We grow blackberries on our farm that our family enjoys in pies, jams, jellies and cobblers. I love to pull them out of the freezer in January and make this recipe for blackberry cobbler to enjoy summer's sweetness. -Lori Daniels, Beverly, West Virginia

3 cups fresh or frozen blackberries
1 cup sugar
1/4 teaspoon ground cinnamon
3 tablespoons cornstarch
1 cup cold water
1 tablespoon butter
BISCUIT TOPPING:
1-1/2 cups all-purpose flour
1 tablespoon sugar
1-1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup cold butter, cubed
1/2 cup 2% milk
Whipped topping or vanilla ice cream, optional

Steps:

  • In a large saucepan, combine the blackberries, sugar and cinnamon. Cook and stir until mixture comes to a boil. Combine cornstarch and water until smooth; stir into fruit mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Pour into a greased 8-in. square baking dish. Dot with butter., For topping, in a small bowl, combine the flour, sugar, baking powder and salt. Cut in butter until mixture resembles coarse crumbs. Stir in milk just until moistened. Drop by tablespoonfuls onto hot berry mixture., Bake, uncovered, at 350° for 30-35 minutes or until filling is bubbly and topping is golden brown. Serve warm, with whipped topping or ice cream if desired.

1 ½ cups white sugar, divided
1 teaspoon baking powder
½ teaspoon salt
6 tablespoons cold butter
¼ cup boiling water
2 tablespoons cornstarch
¼ cup cold water
1 tablespoon lemon juice
4 cups fresh blackberries, rinsed and drained

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
  • In a large bowl, mix the flour, 1/2 cup sugar, baking powder, and salt. Cut in butter until the mixture resembles coarse crumbs. Stir in 1/4 cup boiling water just until mixture is evenly moist.
  • In a separate bowl, dissolve the cornstarch in cold water. Mix in remaining 1 cup sugar, lemon juice, and blackberries. Transfer to a cast iron skillet, and bring to a boil, stirring frequently. Drop dough into the skillet by spoonfuls. Place skillet on the foil lined baking sheet.
  • Bake 25 minutes in the preheated oven, until dough is golden brown.

½ cup butter
2 cups self-rising flour
2 cups white sugar
2 cups milk
3 ½ cups blackberries

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Once oven temperature is reached melt butter in a 9x13 inch baking pan.
  • In a medium bowl stir together the flour, sugar and milk; batter will be slightly lumpy. Pour mixture on top of melted butter in baking pan. Do not mix butter and mixture together.
  • Drop blackberries into batter; if more crust is desired add less blackberries. Bake in preheated oven for one hour or until golden brown.

1/3 cup plus 2 tablespoons sugar
2 tablespoons cornstarch
1 tablespoon fresh lemon juice
3/4 teaspoon ground cinnamon, divided
1 1/4 cups buttermilk baking mix (such as Bisquick)
1 1/2 teaspoons finely grated lemon peel
1/2 cup chilled whipping cream
Vanilla ice cream

Steps:

  • Preheat oven to 375°F. Toss berries, 1/3 cup sugar, cornstarch, lemon juice, and 1/2 teaspoon cinnamon in large bowl. Let stand 10 minutes, tossing occasionally. Transfer to 9-inch deep-dish glass pie plate. Bake until berries soften, about 15 minutes.
  • Meanwhile, combine baking mix and lemon peel in medium bowl. Add cream, tossing until soft dough forms.
