blackberries with a wooden spoon.
  • Add in mint and baking soda; stir to combine; set aside.
  • Pour boiling water over tea bags; cover and let stand for 3 minutes.
  • Discard tea bags.
  • Pour tea over blackberry mixture; let stand at room temperature for 1 hour.
  • Pour tea mixture through a wire mesh strainer into a large pitcher; discard solids.
  • Add in 2 1/2 cups cold water; stir until sugar dissolves.

1 small orange
4 english breakfast tea bags
1 liter boiling water
1 liter cranberry juice
2 tablespoons caster sugar

Steps:

  • Use a vegetable peeler to peel the rind from the orange. Use a small sharp knife to remove the white pith from the rind.
  • Place the rind and tea bags in a large heatproof jug. Pour over the water. Set aside for 20 minutes to infuse.
  • Remove the tea bags and rind, and discard. Add the cranberry juice and sugar to the jug, and stir to combine.
  • Cut half the orange flesh into small pieces and divide among 2 ice cube trays. Pour the tea mixture among the trays. Place in the freezer overnight. Cover the remaining tea mixture with plastic wrap and place in the fridge to chill.
  • Remove the ice cubes from the trays and place in a serving jug. Pour over the tea mixture and serve.
  • Time plan tip: Prepare this recipe to the end of step 4 up to 1 day ahead. Continue from step 5 just before serving. Picnic tip: Divide the ice cubes and tea among airtight bottles or jugs. Transport in your esky.

1 tablespoon fresh ginger, peeled and minced
1 cup Splenda sweetened cranberry juice

Steps:

  • Heat water in a large saucepan to just before boiling. Add tea bags, cinnamon sticks and ginger.
  • Remove from heat, cover and let steep for about 15 minutes.
  • Add cranberry juice and sweetener to taste. Strain tea into a pitcher. Cover and chill overnight.
  • Freeze glasses prior to serving. Pour tea over crushed ice and serve garnished with cinnamon sticks.

ice cube
honey or brown sugar, to sweeten

Steps:

  • With a vegetable peeler, peel each orange in a continuous spiral, removing only the outer colored layer of peel.
  • In a large pitcher, pour boiling water over the tea bags and orange peel. Cover and steep 5 minutes. Remove tea bags. Chill tea mixture with peel in a covered container.
  • To serve, remove the peel and pour iced tea over ice cubes in tall glasses.
  • Sweeten to taste with honey (or brown sugar). Garnish with orange slices and fresh mint leaves, if desired.
