These decadent brownies have a full-serving of vegetables plus plenty of vitamins and fiber thanks to the shredded zucchini mixed into the batter. Recipe is from a local magazine. The number of servings really depends on the size they are cut.

2 cups shredded zucchini
1/2 cup butter, melted
1 cup sugar
1 teaspoon vanilla
1 egg
1 cup flour
1 teaspoon baking powder
1/2 cup cocoa powder
1/2 cup miniature chocolate chip
1/2 cup coarsely chopped walnuts

Steps:

  • Preheat oven to 350 degrees; grease and flour a 9x13-inch pan or spray with nonstick cooking spray.
  • Shred the zucchini into a large bowl of salted ice water.
  • Let sit for 30 minutes; drain well.
  • Mix butter and sugar.
  • Add vanilla and egg and beat until smooth.
  • Add drained zucchini.
  • In another bowl, combine the flour, baking powder and cocoa powder.
  • Add the chocolate morsels and nuts, if desired.
  • Fold wet and dry ingredients together until just blended.
  • Pour into the prepared pan and even out with a spatula.
  • Bake for 30-35 minutes.
  • Cool completely before cutting into squares.

2 cups flour
1 1/2 cups sugar
1 teaspoon salt
1 teaspoon baking soda
1/2 cup cocoa
2 tablespoons vanilla
1/2 cup oil
2 cups peeled and grated zucchini

Steps:

  • Combine the flour, sugar, salt, baking soda, and cocoa in a bowl.
  • Add the vanilla, oil, and zucchini and mix well.
  • Bake in an ungreased 9 x 13 inches pan at 350 degrees fahrenheit for 30 minutes.
  • NOTE: You can substitute the sugar for splenda or add a 1/2 cup of chopped nuts if you wish.

1 cup butter, softened
1-1/2 cups sugar
2 large eggs, room temperature
1/2 cup plain yogurt
1 teaspoon vanilla extract
2-1/2 cups all-purpose flour
1/4 cup baking cocoa
1 teaspoon baking soda
1/2 teaspoon salt
2 cups shredded zucchini
FROSTING:
2/3 cup semisweet chocolate chips
1/2 cup creamy peanut butter

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in yogurt and vanilla. In another bowl, combine flour, cocoa, baking soda and salt; gradually add to creamed mixture. Stir in zucchini. , Pour into a greased 13x9-in. baking pan. Bake until a toothpick inserted in the center comes out clean, 35-40 minutes., For frosting, in a small saucepan, combine chocolate chips and peanut butter. Cook and stir over low heat until smooth. Spread over warm brownies. Cool on a wire rack. Cut into bars.

6 ounces chocolate chips (note use more if desired)
8 ounces cream cheese
1 egg, unbeaten
1/8 teaspoon salt
1/3 cup sugar
1 1/2 cups flour
1/4 cup cocoa
1/2 teaspoon salt
1/3 cup vegetable oil
1 teaspoon vanilla
1 cup sugar
1 teaspoon baking soda
1 cup water
1 tablespoon vinegar

Steps:

  • Combine cheese/chip mix except for the chips. Beat well. Then stir in chocolate chips. Set mix aside.
  • Mix Dough mix. Pour batter into a greased 9x13 inch pan.
  • Drop teaspoonfuls of cream cheese mix randomly over the batter.
  • Bake 15 to 20 minutes at 350°F.
  • Cool and refrigerate.

1/3 cup margarine
1 tablespoon hot water
1 cup brown sugar, firmly packed
1 teaspoon vanilla
3/4 cup zucchini, peeled diced and seeded (about 1 large)
1/2 cup nuts
1 cup flour
1 teaspoon baking powder
1/8 teaspoon baking soda
1/2 teaspoon salt
1 egg
1/4 cup butterscotch chips

Steps:

  • Preheat oven to 350 degrees.
  • Use the hot water to melt the margarine.

  • Cream sugar & margarine. Add eggs and vanilla.

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan.
  • In a large bowl, mix together the oil, sugar and 2 teaspoons vanilla until well blended. Combine the flour, 1/2 cup cocoa, baking soda and salt; stir into the sugar mixture. Fold in the zucchini and walnuts. Spread evenly into the prepared pan.

I've enjoyed zucchini cakes, cobbler, and breads that I've found here and hope that you'll enjoy these moist, cake like brownies--they disappear fast here! I love them with the glaze but they're very good without it too. My garden is in zucchini overload and I thought this recipe would be helpful to other zucchini lovers. The brownies were inspired by Monica Resinger's Black-Bottom Zucchini Bars and the glaze is based on a recipe from the Cake Doctor's book.

1/3 cup canola oil
1 cup sugar
1 egg
1 teaspoon vanilla extract
1 1/2 cups fresh zucchini (finely shredded and drained)
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/4 cup cocoa
1/2 cup pecans (optional) or 1/2 cup semi-sweet chocolate chips (optional)
1/3 cup sugar
1 tablespoon butter
1/3 cup canned milk (half and half if you prefer)
2/3 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 350F and grease a 9 x 13 baking pan.
  • Stir the first 4 ingredients by hand until well combined. Drain any liquid from the shredded zucchini, add and mix until completely coated.
  • Sift together the flour, baking powder soda and salt and add it to the zucchini mixture. Stir until the dry ingredients are evenly combined and add any optional ingredients.
  • In a separate bowl, mix half of the batter with the coca then spread evenly over the bottom of the baking pan.
  • Spread the remaining batter over the top until the chocolate batter is covered.
  • Bake at 350F for 25-30 minutes or until lightly browned and the center tests done.
  • Cool for about 5-10 minutes, while you prepare the glaze.
  • Combine sugar, butter and canned milk in a small pan and stir occasionally on stovetop until it begins to boil.
  • Stir continuously for 1 minute while the mixture boils then remove from heat and add the chocolate chips.
  • Stir until smooth and spread evenly over brownies (add a little more butter if needed for good spreading consistency).
  • After brownies have cooled and the glaze is set, cut and enjoy!
